The discovery of cake flavor combinations that would work well together was one of my biggest hurdles when I first started my small cake company in my home.I’d have all of these questions racing through my brain, and I’d spend hours experimenting with little quantities of dishes to determine if I actually liked them or not.I’ve given away a lot of free cakes to relatives and friends in order to solicit comments and advice from them.
Can you use the same cake combinations for business?
- In reality, what may be a family favorite does not necessarily function in the professional setting, given the amount of time required for decorating, traveling, and other activities. As an illustration: The red velvet cake with cream cheese frosting is one of my favorites, and I prefer it even more with my no-butter cream cheese frosting, but when I make it for an order with fondant, I usually use Swiss Meringue Buttercream because it is easier to work with and can be left out for a longer period of time.
- Cake flavor that works well with lemon cake – Lemon cake with lemon curd and lemon buttercream is one of my favorite desserts. However, because the temperature is so hot here in the summer, I don’t provide that taste in fondant cakes during the summer months. It must be a buttercream cake with lemon curd and it must be consumed within three days after being baked.

- So, what are some interesting cake flavors to experiment with? Here’s a tiny portion of that list, which I believe you will find to be really enjoyable. Almond cake topped with almond cream and a white chocolate buttercream frosting Use my Vanilla Cream Cake recipe, but flavor it with almond extract before layering it with my White Chocolate Buttercream icing.

How many different types of buttercream frosting are there?
- The sheer quantity of frosting recipes available might be intimidating and even perplexing at times. These are generally classified as follows: Butter-based buttercream – simple all-purpose buttercreams such as my velvet American buttercream and Vanilla (eggless) buttercream
- Decorators buttercream – often made with all or some vegetable shortening to prevent the frosting from melting easily such as my Bakery style frostings – Vanilla and Chocolate frosting
- and Other buttercreams.
- Cream cheese based – made with cream cheese, often with or without butter, such as my classic cream cheese frosting, which is made with butter to give it more stability, and my no-butter cream cheese frosting, which is made with no butter to give it a more luxurious dessert type frosting
- Meringue buttercream – made with the addition of whipped egg whites to give it more stability
- Buttercream based on cream cheese – made with cream cheese, often with or without butter, such as my classic cream cheese It’s less sweet than traditional butter-based buttercreams like my Swiss Meringue or Italian Meringue, and it’s less dense.
- A buttercream produced using egg yolks, such as the French buttercream and German buttercream, is beaten into a light and fluffy frosting with the addition of butter to create a light and fluffy frosting.

How to create simple cake fillings from basic recipes
- While not all of them are uncomplicated, many of them may be made by just changing your basic vanilla buttercream recipe just a little bit more than the original. As an illustration: Almond buttercream is just vanilla buttercream that has been flavored with almond extract.
- Mint buttercream is just vanilla buttercream with a mint flavour added
- In order to make vanilla buttercream, substitute some lemon juice in lieu of the liquid called for in the recipe.
- Nutella buttercream is just Nutella mixed into your vanilla buttercream

Chocolate Cake Fillings
Ganache, truffle, and mousse are all options.Technically, these two chocolate cake fillings, ganache and truffle, are the same thing because they both include chocolate.Truffles are nothing more than ganache that has been shaped into small misshapen balls and coated with cocoa powder in the traditional, genuine manner.They are named from the small fungus truffles that they resemble.As a result, there isn’t much of a distinction between ganache and truffle filling at all.Having saying that, nothing is ever as straightforward as it appears.
There are several various chocolate-to-cream ratios that may be used to create varied consistency ganaches.
Fillings for Yule Logs and Jelly Rolls
- You may, of course, use jelly–or jam, which is easier to spread–instead of jelly. A typical jelly roll filling consists of two layers of jam sandwiched between two layers of whipped cream. Nice! The ratio of chocolate to liquid in ganache used for truffle fillings is approximately 2 parts chocolate to 1 part liquid (predominantly cream but also could include a flavored liquid such as wine or coffee or a liqueur).Ganache prepared with equal parts chocolate and cream (1:1) will not set up as firmly as a conventional truffle filling and is better utilized as a glaze for cakes and other baked goods instead.Pour the chocolate into the cream and stir until it is smooth.Refrigerate until ready to use.A more-or-less quick chocolate mousse is produced, which may be used as a filling and/or icing in many applications.To make a 1:1 ganache, simply pour it into the cake and then whisk it until it is stiff enough to frost.

According to legend, there was a period when cake was served without icing.Let us be thankful that we live in an age when we can purchase cookbooks with recipes for cake fillings and frostings!The second part of Elise’s question is about how to decide which filling to use for whatever cake.To be quite honest, I believe you should just do what you enjoy.Make a ganache and name it ganache or a truffle filling, depending on your preference.Alternatively, whisk it and call it mousse.
Alternatively, you might make a rich mousse and call it truffle filling.I believe that the most important thing to remember is that cakes that include dairy in the filling or icing should be kept refrigerated for the purpose of safety.
To Refrigerate or Not Refrigerate Your Cake and Cake Fillings
As a result of this knowledge, if you’re planning on filling, frosting, or glazing your cake with chocolate ganache, chocolate truffle filling, or chocolate mousse, stick with cake recipes that don’t get hard in the refrigerator, that is, recipes which don’t contain fat that becomes extremely hard at refrigerator temperatures (butter, coconut oil).Choose cakes that are made using oil as the fat (such as chiffon or old-fashioned red velvet), or cakes that have no fat or only a little amount of fat (genoise, sponge cake, angel food cake).Even if you absolutely must prepare a butter cake (because I adore you, pound cake), make sure it is allowed to hang out for at least an hour or two before to serving it.As a result, the fat (along with the rest of the cake) will have a chance to warm up to room temperature and become more pliable.Because of the hardening of the fat in butter cakes when they are taken out of the fridge, they appear to be dry.Give it some time to settle down and warm up, and it’ll be nice and moist for you when you get home.
Even cakes that do not include butter will taste better if they are allowed to set out at room temperature for 30 minutes or so before to serving.The frostings and fillings will have a chance to soften and become more dreamy as a result of the longer baking time.If you’re trying for a ″fudgy″ texture, though, it’s best to serve the dish chilled.
