- So, what size do you want to go with? Individual preferences are entirely up to the individual. It has been my pleasure to try this recipe in all three sizes (as depicted above), and they have all turned out soft, juicy, and really wonderful. Because baking is such a precise science, I do not advocate making any substitutions in this recipe’s ingredients.If you don’t have any of the mentioned items on hand, I recommend looking for a recipe that does include those components in the first place.If needed, salted butter and salt can be replaced for the unsalted butter and salt.I do not recommend replacing cake flour for all-purpose flour in this recipe.Cake flour provides your cake a tighter crumb and a more sensitive feel than ordinary flour.Here is why, when using all-purpose flour instead of cake flour in my cupcake recipe, reviewers frequently complained of a ‘cornbread’ feel – this is why.

Cake storage
Homemade cakes are best served the same day they are produced to ensure maximum freshness.For those who need to prepare their cake several days (or even weeks) in advance, there are options available.Room temperature -Frosted cake can be kept at room temperature for up to two days in an airtight container, but it will begin to dry out after that period.Once the cake has been frosted, it is best served the same day.If the temperature in your home is approaching 90 degrees Fahrenheit or higher, I recommend storing items in the refrigerator.Refrigerated – A cake, whether unfrosted or frosted, may be stored in the refrigerator for 2 to 3 days.
- Wrap the cake in plastic wrap and place it in a well sealed container.
- Optionally, you may brush your cake with simple syrup to help it stay moist for a longer period of time (see my section below on how to prevent dry cake).
- Set aside for an hour to allow the flavors to blend before serving.
- Ice cream cake may be refrigerated for up to two months, whether it is unfrosted or frosted.
- First, freeze the cake, unwrapped, for an hour or until it is solid before frosting it.
- Wrap it gently in plastic and keep it in a well sealed jar for up to 2 months at room temperature.
- The cake should be thawed in the refrigerator overnight before being brought to room temperature for an hour before serving.
- Buttercream frosting may be be stored for up to 3 months if it is kept in an airtight container at room temperature.
Thaw overnight in the refrigerator, then bring to room temperature before rewhipping to make it light and fluffy once more before serving.
How to prevent a dry cake
- Every baker hates it when they go to all the trouble of making a cake just to have it come out dry. Here are some of my favorite strategies for making sure your cake bakes up moist and soft every time. There are no substitutions for any of the components. The lipids and sugar in this recipe (butter, full milk, granulated sugar, and eggs) combine to make the cake moist. The texture and wetness of your cake will be altered if you use different ingredients in their place.
- Make sure you measure your flour correctly. The use of excessive flour might result in a cake that is too dry. Option 1: Weigh your flour using a kitchen scale, as recommended by me
- alternative 2: pour the flour into your measuring cup and level off with a knife. Scooping flour directly from the bin with the measuring cup compacts it into the cup, resulting in up to 25% more flour being added to the recipe.
- Don’t overbake your cake since it will get dry. In the absence of substituting ingredients, the only other reason your cake would come out dry is if it is overbaked.
- Keep an eye on your cake rather than the clock. It is common for ovens to be inconsistent, and one oven may be hotter or colder than the next. - There are three simple techniques to determine whether something is finished: 1. Does your cake bounce a much when you move it from one pan to another? 2. It hasn’t been completed yet. Use your finger to gently push the cake’s surface on top of the pan. If the cake rises back to its original position, it is finished. If an indentation is left on your cake, it indicates that it requires further time. If a toothpick is inserted into the center of your cake and comes out clean or with dry crumbs, your cake is done.
- Instead of using a glass pan, use an aluminum one. Because glass is an insulator, it takes longer for the oven to heat up, resulting in a longer time for your cake to be baked. While you’re waiting for the center to complete baking, the edges of the cake may begin to dry out. However, while this is not always the case, I recommend using metal baking pans for the most consistent results (particularly for novice bakers).
- Using this secret (which is optional, but very effective!) you can make a delicious cake! – Before icing your cake, drizzle simple syrup over the top. A layer of simple syrup on top of the cake helps to keep it moist for extended periods of time. Simple syrup is a 1:1 mixture of water and granulated sugar that is cooked on the stovetop until the sugar is completely dissolved, then allowed to cool to room temperature. For this big cake, I’d recommend a total of 14 cup or more.

- 2 14 cups unsweetened granulated sugar, 1 tablespoon vanilla extract, 4 big eggs room temperature, 3 cups cake flour, 1 tablespoon baking powder, a quarter teaspoon salt, 1 cup whole milk at room temperature

Vanilla Cake
- Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius). Grease a 9×13 or a 13×18-inch baking pan generously and lay it aside to cool. Prepare two 9-inch round cake pans by greasing and flouring them, and put them aside.
- Add the room temperature butter and granulated sugar to a large mixing bowl. Using an electric mixer, cream the mixture until light and fluffy. Add the vanilla and eggs, one at a time, mixing well after each addition until the batter is smooth and integrated.

- Baking time for two 9-inch round cake pans is 26-30 minutes.
- Cooking time for two 8-inch round cake pans is 28-34 minutes.
- Make sure your cake is cooked for the amount of time specified above, or until the cake is baked through in the middle when tested with a toothpick. Because ovens may get quite hot, I recommend testing your cake for doneness 5 minutes before it is done.
- After taking the cake out of the oven, set it aside to cool entirely in the pan(s) on a wire cooling rack.
Frosting
- *According to the recipe, the frosting will cover a 9×13 cake, a 13×18 cake, or the middle and top of a 2-layer cake in one application (with bare sides). Make an additional 1/12 batch of frosting to use on the edges of the cake.
- In a large mixing bowl, combine the room temperature butter and cream until smooth. Slowly incorporate the confectioner’s sugar into the batter until all of the ingredients are thoroughly incorporated. Whip on high speed for 2-3 minutes, or until the mixture is light and fluffy

Using a serrated knife, trim the rounded tops of the layers to create flat layers. Place one layer of the cake on a cake stand or a serving dish. Frost the top of the cake in an equal layer. Place the second layer of cake on top of the first and finish with another layer of icing. Distribute the remainder of the icing along the sides of the cake.

- Baked goods are a precise science, and a sheet cake can be cut to serve up to 24 people. Any substitutions for the items are not recommended. Cakes are moist because of the butter, milk, eggs, and sugar
