- (room temperature) 4 8oz blocks full fat Philadelphia cream cheese
- 1.5 cups granulated sugar
- 3 tablespoons cornstarch
- 4 big eggs + 1 yolk (room temperature)
- 2 teaspoons lemon juice
- 2 teaspoons vanilla extract
- 1 cup (250g) sour cream
- 1 cup (250g) sour cream
- 4 large eggs + 1 yolk
Raspberry Sauce (optional topping)
- 2 cups (70g) granulated sugar
- 3 tablespoons (60g) water
- 1 teaspoon lemon juice
- 6 cups (120g) fresh raspberries (or frozen raspberries thawed)

Over medium heat, combine all of the ingredients in a saucepan. Allow the mixture to boil for a few minutes, then begin mashing the raspberries as they soften. Cook for approximately 20 minutes, or until the mixture forms a thin film on the back of a wooden spoon. Pour it into a heat-safe container and place it in the refrigerator before serving.
Graham Cracker Crust
- Preheat the oven to 350 degrees Fahrenheit and prepare a 9-inch springform pan. Lightly brush the interior of the pan with cooking spray and line the edges of the pan with two sheets of parchment paper (or as many as you need to completely cover the walls with paper). Ideally, they should peek out over the edge of the pan just a bit.
- In a small mixing bowl, combine the graham cracker crumbs (which have been finely processed in a food processor), sugar, melted butter, cinnamon, and salt until combined. Combine until the mixture has the consistency of wet sand, then pour it into the baking pan. Firmly push it into the bottom of the pan as well as up the edges of the pan. It should be on its way to the summit. It’s easiest for me to pack it in with a little measuring cup.
- Bake for 10 minutes, then remove it from the oven and lay it aside to cool while you prepare the cheesecake.

- In a small mixing bowl, whisk together the eggs, lemon juice, and vanilla extract until well combined. Reserve
- using the paddle attachment, mix the room temperature cream cheese on medium-low speed just until it’s smooth, about 1 minute (30 seconds to 1 minute). Mix on a moderate speed for approximately 30 seconds after adding the sugar and cornstarch.
- Continue to mix for another 30 seconds or until it comes together after stopping to let it settle for a couple minutes and scraping down the sides and bottom of the bowl
- Slowly incorporate the egg mixture into the batter while using the lowest speed of the mixer. Three to four pours should be plenty, as should patience. You’ll be tempted to increase the pace, but resist the temptation.
- Remove the bowl from the mixer and fold in the sour cream with a rubber spatula until well combined.
- Once the crust has been allowed to cool completely, pour the batter into the pan and tap the pan on the counter a number of times to release any trapped air bubbles that may have formed. Place the cheesecake on the center shelf of the oven and gently pour the boiling water into the pan underneath the cheesecake. Place the racke in the center of the oven and wrap aluminum foil tightly over the base of the cheesecake pan if you don’t have two racks. before adding the liquid, put it on the roasting pan).
- Bake for 1 hour and 40 minutes at 350 degrees. In the oven, it will blow up a little bit, but it will settle back down as it cools down. Once it’s done, keep the cheesecake in the oven for a few minutes before turning off the oven and opening the door. Remove from the oven and set aside for an hour. After an hour has passed, place the cheesecake in the refrigerator and allow it to chill overnight.
