    • Baking powder – to aid in the rising of the muffins
    • If you don’t have pumpkin pie spice, you may substitute cinnamon instead
    • Only a pinch of salt is required.
    • Grated sugar — This is plain white sugar, not powdered sugar, as previously stated
    • Pure pumpkin (such as Libby’s or your own home-roasted pumpkin) with no added sugar or salt. NOT pumpkin pie filling, though.
    • If you don’t have vegetable oil, you might utilize melted butter, which I haven’t done yet.
