Step 1: Prepare Baking Pans
Anyone who bakes a cake does not want it to cling to the pan, thus it is critical to prepare the pans before putting in the batter.With the exception of angel food and chiffon cakes, most recipes ask for greasing and flouring the pan or lining the pan with waxed or parchment paper before baking the cake or pie.While it comes to determining what sort of baking pan to use, our Test Kitchen loves glossy pans since they provide a more golden look when baking.In order to avoid overbrowning, adjust the oven temperature by 25°F if you are using a dark or dull-finish pan and check doneness 3 to 5 minutes earlier than normal.
Step 2: Allow Ingredients to Reach Room Temperature
Many cake recipes call for cake components such as eggs and butter to be allowed to come to room temperature before being used.Because of this, the butter will combine more readily with the other ingredients, and the eggs will result in a more substantial cake volume.(It is not recommended to leave the eggs at room temperature for longer than the period stated in the recipe for food safety concerns.) Step 3: Preheat the Oven

Here’s how it’s done: Using an electric mixer ($23, Target), whip the butter for 30 seconds on a medium to high speed until it is fluffy. Generally, a stand mixer with a medium speed is required for this phase, whereas a hand mixer with a greater speed is required.
- On medium speed, beat in the sugar (and vanilla extract, if the recipe asks for it) until the mixture has a light, fluffy texture and is completely incorporated. This will take around 3 to 5 minutes. (DO NOT chop this section short.) While pounding, scrape the sides of the bowl occasionally. As the butter and sugar are blended, little bubbles will be formed, which will give your cake its beautiful, light, and fluffy texture.
Step 6: Add Eggs One at a Time
Add the eggs (or egg whites) one at a time, mixing well after each addition.Their protein helps to keep the texture of the product by creating structure around air bubbles.Test Kitchen Tip: Separate the eggs into custard cups or small bowls before mixing them together.If you find shell fragments in your batter, you may quickly fish them out of the cup rather than trying to get them out of the batter.
Step 7: Alternate Adding Dry and Wet Ingredients
Beat on low speed after each addition until the flour mixture and milk (or other liquid indicated in the recipe) are fully incorporated.Alternate between adding part of the flour mixture and some of the milk (or other liquid specified in the recipe).The flour mixture should be used to start and finish the recipe.This is due to the fact that when liquid is added to flour, gluten begins to develop.Too much gluten results in a difficult cake, so be careful to start and finish with flour, and avoid overmixing after the liquid has been included.

Step 8: Pour Batter into Pans and Bake
Using a spatula, evenly distribute the batter across the baking pans. Spread the batter in a uniform layer using an offset spatula ($9, Bed Bath & Beyond) once it has been chilled. Make careful to distribute it all the way to the edge of the pan. Make sure to follow the guidelines on the recipe while baking your cake.
Step 9: Check Cake for Doneness
No one likes to eat a dry cake, which is what happens when it is overbaked.Start testing the cake for doneness after the recipe’s specified minimum baking time has passed, and resist opening the oven door until it is time to avoid letting the heat escape until it is time.Insert a wooden toothpick towards the middle of a creamed cake to keep it from falling apart.If the pick comes out clean (with only a crumb or two stuck to it), the cake has finished baking.The cake should be baked for a few minutes longer if there is any wet batter on it.

Step 11: Assemble the Cake
Brush the cake layers with a pastry brush ($10, Williams Sonoma) before assembling them to prevent crumbs from getting into the icing.12 cup of frosting should be spread over the first layer, and the second layer should be carefully placed on top.Continue until all of the layers have been piled.Test Kitchen Tip: To generously fill and frost a two-layer 9-inch cake, it needs around 212 to 3 cups of icing.Plan on using 312 to 4 cups of cake batter for a three-layer cake.
Step 12: Add the First Coat of Frosting
The crumb coat is the key to mastering the art of frosting a layer cake successfully.For this, apply a very thin coating of frosting to the edges and top of the cake and distribute it evenly.While this first coat does not have to be immaculate, it serves an important purpose in keeping crumbs out of the frosting.Allow the cake to rest for 30 minutes to allow the icing to set.Test Kitchen Tip: Use small pieces of waxed paper to wrap around and beneath the initial cake layer when using a pedestal ($13, Walmart) or cake plate to make cleanup easier.
Step 15: Frost and Decorate

What do you think of it for a title?!When I started investigating cakes for my daughter’s Mickey Mouse birthday party, I discovered that the majority of them required a pricey Wilton pan and/or icing or fondant that was heavily tinted with red and black food coloring to look good enough to serve.Neither of those characteristics appealed to me since A) I didn’t want to spend $20 on a one-time use pan and 2) I was grossed out by the smell.Instead, I discovered a simple method for creating a charming Mickey Mouse Cake that did not require the use of a special pan or the use of food coloring.And, as an added bonus, it was both simple and tasty to prepare.

Improving the Taste of Boxed Cake Mixes
I utilized a Pinterest tip to make the cake-baking process even more straightforward.As an alternative to following the guidelines on the cake mix packaging, I just added 1 cup of water and 6 ounces of Greek yogurt to the cake batter and mixed it well.Chobani’s Vanilla Chocolate Chunk yogurt was used in this recipe, although plain Greek yogurt will also work.However, while the approach did make the baking process go much more quickly, I am not certain that it is a good idea in the long run.My chocolate cake was made with the cheapest chocolate cake mix I could find, and I believe that this may have affected the texture of the cake.
It wasn’t as light as I would have liked it to have been.I’ll give the Greek yogurt method a shot with a less cheapskate-y combination and report back to you on how it comes out.
Baking and Assembling a Mickey Mouse Cake
Making the cakes and the We’ve Got Ears cupcakes required a double quantity of the batter, which I prepared ahead of time.In three separate pans, I poured the batter, making every effort to maintain the batter depth consistent throughout all three pans.It took me 32 minutes to bake the cakes at 350 degrees, and they came out flawlessly.Ooh!The imprints left behind by the foil pans would make excellent guides for truck wheels, as well!

How Do You “Frost” the Mickey Cake?
To assemble the cakes, I chopped each one into two pieces and smooshed chocolate Bettercreme icing on top before stacking them again.Then, in a flash of inspiration, I decided to substitute the traditional disgusting black icing with…wait for it…white frosting.GANACHE WITH CHOCOLATE!
Ganache is really simple to prepare and tastes far superior than ordinary frosting or black fondant, which are both available commercially.Make careful to decorate the cake with any extra non-frosting decorations, such as sprinkles or jimmies, before the ganache has completely cooled to room temperature.Once the ganache has hardened to room temperature, it is virtually impossible to get them to adhere to one other again.Because there was no need for a specific cake pan or a gallons of colorful icing, I believe the cake turned out particularly well.
Mickey Mouse Cake Recipes
- Copy and paste Chocolate cake mix, 6 ounces Greek yogurt, 1 cup water, 3/4 cup heavy cream, 9 pieces semi-sweet baker’s chocolate, 1 cup water, 1 cup heavy cream
- Combine all of the ingredients until they are well-combined.
- Pour the batter into one 8-inch round pan and two 4-inch round pans that have been oiled
- set aside.
- Turn the oven to 350 degrees for 32 minutes, or until a toothpick inserted into the center of the cake comes out completely clean
- Remove from the pans, allow to cool, and then frost.
- Chop the chocolate coarsely and place it in a small mixing dish.
- Bring the cream to a boil in a small saucepan, stirring constantly.
- Pour the cream over the chocolate and whisk until the chocolate is completely melted.
- The ganache should be poured over the cakes to the point that it just spills over the sides of the cakes. As the ganache cools, it will become firmer.

Eggless condensed milk cake
Dry ingredients:
- 1 cup plus 1 tablespoon plus 1/2 tablespoon all-purpose flour
- 2 tablespoon plus 1/2 tablespoon cornflour
- 1 teaspoon baking powder
- 12 teaspoon baking soda
- pinch of salt
- 2 tablespoons sugar
- 1 cup plus 1 tablespoon plus 1/2 tablespoon buttermilk
Wet ingredients
- I used apple cider vinegar and used 14 cup melted butter, 200 mL condensed milk at room temperature, 12 cup water, 1 tablespoon vanilla extract, 1 tablespoon vinegar (I used apple cider vinegar), 1 tablespoon sugar
Sugar syrup
- 1/4 teaspoon vanilla extract
- 1/3 cup sugar
- 1/3 cup warm water
Frosting
- 2/3 cup instant pudding mix (3 cups heavy cream, 3/4 cup powdered sugar, 1 teaspoon vanilla extract)
Eggless vanilla cake with condensed milk
- Firstly, The oven should be preheated at 350 degrees Fahrenheit.
- Prepare a 7-inch baking pan by lining it with parchment paper and spraying it with baking spray. Remove any surplus spray from the area
- Add the all-purpose flour, cornflour, baking powder, and baking soda to a large mixing bowl and whisk them together thoroughly to make lump-free smooth flour.
- Additionally, add a touch of salt and sugar and well combine

- To adhere the ears to the cake, pipe whipped cream around the edges.
- Attach the first circle layer to the first circle layer.
- A substantial amount of sugar syrup should be brushed on top and all around the cake.
- Place a frosting layer on top of the cake and use an icing spatula to spread the frosting evenly
- Place the second layer of cake on top of the first layer.
- A sufficient amount of sugar syrup should be brushed on top and all around the second cake.
- Repeat the procedure on the second ear and secure it in the same manner.
Initial frosting
- Spread a large quantity of frosting on top of the cake.
- Make a uniform layer of frosting on the cake’s top and all around the sides
- Refrigerate the cake for at least 2 hours to allow the icing to set.

- Make a printout of Mickey in the Mickey. Discard all except the contour of Mickey’s face, save for the lines that indicate the eyes, nose, and mouth
- Trace around the face, eyes (and eyeballs), nose, and lips with a toothpick to create the illusion of depth.
- Carefully remove the print sheet from the printer and examine it to see if the outline is evident.
- Make an outline with a glitter gel to make icing easier to apply
- Make a sketch of your face, including the eyes, nose, and lips

- Frost the face with a quantity of icing that has been tinted with skin color
- Frost the whole face, with the exception of the eyes, nose, and lips
