    A vanilla buttermilk cake soaked in rum is sandwiched between layers of creamy ricotta and mascarpone cannoli filling, a chocolate ganache, and a buttercream kissed with cinnamon and citrus to create an Italian Cannoli Cake.Cannolis played a crucial part in my life as an Italian growing up in New Jersey, and they continue to do so now.Whenever there was a dessert table or special event, they were a big part of it, proudly displayed next to a colorful cookie tray and sfogliatella (lobster tails), another cream-filled pastry.My family used to argue about which neighborhood Italian bakery created the greatest cannoli, with each member having a strong opinion on the subject.If they were unhappy with the goods or the service provided by a favorite bakery, they weren’t hesitant to voice their dissatisfaction by bursting into flames of Italian fever.You may be sure that they’d offer them a second or even third chance, but if they didn’t redeem themselves, the bakery would be declared per me sei morto (″dead to me″).

    1. Cannoli filling was never a favorite of mine when I was little.
    2. It wasn’t sweet enough for my sugar-obsessed pallet, which was disappointed.
    3. I would lick the chocolate chips off the sides of the cannoli and smuggle it back into the pile, chocolate chips and all!

    I didn’t dare to touch the pistachios since I couldn’t put my faith in a nut that was vivid green; this was in keeping with my suspicious and questioning temperament.Cannolis became a favorite of mine as I grew older.Despite this, moving out of New Jersey and to the West Coast at the age of 21 has made it nearly hard to get a nice cannoli for the past ten years or more.Or, at the very least, what I was taught and encouraged to consider to be a decent cannoli.

    Pastry Chef at an Italian-themed hotel and restaurant in downtown Portland a few years ago was a highlight of my professional life.Apart from wedding cakes, I was in charge of the whole dessert menu for the bakery, restaurant, and catering company as well as all of the desserts.I would meet with the brides, schedule the tastings, and create the cake design.

    4. Believe me when I say that I’d rather tell folks I’m from New York than tell them I’m from New Jersey, woman, I reasoned.
