  • 3 cups (285g) cake flour *If you do not have cake flour, read the Note below for a substitute.
  • Baking powder: 2 1/2 teaspoons (10 grams)
  • salt: 1/2 teaspoon (3 grams)
  • 2 sticks (170g) unsalted butter, gently softened (do not soften in the microwave)
  • 1 1/2 sticks (170g) unsalted butter, slightly softened (do not soften in the microwave)
  • 1-and-a-half cups (300 g) sugar
  • 2 big eggs, at room temperature (if you’re in a rush, you may reheat the eggs in a dish of hot (but not boiling) water for 5 minutes)
  • 314g milk
  • 1 1/3 cup (314g) sugar
  • 2 tablespoons (8g) vanilla extract

For the Raspberry Filling

  • 1 frozen raspberries package (12 ounces/340 grams)
  • 1 cup (100g) sugar
  • 3 tablespoons (26g) cornstarch
  • 1 teaspoon (4g) lemon juice
  • 2 teaspoons (8g) raspberry extract (optional)
  • 1/2 cup (100g) sugar
  • 3 tablespoons (26g) cornstarch

For the White Chocolate Buttercream Frosting

  • 3 sticks (339g) unsalted butter, softened (do not soften in the microwave)
  • 8 ounces (227g) white baking chocolate (I used 2 Ghirardelli Premium Baking Bars)
  • 4 1/2 cups (518g) powdered sugar
  • 1 teaspoon (4g) vanilla extract
  • 4 tablespoons (42 g) milk or cream
  • 3 tablespoons (339g) unsalted butter, softened (do not soften in the microwave)

Instructions

For the White Chocolate Cake

  • 350 degrees Fahrenheit is the recommended temperature for the oven.
  • Prepare two 8 x 2 inch baking pans by greasing and flouring them.
  • The bottom of the cake pans should be lined with a circular piece of wax paper or parchment paper to prevent the cake from sticking
  • this is very important for this recipe.
  • The milk should be heated in the microwave or on the stovetop, but it should not be brought to a boil. Add the white chocolate, which has been chopped into very small pieces, and combine thoroughly. Allow it to sit for a couple of minutes to soften, then whisk constantly until it is completely melted and smooth. Allow this to cool completely before using
  • Combine the flour, baking powder, and salt in a large mixing bowl and whisk for 30 seconds to combine
  • set aside.
  • In the bowl of your mixer, cream together the butter until it is completely smooth. Combine slowly with a mixer on a medium speed for 4 to 5 minutes, or until the mixture lightens in color and becomes fluffy.
  • The eggs should be added in batches, mixing after each addition until the yellow is well incorporated.
  • Pour in the vanilla extract.
  • Add the flour mixture and the milk/chocolate mixture in alternate increments, beginning and finishing with the flour mixture (3 additions of flour and 2 additions of milk mixture)
  • Mix until just blended, taking care not to overmix or mix at a speed higher than medium.
  • Pour the mixture into the pans that have been prepared and bake for 30 to 35 minutes at 350 degrees. You will know it is finished when a toothpick inserted in the center comes out clean or with only little crumbs attached. Allow the pans to cool for 10 minutes before turning them out.
  • It’s very good for cupcakes.
  • This recipe makes 6 cups of cake batter.

For the Raspberry Filling

  • Thaw the frozen raspberries until they are completely thawed. You may thaw raspberries more quickly if you’re in a rush and your raspberries are in a plastic bag. Simply place the bag in a basin of hot water to thaw. After the raspberries have been thawed, purée them in a blender
  • pour the puree through a fine wire strainer into a dish. Strain the pureed raspberries through a fine mesh strainer, allowing the juice to drip into a basin. The back of a spoon can be used to press the raspberries into the strainer, resulting in the raspberry pulp being forced into the mixing basin. The process of pressing the raspberries will take several minutes. When you’re finished, make sure to scrape out any raspberry pulp that has accumulated at the bottom of the strainer and into the mixing bowl. Remove and discard any residual seeds and pulp that did not pass through the strainer throughout the process. You should be able to collect between 1/2 and 3/4 cup of juice and pulp. Pour in 1 1/4 cups of water to get 1 1/4 cups total.
  • Combine the raspberry juice, sugar, lemon juice, and cornstarch in a small saucepan over medium heat. To combine the ingredients, whisk them together. Keep whisking frequently over medium heat until the mixture thickens
  • remove from heat.
  • Remove the pan from the heat and stir in the raspberry extract until well combined. Stir well and let aside to cool. This recipe makes 1 1/4 cups and may be stored in the refrigerator for up to a week in a closed container.

For the White Chocolate Buttercream

  • Cut or cut the white chocolate into very small pieces and place it in a microwave-safe dish with 4 tablespoons milk or cream

  • This recipe yields 5 cups frosting. This recipe makes enough frosting for a two- or three-layer eight-inch cake. In the event that you plan on performing a lot of fancy piping, you will need to make more frosting.

**No Cake Flour? Here’s a Substitution

  1. Instead of cake flour, you may use all-purpose flour with the following substitution: for each cup of flour in the recipe, remove 2 tablespoons and replace them with 2 tablespoons cornstarch (for a total of 4 tablespoons cornstarch).
  2. Prepare 2 1/2 cups all-purpose flour, remove 5 Tablespoons and replace with 5 Tablespoons cornstarch for this recipe, then stir in the other ingredients.
  3. To combine the ingredients, whisk them together.
