The following is a chef’s tip: not all mascarpone cheese is made equal. Some are creamier and smoother in texture, while others have a gritty aftertaste. Cello brand mascarpone cheese is my favorite since it’s incredibly smooth and sweet, and it’s excellent for dishes where mouthfeel is key, such as this ice cream or this Peaches and Cream Pie, which both call for it. 1 teaspoon freshly squeezed lemon juice (6 g)
  • 1 teaspoon pure vanilla extract (1 g)
  • a pinch of salt
  • 4 egg yolks
  • 3 1/4 cup sugar
  • 2 cup whole milk (492 g
  • 8 oz mascarpone cheese (226 g, room temperature)
  • 3 tablespoon light corn syrup (52 g)
  • 1 teaspoon fresh squeezed lemon juice (6 g)
  • 1 teaspoon pure vanilla extract (1 g)
  • In the bowl of a stand mixer, combine the egg yolks and beat on a moderate speed until well combined. Slowly add the sugar and continue to beat until the mixture is light in color and creamy.
  • Heat the milk in a saucepan over medium heat until it is just simmering, then incorporate it into the egg mixture by gradually adding a little amount of hot milk, a few tablespoons at a time, while mixing on low speed. Allow for incorporation before putting in additional liquid
  • Then, pour the entire liquid mixture back into the saucepan and cook over medium-low heat until it thickens and reaches 175°F – 180°F, whisking constantly.
  • This should take no more than 3 – 4 minutes total. When you swipe your finger over the centre of the custard, it should coat the back of the spoon rather than running off.
  • Immediately add the mascarpone, corn syrup, lemon juice, vanilla extract, and salt to the boiling custard mixture, stirring constantly until thoroughly dissolved
  • Cover with plastic wrap and set aside to cool to room temperature before refrigerating overnight or until cold enough to use in an ice cream machine.
  • Make ice cream according to the manufacturer’s instructions in an ice cream machine. It takes me 15 minutes to churn mine.
  • Transfer the churned ice cream to an airtight container and place it in the freezer for at least 4 hours prior to serving
  • I recommend buying Cello brand mascarpone cheese since it is really smooth and sweet, and it does not have a gritty aftertaste
  • it is also quite affordable.
  • Alternatively, 2 tablespoons of sugar can be added to the milk before heating and tempering into the egg mixture to replace the corn syrup. It’s important to note that the finished ice cream may have a slight iciness to it.
  • Your ice cream foundation does not have to be refrigerated for an extended period of time. Providing you can cool the ice cream foundation to 39°F (the same temperature as a refrigerated base), you are allowed to churn it the same day
  • however, it is recommended that you do not.
  • In most cases, I prepare the ice cream base at night, chill it overnight, churn it the next morning, freeze it during the day, and the ice cream is ready by supper.
