    What Is Angel Food Cake?

Angel food cake is a light and fluffy vanilla sponge cake that is flavored with vanilla extract.Traditionally, it is made with egg whites, flour, and sugar, with no butter or fat added, which is a significant difference. We’re baking an angel food cake with very fine blanched almond flour, coconut flour, and powdered monk fruit sweetener to produce a keto-friendly angel food cake recipe with this recipe.

How To Make Angel Food Cake (Keto Friendly)

Even while this keto angel food cake recipe isn’t difficult to create, it does require that you follow a few specific instructions.Take a look at the step-by-step photos, but also read my suggestions at the end of this section to guarantee that you always receive a beautiful angel food cake!Prepare your frying pan.Prepare a 9.5-inch tube pan by lining the bottom with parchment paper but do not oil it!

Check to be that your pan and other utensils are free of oil as well.

How to cut parchment paper for use in lining a baking sheet: Turn your pan over and carve a circle along the edge with a sharp knife. Then, split the circle in half and cut a little semicircle in the middle that is the same size as the central column, as shown in the illustration.Unfold the parchment paper, flip the pan over, and insert it into the pan.Whip the egg whites until they are foamy.

In a large, deep mixing basin, beat together the egg whites and cream of tartar with a hand mixer fitted with the whisk attachment just until frothy.

Add Besti and continue to beat until soft peaks form. Once the egg whites are foamy, raise the speed to medium high and gradually add the powdered Besti until everything is well combined. Soft peaks (not rigid peaks!) should appear after many minutes of beating. The most lift and rising will be achieved in the oven if the peaks are soft.

Use a big mixing basin since the egg whites will treble in volume throughout the cooking process (or more). When you see soft tracks like these, you know they’re finished: TIP2: Soft peaks have a shape similar to the one shown below. They have a certain amount of structure, but when held vertically, they curl over.Take care not to overmix the ingredients!

Combine the dry ingredients for the keto angel cake.In a medium-sized mixing bowl, whisk together the almond flour, coconut flour, xanthan gum, sea salt, and more powdered Besti until well combined.Make sure there are no lumps in the mixture.

Dry ingredients should be sifted and folded in. Using a fine mesh sieve, sift half of the flour mixture over the egg whites…

…then fold in with a rubber spatula to finish.Fold in small batches until barely integrated, working in small batches will save time.PRECAUTIONS: Take care not to deflate the whites.

When you’re ready to add the flour mixture, sift it in slowly, a little at a time, and gently fold it into the batter.Keep the components from being stirred or dumped on top, since this can cause the whites to collapse.Transfer to a tube pan and set aside.Gently spoon the almond flour angel food cake batter into the prepared pan, taking care not to break down the whites in the process.Using a spatula, smooth the top of the cake.

Bake. When the top of your low carb angel food cake is golden brown and bounces back when softly touched, your cake is finished. When you’re finished, be sure to cool it down properly — read directions below.

TIP: Do not use the toothpick test as a screening tool! Occasionally, it will slip into the batter and come out clean, even though the cake is not yet finished baking. When finished, the angel food cake will have a visual appearance similar to the one seen below.

How to Cool Almond Flour Angel Food Cake

This method of chilling almond flour angel food cake is critical, and you should follow it precisely. The two most important components are as follows:

    1. Turn the low-carb angel food cake upside down to cool it completely. To get the greatest results, the pan should have air flow beneath as well. It is imperative that you turn the pan immediately after pulling it from the oven, or else it will break apart within minutes.

Why do you have to cool angel food cake upside down?

While the cake is still warm, the spongy texture has not entirely set, resulting in a softer texture. If you don’t chill your keto angel food cake upside down, it will collapse from the weight of its own ingredients.

How to cool angel food cake upside down:

    • If you want to chill your keto angel food cake upside down, there are three options: On a bottle — This is the oldest trick known to mankind. Simply insert the neck of a standard glass bottle into the hole in the middle of the tube pan, then flip the tube pan so that the bottle stands upright and the tube pan is upside down on top of it, allowing air to flow beneath it.
    • To cool, flip the pan and place it on a wire rack to finish cooling it. The disadvantage is that if your cake is overflowing, you may end up with markings from the rack on the top of your cake.
    • Make use of a pan with legs – Special tube pans are equipped with feet that allow the pan to be lifted off the counter. This is the way I use — I really like this pan with feet, which you can see in the photo below

How to release angel food cake:

Allow your cake to cool fully before turning it upside down as seen in the photo above. Once it has reached room temperature, proceed as follows:

    1. Run a knife down the edges of the paper. Keep an eye out for the outside edge of the ring, and especially the winning edge, since this is the section that is most prone to sticking.
    2. Turn the cake upside down onto a cake stand or wide dish. It is my preference to gently hold the open side with my hand in the event that it falls suddenly.
    3. First, lift the edges of the pan, and then lift the bottom of the pan to release the steam. It is for this reason that a two-piece pan is useful
    4. Gently pull away the parchment paper from the baking sheet. The parchment paper that was used to line the pan will be adhered to the cake, so gently pull it away from the cake.
    5. If desired, the cake can be flipped a second time (optional). Place another dish or platter over the top of the cake, then quickly turn the two plates or platters together so that the bottom of the cake is on top

I’ll let you in on a little secret: I completely forgot about step 5 when taking the photos for this post. Take note of how the top is somewhat straight and not blown up? That is the explanation behind this. The puffed-up side of the cake can be seen in the slice below; this would be the top of your cake, if you choose to make it that way.

Important Tips For The Best Keto Angel Food Cake

As previously said, angel food cake is not difficult to make, but it does need a few adjustments in order to work out well. The following are all of my recommendations for ensuring that your keto angel food cake turns out flawlessly each and every time — some of these are repeated from the previous section since they are so crucial.

    1. Make use of a tube pan. It is critical to use a tube pan rather than a bundt pan for this recipe. Despite the fact that they appear to be comparable, the tube pan provides the cake with the necessary rigidity.
    2. Line the bottom of the pan with parchment paper but do not oil it. Avoid greasing any pans or utensils when creating angel food cake, since this may cause your angel food cake to crumble and collapse. When you line the bottom of a pan, it makes it easier to remove the cake afterward.
    3. Make use of egg whites that are at room temperature. Cold whites will not whip as well as warm whites and will not hold as much air. You can place your chilled eggs in a bowl of warm water to bring them to room temperature before separating the whites from the yolks
    4. however, if your eggs are still cold from the fridge, you should place them in cold water to bring them to room temperature before separating the whites from the yolks.
    5. If at all feasible, use freshly separated egg whites from whole eggs. Carton egg whites will work, but they will not produce as much air as fresh egg whites, resulting in a cake that is a little denser.
    6. Separating egg whites should be done with care. Make certain that not even the least bit of yolk gets into the whites, otherwise the whites will fail to form peaks.
    7. Egg whites should be beaten to soft peaks, not more or less. If you look at the photos above, you will notice that they are finished – soft trails in the whites and peaks that curl over when held upright. If you under-beat the cake, it will be dense and lack lift, whereas over-beating the cake will result in a cake that is excessively dense. Avoid peaks that are too steep
    8. Using a sifter, sift in the flour mixture. The whites will deflate if you simply drop the mixture in. If you don’t want to spend the money on an expensive special sifter, a fine mesh sieve will suffice.
    9. Stirring the batter will ruin it. The goal is to keep the whites from being deflated once more. Alternately, a folding action from below might be used.
    10. If you’re working with a 2-piece pan, take it up by the edges rather than the bottom. The bottom will separate if you press on it too hard, resulting in the batter leaking out.
    11. Do not open the oven door to check on your cake. I know it’s tempting, but please avoid the temptation to look! You might be able to get away with checking the door once or twice towards the end (and opening it just a crack! ), but otherwise keep it closed. It is possible for the cake to fall due to even the smallest temperature fluctuation as a result of opening the door.
    12. Instead of using a toothpick, check for doneness visually and by touch. As previously stated, the toothpick test might be misleading in some cases. You know it’s done when the surface is golden and springy to the touch.
    13. Turn the cake over immediately and allow it to cool completely. If you leave the cake right side up when it comes out of the oven, it will deflate within minutes, so turn it upside down as soon as possible – see the three alternatives for cooling it upside down above for how to accomplish this. In my opinion, this is the most important component.
    14. Using a serrated knife, cut slices of angel food cake. It is more likely to be crushed by a chef’s knife.

    1. Heat the oven to 325 degrees Fahrenheit (162 degrees C). Prepare a 9.5-inch tube pan by lining the bottom with parchment paper. (Be careful not to grease it!)
    2. Using a hand mixer fitted with a whisk attachment, whisk together the egg whites and cream of tartar in a large, deep mixing bowl.
    3. Begin by running at a medium-low speed for 1-2 minutes. Increase the speed to medium high and gradually add 3/4 cup (108 g) powdered Besti until the mixture is frothy. Continue beating until soft peaks begin to form (they should curl over but not be stiff). Mix in the vanilla extract until it is barely combined. (Do not over mix – prevent stiff peaks.)
    4. Mix the almond flour, coconut flour, xanthan gum, salt, and the remaining 3/4 cup (108 g) powdered Besti in a medium-sized mixing bowl, making sure there are no lumps. (If the mixture is still lumpy, you can sift over another bowl through a fine mesh strainer.) Sift half the flour mixture over the egg whites, then fold gently just until combined, being careful not to break down the whites. Repeat with the remaining flour mixture.
    5. Transfer the batter to the lined (ungreased) tube pan. Smooth the top with a spatula.
    6. Bake for about 45 minutes, until an inserted toothpick comes out clean
    7. Take the cake out and immediately turn the pan upside down to cool (with the bottom of the pan upward), making sure there is air flow underneath the cake. You can accomplish this by using a pan with feet, using the bottle method, or simply a cooling rack (more details in the post above).
    8. Once the cake is completely cool, run a knife along the edges of the pan to release, then invert the cake. Gently peel off the parchment paper on top. If you prefer, you can flip the cake again, or just leave it as is.

Reading food labels: Tips if you have diabetes

When it comes to meal planning for diabetics, food labels may be a valuable resource. When comparing food labels, keep the following things in mind.Staff at the Mayo Clinic When you have diabetes, your diet is an important component of your overall treatment strategy.Of course, you’re aware of what you’re consuming — a turkey sandwich, a glass of skim milk, and a sugar-free fudge pop, to name a few options.

Do you, however, pay attention to the specifics, such as calories, total carbs, fiber, fat, sodium, sugar, and other additives? The ability to read food labels can assist you in making the best decisions.

Start with the list of ingredients

    • When reading food labels, start with the list of ingredients on the front of the package. Keep a look out for components that are heart-healthy, particularly those that are less processed, such as whole-wheat flour, soy, and oats, among others. Monounsaturated fats, such as olive, canola, or peanut oils, as well as nuts and seeds, are also beneficial to heart health.
    • Prevent the use of harmful substances such as excessive salt or sweets, saturated fats, and hydrogenated or partially hydrogenated oils.

Take note that the components are given in descending order by weight, so keep that in mind. The first item given is the primary (heaviest) ingredient, followed by additional substances used in decreasing quantities.

    Consider carbs in context

    • Illustration of a Nutrition Facts label If your meal plan is based on carbohydrate counting, reading food labels becomes a vital weapon in your arsenal of cooking tools. Look at the overall amount of carbs rather than simply sugar. Instead of evaluating merely the grams of sugar, consider the grams of total carbs — which comprise sugars such as added sugars, complex carbohydrates, and fiber — as well as the grams of sugar. If you just consider the sugar level of meals, you may overlook the nutritional value of foods that naturally contain sugar, such as fruit and milk. Furthermore, foods that have no natural or added sugar but a high concentration of processed or refined carbs, such as some cereals and grains, may be consumed in excess.
    • Don’t skip out on meals that are high in fiber. Pay close attention to meals that are high in fiber. Look for foods that have 3 grams or more of fiber.

Put sugar-free products in their place

    • Sugar-free does not always imply carbohydrate-free. Sugar-free foods may play a role in your diabetic diet, but it’s also vital to remember that carbs should be taken into consideration as well. In this case, sugar-free indicates that each serving has less than 0.5 grams of sugar. Examine the nutrition labels of conventional items and their sugar-free alternatives when making a decision. If the sugar-free product has significantly less carbs than the regular product, the sugar-free product may be the superior alternative. However, if there is minimal difference in carbohydrate grams between the two dishes, flavor – or price — should be the deciding factor. Check out the additional components and calorie counts to ensure you’re making a healthy option
    • There is no added sugar, but there are also no carbs. The same warning applies to items that are labeled as having ″no added sugar.″ Even if these meals do not include high-sugar components, and no sugar is added during the production or packaging process, they may nonetheless contain a significant amount of carbs.
    • Sugar alcohols are high in carbs and calories as well as other nutrients. A similar point may be made about goods that include sugar alcohols, such as sorbitol, xylitol, and mannitol, which are not necessarily low in carbs or calories.

    Beware of fat-free products

Fat contains more than double the number of calories found in carbs or protein per gram.If you’re attempting to reduce weight, fat-free meals may seem like the perfect solution. But don’t be deceived by ″fat-free″ food labeling on packaged foods.Carbohydrates can be found in fat-free products.

When compared to the conventional form of the same item, fat-free foods can have much more carbs and almost as many calories. What is the lesson here? You guessed it: it’s a girl!Be sure to thoroughly examine the labels of fat-free and normal items before making your final selection.

    • Also, keep in mind that the quantity of total fat mentioned on a food label does not convey the complete story of a product. Look for a breakdown of the different kinds of fat. Choose fats that are better for you. Despite the fact that they are still high in calories, monounsaturated and polyunsaturated fats are preferable options since they can help decrease your cholesterol and protect your heart
    • nonetheless,
    • Reduce your intake of harmful fats. Saturated and
