How to Make Raspberry Cheesecake Cookies with a Cake Mix

    1. The fact that these cookies are made from a cake mix is the cherry on top of the cake.
    2. To prepare the dough, put the dry cake mix, cream cheese brick, stick of butter, egg, and vanilla extract in a mixing bowl.
    3. I like to use a hand held mixer for this task, although it is quite possible to complete it by hand.
    4. Continue to mix until everything is well combined and you have a thick and slightly sticky cookie dough.
    • White chocolate chips and freeze-dried raspberries should be included into the cookie batter.
    • Gently fold them into the cookie batter with your hands.
    • As much as we would like to avoid breaking up the raspberries, we don’t want them to be broken into pieces, so gently mix everything together until it is evenly distributed throughout.
    • You can see that the raspberries have split up a little bit, but this is quite normal and should not be a cause for concern.
    • To make the cookies, use a medium cookie scoop to spoon mounds of cookie batter onto a silicone mat or cookie sheet.
    • Using your finger tips, gently push the tops of the cookies down a little before baking them.
    1. Because this cookie dough will not spread much, we want to be certain that we aid it in the spreading process.
    2. Additionally, the palm of your hand or the bottom of a glass can be used to complete this stage.
    3. Baking at 350 degrees for 9-11 minutes, or until the sides and bottoms of the cookies are just beginning to brown, is the recommended method.
    4. It’s critical not to overbake them when you’re making them.
    5. After removing them from the oven, allow them to cool for at least 10 minutes on the cookie sheet.
    6. After that, you may transfer them to a cooling rack to allow them to cool entirely.

Why Freeze Dried Raspberries Work Awesome in this Recipe

    • Because they are genuine raspberries, freeze dried raspberries provide an abundance of raspberry taste
    • because they are freeze dried, they do not include any additional moisture that might make it difficult to balance the moisture in a cookie dough
    • They break up in the dough, forming small pockets of raspberry sweetness inside the dough.
    • The mix of raspberry and white chocolate creates a delicious taste sensation.

My family claims that they are superior to the ones that can be purchased in a restaurant, but you will have to try them for yourself. I can assure you that you will not be disappointed if you make a batch of these cookies. After all, who doesn’t enjoy the tastes of raspberry cheesecake? There is no doubt that these cookies are a home run! Enjoy!

    Ingredients

    • Subway utilizes a lot of ingredients in these raspberry cheesecake cookies, but thankfully, when we prepare them at home, we can control exactly what goes into them. Let’s take a closer look at each element! Regular all-purpose flour is the finest choice for this recipe. If you choose, you may use gluten-free flour that is measured exactly the same as regular flour.
    • It may seem strange to include cornstarch in a cookie recipe, but including even a tablespoon into the dough will give the cookies a cake-like texture, which is exactly what we’re aiming for
    • Baking powder provides the cookies a cake-like texture and aids in their rising in the oven
    • rising agent
    • In these cookies, the most important fat is unsalted softened butter, but a small amount of cream cheese gives them a faint cheesecake-like flavor.
    • Sweetener: I’m using a 50-50 combination of white sugar and brown sugar in this recipe, which gives the cookie a sweet and chewy texture.
    • Binder: Two big eggs give the dough its richness and chewiness, as well as helping to keep it together.
    • Flavorings: A pinch of salt and a few drops of vanilla essence bring the tastes together.
    • Mix-ins: A considerable amount of white chocolate chips and freeze-dried raspberries provide texture and taste to these cookies, elevating them to a higher level of excellence.
    • Subway utilizes ″raspberry flavored pieces″ in its cookies
    • I’m using freeze dried berries to keep things a little more nutritious.

    2. You may try making these cookies with fresh raspberries instead of the dried ones, but I would not suggest it.
    3. Fresh fruit has a tendency to provide an excessive amount of moisture to the dough, which would hinder the cookies from baking correctly.
    4. I prefer to use freeze dried berries in this recipe because they give a vivid taste without adding any more moisture to the recipe.

    How to Make

    1. Prepare the ingredients for the raspberry cheesecake cookies by gathering them together.
    2. Combine the flour, cornstarch, baking powder, and salt in a large mixing bowl until thoroughly combined.
    3. On a medium speed, beat together the softened butter, cream cheese, white sugar, and brown sugar until light and fluffy, about 1 minute (depending on your mixer).
    4. Add the eggs and vanilla extract to the flour mixture, along with 14 cup of the whipped flour mixture, and mix on medium speed until everything is well combined.
    • On a low setting, add the remaining flour mixture and whisk until a smooth dough is formed.
    • On a low speed, stir in the white chocolate chips and freeze-dried raspberries until well combined.
    • 2 tablespoon-sized balls of dough should be formed and placed on a cookie sheet coated with parchment paper, evenly spaced apart.

    • Allow enough time for the cookies to chill before enjoying this delectable Subway knockoff!

    Variations

    • Vegan: Substitute vegan substitutes for the butter and cream cheese, and replace the eggs with 12 cup unsweetened applesauce instead of the regular ones. You’ll also need vegan white chocolate chips for this recipe.
    • Gluten-Free: In place of the all-purpose flour, use a gluten-free flour that is measured exactly the same as the regular flour, such as Bob’s Red Mill or King Arthur Flour.
    • Additionally, be certain that none of the other components have come into touch with gluten-containing meals.
    • If you prefer raspberry pieces to freeze dried berries, there is an option. A close equivalent for the raspberry jammy pieces used by Subway may be found at King Arthur’s Kitchen.
    • What if you don’t have freeze dried raspberries on hand? If you prefer another sort of freeze dried fruit, such as strawberries or blueberries, you may experiment with it as well
    • Dark or semi-sweet chocolate chips can be used for the white chocolate chips in this recipe.
    • Extra crunch and nuttiness can be achieved by adding 12 cup of finely chopped walnuts, almonds, or pecans.

    Pro Tips

    • Materials should be measured precisely, preferably using a kitchen scale for solid ingredients
    • Use light-colored sheet pans coated with parchment paper to ensure a uniform bake, then bake the cookies one tray at a time in the center of the oven for the best results.
    • Be careful not to use too soft or oily a butter since the dough will get sticky and you will have to refrigerate it for many hours before rolling it into balls.

    Instructions

    4. To the butter and cream cheese mixture, add the sugars and vanilla extract and whisk well to combine. Over medium-high speed, beat the mixture for about 5 minutes, or until it becomes light and fluffy. Make careful to stop the mixer and scrape down the edges of the bowl with a spatula on a regular basis.
    5. In a separate bowl, beat the eggs one at a time into the butter and sugar mixture, making careful to beat well after each addition.

    Raspberry Cookie Ingredients

    • Flour (normal or gluten-free), baking powder, Kosher salt, unsalted butter, brown sugar and granulated sugar, Jell-O Cheesecake Pudding Mix, vanilla extract, eggs, white chocolate baking chips, raspberry preserves, and white chocolate baking chips

    Ingredient Notes

    Flour

This tasty Subway cookie recipe has been tested with both standard All Purpose Flour and a gluten-free measure-for-measure flour mix to ensure that it works. In both instances, everything came out flawlessly. The greatest results are achieved by using a one-to-one or measure-for-measure mix when making them gluten-free.

    Cheesecake Pudding Mix

For me, this pudding mix is a hidden weapon when it comes to baking. Authentic cheesecake taste is imparted without the need for all of the heavy cheesecake components. Simply substituting it into a baking recipe without altering the other components is simple and straightforward. I used it in this Fluffy No-Bake Strawberry Cheesecake Dessert Lasagna recipe, and it was delicious.

What TYPE of Cheesecake Pudding Mix to Use

The INSTANT Cheesecake Pudding Mix from the Jell-O brand is the proper sort to use for these cookies. A sugar-free variant, as well as a cheesecake filling, are available as options (not pudding). These should not be used.
