    • 1 and a third cup all-purpose flour
    • 2 tablespoons unsweetened cocoa powder (natural)
    • 1 teaspoon baking powder

    • A half teaspoon of baking soda
    • 12 teaspoons of salt
    • A quarter cup of unsalted butter, softened
    • 1 cup granulated sugar plus 2 teaspoons caster sugar
    • 2 hens’ eggs
    • A quarter-cup of sour cream
    • 1 and a half teaspoons vanilla extract
    • 12 teaspoon white vinegar
    • 12 cup buttermilk (optional)
    • 1 teaspoon blue food coloring* (optional)
    • 12 teaspoon violet food coloring* (optional).

    Cream Cheese Frosting:

    • 10 tablespoons unsalted butter at room temperature
    • 10 ounces cream cheese
    • 12 teaspoon vanilla
    • 14 teaspoon almond essence
    • 5 cups powdered sugar
    • Fresh Blueberries

    Instructions 

    Make the Cake:

    • Preheat the oven to 350 degrees Fahrenheit. Preheat the oven to 350°F. Line four 6-inch round baking pans with parchment paper and coat with nonstick baking spray.
    • Using a mixer on low speed, combine the flour, cocoa powder, baking powder, baking soda, and salt until well blended
    • put aside
    • On medium speed, cream together the butter and sugar in the bowl of a stand mixer fitted with a paddle attachment, until pale and fluffy. Beat in the eggs one at a time, scraping down the sides and bottom of the bowl as necessary, until everything is well blended. On a medium speed, beat in the sour cream, vanilla, and vinegar until well combined.
    • Toss the dry ingredients into the wet components and stir until everything is well-coordinated. In a separate bowl, whisk together the buttermilk and food colorings, then pour it into the batter. Using a spatula, scrape along the sides and bottom of the bowl until everything is barely blended.
    • Distribute the batter among the four cake pans evenly.
    • A toothpick placed in the center of the cake should come out clean after 25-27 minutes of baking. 10 minutes in the pan before moving to a wire cooling rack to finish cooling thoroughly

    Make the Frosting:

    The butter, cream cheese, vanilla, and almond extract should be mixed together on medium-high speed for 2-4 minutes in the bowl of a stand mixer fitted with the paddle attachment until smooth and creamy. Gradually add in the powdered sugar, one cup at a time, and continue beating until creamy.

    To Assemble:

    • Use a serrated knife or a cake leveler to cut the tops of the cakes to produce a flat surface for the cakes to rest on. Scraps should be crumbled into small crumbs and kept aside.
    • Place one cake layer on a cake plate or cake pedestal and repeat the process. Spread a layer of cream cheese frosting on top of the chocolate cake. Fresh blueberries should be pressed into the frosting layer at irregular intervals. Repeat the process with the remaining cakes, icing, and blueberries. Frost the sides and top of the cake with the remaining frosting and blueberries. Press the cake crumbs into the sides of the cake until they are completely coated. If desired, pipe icing rosettes around the top edge of the cake. Ensure that the cake is covered and refrigerated until it is time to serve it.

    1. Prepare the ingredients and preheat the oven to 350 degrees Fahrenheit. Using cooking spray or softened butter, grease the bottoms of two (8-inch) cake pans and cover the bottoms with parchment paper.
    2. In a large mixing bowl, add the sugar, oil, and 1 tablespoon vanilla extract and whisk rapidly to incorporate.
    3. Add the egg and yolks one at a time, stirring after each addition to ensure that they are fully incorporated.
    4. Lastly, add the buttermilk and whisk one more to combine.
    5. Sift the flour, baking soda, baking powder, and salt into a mixing bowl using a fine wire-mesh screen to remove any lumps. Fold gently to blend with a rubber spatula, pausing when a few streaks of dry ingredients are still visible to avoid overmixing.
    6. In a separate bowl, whisk together the flour, baking powder, and salt until the batter is the correct color.

    9. Add half of the confectioners’ sugar, 1/2 teaspoon salt, half the cream, 1 teaspoon vanilla extract, and the vinegar and beating on medium-low until well combined and very smooth, about 2 to 3 minutes.
    10. Whip for 5 to 7 minutes on medium high speed, until the frosty is light and fluffy.
    11. While mixing, add the remaining half of the confectioners’ sugar and the cream, being sure to integrate each ingredient as you go.
    12. Once the cake layers have been allowed to cool fully, ice them and, if you’re feeling particularly fancy, decorate the top with pink sprinkles.

    Tips

    • Remember to get the butter for the frosting to room temperature before using it. The realization that your butter is rock hard while you’re prepared to make buttercream frosting is the most sad feeling in the world.
