I’m confident in saying that this little carrot cake is the finest carrot treat you’ll ever have, period.The full-size recipe that I used as a guideline for downsizing down is one that belonged to my maternal grandmother.Everyone in my family believes that a dish without a source may be traced back to an old issue of Southern Living or a church cookbook, but no one can be confident of the exact source.Regardless of where it comes from, this cake makes everyone who eats it a bit weak in the knees.This cake is soft and moist because to the addition of oil and eggs.The cinnamon adds warmth, and the cream cheese icing gives a delightful tanginess.

- IN ORDER TO MAKE THE CAKE: 1/4 cup canola oil, 1/2 cup sugar, 1 big egg, 1/2 teaspoon cinnamon, 1/2 teaspoon vanilla, 1/4 cup packed shredded carrot (from 1 small carrot), 1/2 cup all-purpose flour, 1/2 teaspoon baking powder, 1/4 cup chopped walnuts
- FOR THE FROSTING, combine a 3 ounce block of softened cream cheese with 2 tablespoons softened butter, 6 tablespoons powdered sugar, and 1/4 teaspoon vanilla extract.
Instructions
- Shortening or cooking spray should be used to grease a 6″ round cake pan. Preheat the oven to 350°F, and set aside.
- In a medium-sized mixing bowl, combine the canola oil and sugar with an electric mixer until well combined. Beat for approximately 1 minute at a high speed.
- Add the egg, cinnamon, and vanilla extract and continue to beat for another 30 seconds or more. In a separate bowl, whisk in the carrot for approximately 15 seconds, breaking it up a little so it dyes the batter orange. On top of the butter, sprinkle in the flour and baking powder and mix until barely incorporated. Don’t overmix the ingredients. You may either whisk in the walnuts now or keep them for the frosting

- Pour the mixture into the pan and set it on a baking sheet. Bake for 24-26 minutes, depending on the size of the pan. Before removing the baked goods from the oven, use a toothpick to check for doneness— moist crumbs sticking to the toothpick are excellent.

- Create sure all of the ingredients are at room temperature before starting to make the frosting, otherwise you may end up with lumps. Using an electric mixer, whip everything together until it is light and airy in texture. Remove the cake from the pan and set it on an upside-down serving dish (so that you have a level surface on top). Spread the frosting on top of the cake. Repeat with the remaining cake. Garnish with walnuts if desired. When left to sit for one day (in the refrigerator) before serving, this cake becomes even more delicious.

Instructions
- Prepare a 6″ round cake pan with 2″ sides by spraying with cooking spray and putting it in the oven at 350 degrees. Prepare the pan by lining the bottom with a ring of parchment paper
- Mix the butter and sugar together in a medium-sized mixing basin with an electric mixer until well combined. Beat extremely thoroughly for around 1-2 minutes
- Then, using an electric mixer, beat until everything is fully incorporated, about 15 seconds
- In a small mixing basin, whisk together the flour, salt, and baking soda until well combined. In a separate bowl, combine half of this with the batter and whisk for a few seconds before adding in half of the milk and vinegar. Continue to pound the table. Beat in the remaining dry ingredients until well combined, then fold in the remaining milk until well combined.
- Place the prepared pan on a small sheet pan and bake for 37-39 minutes, or until a cake tester comes out clean
- remove from the oven and cool on a wire rack.
- Allow the cake to cool completely in the pan on a wire rack. Once it has cooled, carefully remove it from the pan by peeling the parchment paper away from the sides.
- The buttercream may be made by beating the butter in a medium-sized mixing basin with an electric mixer until it is light and frothy. Using an electric mixer, whip the powdered sugar, vanilla, and heavy cream until light and fluffy. Use slightly more than half of the buttercream to decorate the cake if the mixture appears too stiff. If the mixture looks too stiff, add a little extra heavy cream. The crumb coat of buttercream should be applied before putting the second layer of cake if you created the cake ahead of time and frozen it.
- Then, using a 1M tip, pipe flowers around the edge of the cake with the remaining 1/4 of the buttercream. To build a rose, pipe a spiral form around the center, starting from the inside and working your way out.

*You may use 6 tablespoons of buttermilk for the whole milk and apple cider vinegar in this recipe. The cake may be cooked and frozen for up to 1 month if it is properly covered in plastic wrap. Defrost the cake before icing it.
