- In a large mixing bowl, mash your banana until it is smooth. Stir in your whisked egg, chopped carrot, melted coconut oil, and oat milk until well combined. Combine all of the ingredients in a large mixing bowl, then add the flour and toss until well combined
- Using a spoon, gently press the cake mixture into the prepared cake tin and smooth up the top with the back of the spoon. Bake the cake for 45 minutes to 1 hour, or until it is thoroughly cooked through, before removing it from the oven and allowing it to cool completely. Don’t be concerned if your cake doesn’t rise much because there is no baking powder in this recipe
- while your cake is cooling, prepare the icing. Peel and slice your potatoes into chunks, then boil them for 15-20 minutes in a kettle of water until they are tender.
