    Place a generous dollop of the filling or frosting of your choice in the center of the first layer of the cake. Increase the amount of filling if you like a thicker coating. Spread the mixture evenly with an offset spatula until it extends a few millimeters beyond the edges of the pie shell.

    Step 4 – Apply The Second Cake Layer

    Place the other cake round that has been made on top of the filling. Align it with the bottom layer, ensuring sure that the sides of the two layers are parallel. Gently push down on the top layer to ensure that it is uniformly imprinted onto the filling.

    Step 5 – Apply The Crumb Coating

    • The crumb coating is a thin layer of frosting that is put before the top layer of icing is spread to the cake.
    • It works as a barrier, sealing and enclosing any crumbs that may have gotten through.
    • Using this method, the top layer of frosting is protected from mingling with the crumbs (those pesky rascals!).
    • The result is a flawless top coating of frosting.
    • This is exactly how we want it!
    • Place a dollop of frosting on the top of the cake and spread it around evenly.
    • Spread the frosting evenly in a thin layer with an offset spatula, rotating the spatula as you press the icing towards the edges of the cake.
    • If extra frosting is required, start with a little quantity on one side of the cake and carefully spread it all the way around, adding more icing as needed.
    • First, scrape your spatula over the surface of your primary frosting container, removing any excess frosting that may have crumbs on to it.
    • Next, scrape your spatula across the surface of a smaller bowl that is separate from your main frosting receptacle.
    • Continue to distribute it along the sides of the cake until it is completely covered in a thin coating, rotating the cake as you go.
    1. Do not exert too much pressure.
    2. The cake below may still be visible, but a thin layer of frosting will have been applied to conceal the cake beneath it.
    3. Allow about 20 minutes of refrigeration time to allow the crumb coating to set.

    Step 6 – Apply The Top Layer of Icing

    • Place a bigger dollop of frosting over the top layer of the chilled cake, using the same technique that you used to apply the crumb coating.
    • Spread the mixture evenly and thickly across the top of the cake with an offset spatula until it is fully coated.
    • As you push the extra icing towards the borders, use the turntable to rotate it around.
    • Make an indentation on the sides of the cake and carefully spread the frosting all the way around the cake, adding extra icing if necessary.
    • Continue to apply it over the edges of the turntable until it is entirely covered in a thick, uniform coating, rotating the turntable as you go.

    Step 7 – Fix the Edges and Smooth the Sides

    • The edge of the cake, where the top meets the side, will have some extra, uneven icing around it to give it a more finished appearance.
    • However, there is a solution to this problem.
    • Lightly press down and push the frosting towards the center of the cake with the edge of an offset spatula or a metal bench scraper, mixing the extra icing into the remainder of the icing mixture.
    • Dip your offset spatula in hot water and wipe it around the top and sides of the cake to obtain a cleaner top layer.
    • To finish, gently run the spatula over the edges and top of the cake.
    • When the metal is heated, it will gently melt the icing on top of the cake, giving it a smoother surface look.
    • With a moist cloth, wipe away any extra ice that has accumulated on the board.

    Step 8 – Pipe the Borders

    • Fill a pastry bag halfway with frosting and seal the bag with a pastry tip of your choice.
    • Placing the end of the tip at a 45° angle where the bottom of the cake meets the board will create a decorative border at the bottom of the cake.
    • Pipe out the proper form by gently pressing down on the bag for a brief period of time and releasing the pressure as you take the bag away.
    • This technique should be repeated in order to form a bottom border, with the turntable spinning while you continue to pipe.
    • To embellish the top border, position the end of the tip close to the edge of the top border, at a little angle less than 90° from the edge of the border.
    • Once again, apply gentle pressure to the bag in small bursts and pipe out the appropriate form, releasing pressure as you take the bag away.
    • Repeat the technique for the top of the turntable in the same manner as you did for the bottom.

    Step 9 – Add Garnishes

    • In the event that you desire to garnish your dish as a last finishing touch, I recommend putting your garnishes into a separate bowl and decorating with your fingers or a spoon after they’ve been cooled.
    • Instead of accidently spilling the entire jar of sprinkles on top of the cake, this method provides you greater control over the outcome.
    • Before putting the final dessert in the refrigerator, decorate it with the toppings of your choice.
    • If the icing is allowed to cool completely before garnishing, it will become too stiff for the ornaments to adhere.

    Step 10 – Serve and Store

    • If you intend to serve your cake on the same day that you decorate it, you may keep it out at room temperature in a covered container.
    • A decorated cake is ideally served at room temperature so that the frosting and cake have a chance to soften to the most pleasant temperature and consistency for the recipient.
    • If you want to serve it within a week, store it in the refrigerator in a covered container.
    • Allow 30 minutes for the dish to come to room temperature before serving.
