Vanilla Cake

  • Gluten-free flour mix* (about 2 1/2 cups)
  • 1 tablespoon baking powder
  • 1 teaspoon xanthan gum (omit if your gluten-free flour blend contains guar gum, inulin, or xanthan gum)
  • 6 eggs, 1 cup oil (neutral oil such as sunflower or avocado), 1 cup milk or non-dairy alternative, 1/2 teaspoon salt, and 2 teaspoons vanilla powder or extract

  • 6 cups sifted powdered sugar
  • 1 tablespoon milk or dairy-free milk substitute

  • 14 teaspoon salt. 4 sticks (2 cups) unsalted butter, room temperature.

Make the Cake

  • Preheat the oven to 350 degrees Fahrenheit. Prepare two cake pans by lining them with parchment paper and spraying them with oil.
  • In a large mixing bowl, combine the flour, baking powder, xanthan gum, salt, and vanilla extract, if using, until well combined. To blend, whisk the ingredients together.
  • In a large mixing bowl, whisk together the sugar, eggs, milk, oil, and (liquid) vanilla extract. Using an electric mixer, whip until smooth and frothy.
  • In a separate bowl, combine the liquid ingredients and whisk until the batter is smooth.
  • Preheat the oven to 350°F and bake for 35-40 minutes, or until the top is set and a toothpick inserted into the center comes out clean.
  • Allow the layers or cupcakes to cool for 5 minutes in the pan. After that, transfer to a wire rack to cool entirely

  • Place the butter in a large mixing basin or the bowl of a stand mixer and beat on medium speed until smooth. Using the paddle attachment on a stand mixer, mix the ingredients together.
  • Beat the butter on medium-high speed for about one minute, or until it is pale and creamy.
  • The powdered sugar should be added in three equal parts, beating on low speed for 15 seconds after each third addition.
  • Scrape the sides and bottom of the dish to remove any stuck-on food. Combine the milk, vanilla, and salt in a mixing bowl.

Dairy Free Adaptation 

Use Earth Balance Vegan Buttery Sticks instead of regular butter and unsweetened almond milk instead of regular milk to make a dairy-free, gluten-free cake. Reduce the amount of salt to half a teaspoon for this recipe.

Best Flours for Easy Gluten Free Cake

  • In the previous 10 years, gluten-free flour mixes have made significant progress.
  • Baking gluten-free used to include purchasing, storing, and measuring a variety of different flours in order to create your own flour mix.
  • Fortunately, there are various commercial kinds available that function far better than any homemade combinations I’ve ever attempted to replicate.

These are the brands that I have found to be the most reliable and to have the finest flavor.

  1. Cup 4 Cup Gluten Free Flour – This is the brand of gluten free flour that I prefer to use because any gluten free flavor or texture difference is unnoticeable. The downside is that it is the most costly, and because it contains milk powder, it is not dairy-free.
  2. Bob’s Red Mill (Bob’s Red Mill) Gluten-free products are available. This is the other brand of baking flour that I use since it produces consistent results and has a pleasant flavour. There are a lot of grocery stores that carry it, and it’s a little more reasonable than Cup 4 Cup. Bob’s Red Mill, on the other hand, is solely recommended for cakes. It does not produce satisfactory results whether baking breads, biscuits, or cookies, in my opinion.
  3. King Arthur Gluten-Free Measure-for-Measure Flour — This gluten-free flour is a newer addition to the market, and it has done admirably in my baking testing. Although it is more cheap, I notice a somewhat gritty flavor in baked items when using it.

  • Bake for 16-18 minutes on the middle rack of a preheated 350°F oven, or until a toothpick inserted in the center comes out clean.

After allowing the cupcakes to set in the pans for 10 minutes, transfer them to a wire rack to cool fully before serving.After the cake has been allowed to cool fully, spread or pipe on your chosen icing.

  • Prepare one 8- or 9-inch round cake pan by lining it with parchment rounds or lightly oiling it, or 12 muffin cups by lining them with cupcake papers.
  • Bring all of the ingredients to a comfortable room temperature.

  5. Glass, metal, and ceramic baking pans all have different bake times, so make sure your cake is done before removing it from the oven.
