On Pinterest, I came across some ″smash cake″ photographs that I thought was really lovely. Since I am by no means a good baker or cake maker, I decided to take on the task and see if I could make a healthy but still incredibly cute smash cake for Miss Hemsley.

I also chose to prepare the cake fully gluten and dairy free so that I could have a slice of it as well (in the unlikely event that any of it was still edible after Hemsley had devoured it!). Here is how it is done!

    1. Prepare the frosting ahead of time and place it in the refrigerator.
    2. Prepare the batter by whisking together the dry ingredients in a large mixing basin.
    3. In a separate dish, whisk together the wet ingredients until well combined.
    4. Pour the wet liquid into the dry mixture and whisk until everything is perfectly smooth.
    5. Two 6′′ round cake pans (lightly coated with oil) should be used to distribute the batter.
    6. Bake for 25-30 minutes, or until a toothpick inserted in the center of each cake comes out clean

    In the end, I went on a Woodland theme, which was inspired by Whisk Wander (see here), and frosted the cake in the ″naked icing″ technique, using vanilla icing and buttercream.In addition to ″moss″ created from matcha and shredded coconut, I used ″soil″ produced from hemp seeds and cocoa powder to decorate the top of the cake.For additional decoration, I used Schliech forest toys, some greenery, and a tiny banner that I fashioned out of card stock paper and wooden letters that I purchased from Michaels craft store.

    2. Beat the coconut cream on high speed until it is light and fluffy, then beat in the vanilla extract and half of the icing sugar until well combined.
    3. Add in the remaining icing sugar and beat once more until the icing is entirely blended and the frosting is light and fluffy

    5. Place the frosting in the refrigerator until the cake is ready to be assembled
    6. Preheat the oven to 350 degrees and grease and line the bottoms of two 6-inch cake pans with parchment paper.

You are capable of completing this task!

    Tools & Supplies

    Make your smash cake with a couple of little cake pans; I’m using two Fat Daddio pans that are 6′′x 2′′ in size.The following items are required: a 6′′ round cake board or flat dish on which to construct your cake, a spatula or spoon for spreading the icing, and something with which to pipe designs if desired.I’m using a 1M piping tip with a disposable piping bag for this project.
