- 2 big eggs
- 1 1/2 cups milk
- 1 teaspoon vanilla essence

- 1 teaspoon baking powder For frying, you’ll need a lot of oil. Canola and peanut oils are excellent choices since they have a neutral taste and a high flash point.

- Krusteaz Pancakes should be included. Add the dry ingredients and salt to the liquid mixture and whisk until well combined. All of the ingredients should be thoroughly combined, but not overmixed.
- A heavy-bottomed fry pan, dutch oven, or cast iron pan* with a thick bottom should have roughly 1 1/2″ – 2″ of oil in it. Heat the oil to 375 degrees Fahrenheit. It is sufficient if you do not have an instantaneous thermometer to determine whether the oil is hot enough by dropping a little drop of the batter into the oil, which quickly bubbles and sizzles.
- Using a funnel, piping bag, or squeeze bottle, transfer roughly 1/4 of the batter to a container with your finger covering the entrance until you are ready to dispense it into the hot oil. Remove your finger from the funnel/bag/bottle while holding it several inches above the oil and swirl the batter into the oil, overlaying it on itself, until the batter is completely disbursed.
- The bottom side should be golden brown after about 1-2 minutes, then carefully flip it over with tongs and fried until the second side is golden brown, for another 1-2 minutes. Carefully take the pan from the heat and immediately lay it on a dish covered with paper towels to help drain off any excess oil. Sprinkle with powdered sugar, top with desired toppings, and serve right away.

Even if your Tilt-A-Whirl days are behind you, there’s no reason you shouldn’t be able to enjoy all of the fried goodness available today. Not when you can create the funnel cake, the undisputed king of fair food, at home. funnel cake is said to have originated with the Pennsylvania Dutch, who created a light-sweetened, airy, and crisp fried delicacy that is sprinkled with powdered sugar in the manner of the American-style funnel cake. Cone cakes are gigantic, paper plate-sized confections that are prepared by pouring batter through a funnel in an intricate circular pattern over hot oil. Cone cakes are popular at state fairs. Traditional funnel cake recipes call for a pretty normal batter consisting of flour, eggs, sugar, milk, baking soda, or baking powder
- however, I learned that you can create amazing funnel cakes with ″complete″ buttermilk pancake mix (also known as ″complete″ buttermilk pancake mix) (look for brands that only require the addition of water). These boxed mixes, after all, are little more than a collection of ingredients such as flour, eggs, and milk (in powdered form), sugar, and leavening agents. - In a large Dutch oven, heat the oil to 375°F (190°C) and regulate the flame to keep the temperature constant. Preparing the funnel cake batter while the oil is heating is recommended.

If you’re using a funnel, cover the opening with your index finger and place it over the middle of the Dutch oven. To make a 4- to 5-inch-wide disk, either press batter out of the container or allow batter to flow into the oil, moving fast to swirl in a looping circular pattern into the oil to form a disk. Fry the cake for 1 to 2 minutes on the first side, or until golden brown. Carefully flip the funnel cake over and cook until golden brown on the second side, about 1 minute total. Transfer to a plate lined with paper towels and repeat the process with the remaining batter.
- Place confectioner’s sugar in a fine-mesh strainer and tap it over the cakes to gently sprinkle them with confectioner’s sugar. Serve as soon as possible.
