Panera Pumpkin Muffin Ingredients
- Topping with Crumbs: Flour — Just plain all-purpose flour
- Granulated sugar (not powdered sugar) is simply regular white sugar.
- When it comes to a crumb topping, usually sugar or brown sugar are used, but Panera had honey listed as an ingredient, so we opted with it.
- Cinnamon — You may also use pumpkin pie spice instead of cinnamon.
- Once again, Panera had vegetable oil mentioned in the ingredients, so we opted for it instead of butter in the crumb topping again. If you’re more comfortable with cold butter, you may try melting it in first and then chopping it in afterwards.
- Muffins: All-purpose flour is being used more often.
- Baking powder – to aid in the rising of the muffins
- If you don’t have pumpkin pie spice, you may substitute cinnamon instead
- Only a pinch of salt is required.
- Grated sugar — This is plain white sugar, not powdered sugar, as previously stated
- Pure pumpkin (such as Libby’s or your own home-roasted pumpkin) with no added sugar or salt. NOT pumpkin pie filling, though.
- If you don’t have vegetable oil, you might utilize melted butter, which I haven’t done yet.

- Some of these components may appear to be a little unusual, but as previously said, I used the ingredients that were listed on the Panera website at the time of preparation.

- PREHEAT. Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
- TOPPING WITH CRUMB. To make tiny crumbs, combine the flour, sugar, cinnamon, honey, and vegetable oil in a mixing bowl.
- INGREDIENTS THAT ARE DRY. Combine the flour, baking powder, pumpkin pie spice, and salt in a large mixing bowl.
- INGREDIENTS IN WATER. Combine the pumpkin, oil, and eggs in a large mixing bowl.
- COMBINE. Add the wet ingredients to the dry ones and whisk until everything is just incorporated. Scoop into a baking pan. Using a crumbs topping, decorate the top.
- BAKE. Bake the muffins until they are golden brown and a toothpick inserted into the center comes out clean. Allow to cool before dusting with powdered sugar
- In order to make muffins, blend the dry ingredients and wet components until they are just incorporated.
- Make sure not to overmix the muffin batter.
- While baking, periodically check on the muffins to ensure they are done properly.
If the crumbs on top of the muffins begin to brown too quickly, lightly cover the tops of the muffins with aluminum foil.I try to bake these Panera Pumpkin Muffins at the bottom of the oven to avoid this from happening.Allow the muffins to cool fully before sprinkling with powdered sugar on top.As a result, the sugar will melt right into the muffins, which isn’t always a negative thing, but it’s good to be aware of.
