With Christmas just around the way, I’ve been thinking about holiday treats continuously.Cannolis were a traditional Christmas dessert in my family growing up.We used to get homemade cannolis delivered to our door by our neighbors every Christmas, as I detailed in my previous piece, Homemade Cannolis.It’s for this reason that this classic Sicilian dessert comes to mind almost exclusively during the holiday season.When I started thinking about what cakes to make for Christmas this year, a Cannoli Cake was at the top of my list.

How to Make the Cake Layers
- My Classic Vanilla Cake will be used for the cake layers, with a bit of cinnamon thrown in for good measure. These layers are very soft, moist, and tasty, and I really enjoy them. Tips for Creating Outstanding Cake Layers Preheat your oven for approximately 30 minutes before you begin baking.
- Make use of high-quality pans, such as THESE FAT DADDIO pans.
- Keep your butter and sugar beating on medium-high for a few minutes, until the mixture is light and fluffy
- After you’ve added the dry ingredients to your cake mixture, be careful not to overmix it. Reduce the speed to a minimum.
- Make use of items that are at room temperature. This is critical to the success of the cake in terms of rising well
- Check to see that your baking powder is fresh – it should not be older than 6 months.

FOR THE CAKE
- A cup (226 g) unsalted butter at room temperature
- 1 3/4 cups (350 g) granulated sugar
- 6 large egg whites at room temperature
- 1 tbsp. (13 g) vanilla bean paste or pure vanilla extract

- 3 cups (345 g) cake flour
- 1 tbsp. (10 g) baking powder

FOR THE BUTTERCREAM
- Unsalted butter, slightly chilled (2 cups/452 g)
- powdered sugar, weighed and then sifted (6 cups/750 g)
- vanilla essence, 2 teaspoons (eight grams).
- 1/4 cup (57 g) heavy cream, chilled
- pinch of salt (optional).
- This buttercream recipe yields enough to fill and cover the entire cake, plus some more. If you wish to add more piping, you’ll need to make an additional 12 batches.
FOR THE FILLING

- 8 oz cream cheese
- 1 cup 250 g ricotta (homemade or shop purchased)
- I used THIS brand of EZ Gel and 1/2 cup (100 grams) granulated sugar
- 1 cup (231 grams) heavy whipping cream
- 1 tablespoon EZ Gel (I used THIS brand).
- Ground cinnamon, 1 teaspoon (4.25 g) vanilla essence, and 1/4 cup (43.25 g) tiny chocolate chips are all used in this recipe.
FOR THE CAKE
- Preheat the oven to 325 degrees Fahrenheit. Prepare three 8-inch or four 6-inch round cake pans by spraying them with nonstick spray and lining them with parchment paper. Spray once more. Set aside. In a medium-sized mixing basin, whisk together the cake flour, baking powder, cinnamon, and salt until well combined and smooth. Set aside. In the bowl of an electric mixer fitted with the paddle attachment, beat together the butter and sugar on medium-high speed for two minutes. Both in terms of color and texture, the combination should be light.
- Scrape down the sides of the bowl and begin to add the egg whites on medium speed, scraping down the sides and bottom of the bowl between additions. Scrape down the sides and bottom of the bowl between additions. Continue mixing on medium-high speed for approximately two minutes after all of the egg whites have been incorporated.
- Add the vanilla essence and continue to beat until fully blended if necessary.
- Combine the sour cream and buttermilk in a mixing bowl. Using a low-speed mixer, add 13 cups of the flour mixture, followed by 12 cups of the buttermilk mixture, and mix until just combined. The additions of 13 cup flour mixture, 12 cup buttermilk, and the last 13 cup flour combination should be repeated. Only mix for about 30 seconds, or until the flour mixture is well combined. Scrape down the sides and bottom of the bowl, then mix for another 20 to 30 seconds on low until everything is well combined.
- Cook the cake for 25 to 28 minutes, or until a toothpick inserted into the middle of the cake comes out with a few moist crumbs on it, depending on how many 8-inch cake pans you’re using or how many 6-inch cake pans you’re using. Allow for 15 minutes of cooling time in the pans before inverting onto a wire rack to cool entirely. (Tip: spray your wire cooling racks with nonstick spray to prevent them from sticking.)
FOR THE BUTTERCREAM
- Lightly beat the butter in a large mixing bowl fitted with a paddle attachment for about 2 minutes, or until it is light, fluffy, and pale in color
- Slowly add the powdered sugar, followed by the heavy cream, vanilla, and a bit of salt, all while mixing on low speed.
- Once all of the ingredients have been mixed, increase the speed of the mixer to medium-high and continue to beat for 3 to 5 minutes. Scrape down the sides of the bowl and continue to beat for another couple of minutes.
- It is important to whip the buttercream by hand with a wooden spoon or big spatula before using it in order to assist squeeze out the air pockets.
FOR THE FILLING
- In a small metal mixing bowl that has been frozen for ten minutes, whip the cream on high speed while gradually adding the EZ Gel until firm peaks form, about two minutes. Remove from consideration.
- Another bowl, combine the ricotta, cream cheese, sugar, ground cinnamon, and vanilla and mix thoroughly.
- Fold in the heavy cream into the ricotta mixture until well combined.
- Gently fold in the 1 1/4 cup chocolate chips
- repeat.
- It is possible to prepare the filling ahead of time and keep it in an airtight container in the refrigerator.
ASSEMBLY
- Place the first cake layer, top side up, in the center of the cake board. Repeat with the other layers. Apply a thin layer of around 1 cup of filling on the cake layer with a gentle spread. Remember to hold the cake at eye level in order to ensure that the filling is uniformly distributed.
- Place the second cake layer on top of the buttercream to complete the sandwich. Spread another 1 cup of the filling evenly over the cake

- Apply a thin coating of buttercream to the entire cake and smooth it out. For 10 minutes, place the cake in the freezer. This is your crumb coat, which helps to keep your crumbs from falling out.
- Continue to frost the cake with the remaining buttercream when the crumb coat has dried.

- Make the cake first, of course. Combine the vegetable oil, sugar, and vanilla extract in a mixing bowl. One at a time, whisk in the eggs, incorporating well after each addition.
- Using a whisk, combine the dry ingredients.
- To the mixing bowl with the oil and eggs, add the dry ingredient mix as well as the buttermilk. Alternate between adding the dried ingredients and adding the buttermilk.
- Continue to mix until a smooth batter is formed.
- After baking until golden brown, remove the cake from the oven and allow it to cool fully.
- The cannoli icing should be prepared while the cake is cooling.
- Combine the mascarpone, ricotta, and powdered sugar in a mixing bowl. Combine the cinnamon and vanilla extracts. Using half of the frosting (for the cake filling), add the chocolate chips
- leave the remaining half of the frosting (for the outside of the cake) plain and without the chips.
- Whip the heated heavy cream into the chocolate chips until all the chips have melted completely, then set aside.
- To assemble the cake, start by stacking the icing between the layers of vanilla cake. Ice the outside of the cake with the mascarpone ricotta icing that has been left simple. Drizzle the ganache over the cake and then top with additional little cannolis to finish off the look.
How to decorate Cannoli Cake
- There are a plethora of creative options for decorating a cannoli cake. You may be as creative as you want with your decorations, or you can stick to more classic ones. The contents of the cake are always taken into consideration when I am designing cake decorations. Because this cake is intended to taste like a cannoli, with flavors of sweet cheese, vanilla, and chocolate, keep these flavors in mind when deciding on the final ornamentation. I’ve put together a list of some of my favorite ways to design a cannoli cake. Mini chocolate chips should be pressed into the edges of the icing.
- To finish, drizzle the ganache around the borders of the cake.
- Cover the top of the cake with cannoli shell pieces, then decorate the top of the cake with little cannolis.
- Sprinkle the cake with pistachios that have been crushed
- As a finishing touch, use candied orange peel and cherries.
- Make rosettes all over the cake with the cannoli cake filling
- decorate with sprinkles.
- Leave the sides of the cake open (uniced) so that you can see the beautiful cannoli cream cake layers within.

How Long Will Cannoli Cake Last?
This cake never lasts more than a few days in my household!The handmade cannoli cake, on the other hand, will stay in the refrigerator for approximately 4-5 days.If you bake it for any longer than this, the icing will begin to melt and the cake will begin to droop.Any cake made with fresh cheeses or creams has a shelf life of only a few days if it is kept refrigerated.Keep in mind that the cake should be consumed as soon as possible to avoid any complications.

Frosting
- 14 teaspoon ground cinnamon
- 1 tablespoon vanilla essence
- 13 cup micro chocolate chips
- 24 ounces room temperature mascarpone cheese
- 15 ounces whole milk ricotta drained
- 5 cups powdered sugar
Ganache
- A dozen semi-sweet chocolate chips, fourteen cups heavy whipping cream, and cannoli shells
Cake
- Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius). Nonstick baking spray should be sprayed into two 8-inch cake pans. Make a medium-sized mixing bowl and place the flour, salt, and baking powder in it. Mix everything together with a whisk. Remove from consideration
- In a large mixing basin, whisk together the butter, vegetable oil, and sugar until well combined. Using a hand mixer, beat on medium speed until the mixture is light and fluffy
- Add in the vanilla extract and then the eggs, one at a time, mixing well after each addition. Before adding the second egg, beat the first one in just until it is integrated. Scrape the edges of the dish to remove any stuck-on food.
- Alternately stir in the dry ingredients and the buttermilk, starting and finishing with the dry ingredients in each addition. I prefer to use 3 parts flour and 2 parts buttermilk in my recipes.
- Once everything has been incorporated, scrape down the edges of the bowl and stir in any parts that have remained.
- Divide the batter evenly between the two pans that have been prepared. Wrap the pans with Wilton bake even strips to make the cake more uniform in texture. Mine are old, but they’re the same as the purple ones in appearance
- Insert a toothpick into the middle of the cake and bake for 55 minutes to 1 hour, or until the toothpick comes out clean or with moist crumbs on it.
- Allow the cakes to cool for 30 minutes before turning them out onto a cooling rack to finish cooling entirely if possible.
Frosting
- In a large mixing bowl, combine the mascarpone cheese and the ricotta that has been drained. Mix on a medium speed with a hand mixer until everything is well blended.
- Combine the powdered sugar, ground cinnamon, and vanilla essence in a large mixing bowl. Maintain the mixer’s speed until a thick frosting is formed.
- In a separate medium-sized mixing bowl, combine 1 cup frosting with 13 cup tiny chocolate chips until equally dispersed
- set aside.
- Set aside until you’re ready to fill the cannoli shells.
Ganache
In a microwave-safe mixing dish, combine the chocolate chips and heavy whipping cream. Using 30-second intervals, microwave the ganache on medium power, stirring after each interval, until smooth and totally melted.
Assemble the Cannoli Cake
- If the cakes are domed, use a cake leveler or a serrated knife to level the tops of the cakes before cutting each cake in half so that you have four layers
- In the center of a cake plate, place a tiny quantity of cannoli icing that does not contain any mini chocolate chips.
- Place the first layer of cake, cut side down, on a cake plate, directly on top of the frosting. Repeat with the other layers of cake. Gently push the button down
- On top of the layer, spread a thin layer of cannoli icing in a uniform layer. 2 tablespoons (or up to 14 cup if you happen to have 3 1/4 cups of small chocolate chips on hand for filling the cake) of mini chocolate chips on top of the icing
- Place the cakes cut side down on a baking sheet, spread with frosting, and sprinkle with micro chocolate chips. Repeat the process with the remaining cakes.
- Once you’ve placed the last layer of cake on top, spread a generous amount of frosting on top of the cake. Make a uniform layer of frosting on the cake with a big angled spatula, and press any extra icing over the sides of the cake.
- More frosting should be gathered and used to finish icing the edges of the cake.
- Disinfect the angled spatula with warm water and set the cake plate on a turntable. Holding the spatula so that the blade is parallel to the cake, begin carefully spinning the turntable and scraping away any leftover frosting, smoothing out the sides of the cake
- repeat until the cake is completely finished.
- Use warm water to rinse the angled spatula and a paper towel to dry it completely before placing it on the cake to achieve clean swipes with the spatula.
- Fill a sandwich bag halfway with the chilled, but pourable consistency ganache. Make a small hole in one of the corners of the bag and pipe the ganache around the outside border of the top of the cake. Repeat with the other corner. Please allow it to flow gently down the edges of the bowl. In case you are concerned that the cake may flow too much, cool the cake first.
- Fill a piping bag equipped with a round tip with any remaining frosting that does not include chocolate chips, or place the frosting in a storage bag and cut a hole in the corner of the bag. I added additional micro chocolate chips to this frosting before transferring it to a piping bag so that I would have extra frosting to work with while piping
- 8 mounds of frosting should be piped
- Fill the piping bag halfway with the 1 cup of frosting you left aside earlier. Fill 8 small cannoli shells or 4 large cannoli shells with the icing and serve immediately. Large shells should be sliced in half if you’re using them for this recipe.
- Create a pile of shells for each one.
- Any remaining ganache should be drizzled over the top of the shells and the cake.
- Consume immediately or keep in a cake container in the refrigerator

- The fact that everyone appears to have a different perspective on what they should look like and which tastes they should or should not contain might lead to some debate.
Despite the fact that many Americans (including myself) refer to them as ″cannolis,″ ″cannoli″ refers to the plural form, but ″cannolo″ or ″cannula″ refers to the solitary form, which literally translates as ″small tube.″ Candied ricotta cheese and powdered sugar are used to fill cannoli, which are fried pastry dough tubes that are manufactured using a cannoli mold or form.Cannoli are fried pastry dough tubes that are molded into tubes using a cannoli mold or form.In addition to candied fruit, chocolate or chocolate chips, almonds, cinnamon, vanilla, mascarpone cheese, whipped cream, and/or numerous other ingredients, the filling can include a broad variety of other ingredients.

Equipment You May Need
- The cannoli form tubes are often made around a metal tube (also known as cannoli tubes, forms, or molds) that will be used for frying the cannoli shells
- Roller – A good quality rolling pin is required for rolling out the pastry dough prior to cutting it.
- Round Cookie or Biscuit Cutter — To cut out the dough, you can use a round cookie or biscuit cutter. Some individuals like to cut the dough into oval shapes rather than squares. Generally, a 4-inch size is appropriate, but you can use a lower or bigger size if necessary.
- The shells will need to be cooked in a big pot or dutch oven, so prepare one ahead of time.
- The use of a big metal spider strainer (or large long tongs) is recommended for removing the fried tubes from the hot oil (as well as depositing them in the oil)

- Puff Pastry Tubes – Puff Pastry Tubes are made by wrapping a tube of puff pastry around a tube of puff pastry and brushing it with beaten egg to make it attach to the opposite side of the tube.
- Thermometer — To keep track of the temperature of the oil, a cheap thermometer is required. Make every effort to keep the temperature as consistent as possible

Cannoli Shell Ingredients
- Regular all-purpose flour is used for this recipe.
- Brown Sugar – Light brown sugar is a kind of brown sugar (rather than dark brown sugar). Make certain that all clumps are removed. You might also experiment with granulated sugar.
- Only a pinch of salt is required.
- Butter – unsalted butter is preferred. When using salted, you may want to modify the amount of salt you use. You might also use shortening or lard for the butter.
- Eggs — You’ll need two big eggs for this recipe. There are two: one for the pastry dough and one for brushing on top of the dough to help it cling to itself and seal
- Some individuals have had success using a vinegar and water mixture (or white grape juice) instead of marsala wine in the dough, which is the traditional way to make the dough.
- To cook, you’ll need a lot of vegetable oil, so make sure you have a big pot that is at least a few inches deep. If you like, you may instead use Canola or even Peanut Oil (if you don’t have any nut allergies.) instead
How to Make Cannoli Shells
Step one: Combine the flour, brown sugar, and salt in a large mixing bowl.Step Two: Cut cold cubed butter into the flour mixture until it is crumbly in texture.You may use a pastry cutter, your hands, a fork, or even two knives to cut the dough.Alternatively, you might use a food processor to pulse the butter into the batter.To complete Step Three, stir in the wine and the beaten egg until the dough comes together.
- Step Four: Shape the dough into a flat disc, wrap it in plastic wrap, and place it in the refrigerator for at least an hour or more, until it is cold.
- Fourteenth step: Take around one-third to one-half of the dough (save the remainder in the fridge) and spread it out on a lightly floured work surface until it is approximately 1/4-inch thick or thinner.
- You want the dough to be as thin as possible without it crumbling apart in your hands.
- Cut out rounds of dough with a 4-inch round cutter in the final step.
- Repeat the process with the remaining dough.
- You can use any size cutter you like to make little or bigger cannoli shells, depending on your preference.
- To finish the cannoli, wrap a ring of dough around a metal cannoli tube.
- Lightly push the dough together where it touches the egg and press gently to lock it in place.
- Step Eight: Pour a few inches of vegetable oil into a big heavy pot or dutch oven and set aside.
- Heat over medium-high heat until the temperature reaches 365 degrees F.
- With tongs or a spider strainer, carefully lay dough-wrapped molds in heated oil and fry for approximately 3 minutes, or until golden brown.
- Step Ten: Turn over as often as necessary.
- Toss the shells into the pan one at a time, taking careful not to fill the pan with too many.
- Step ten: Remove the shells from the oil and set them on a piece of paper to dry.
- Repeat the process with the remaining shells.
- Eleventh Step: Once the shells have cooled completely, carefully squeeze the metal molds and very gently pull them out of the pastry shells until the shells come loose.

Cannoli Shell Filling Ideas
- It is simple to create homemade Cannoli Cream, and it tastes far better than store-bought. It is also the more genuine and traditional option. Add some micro chocolate chips and/or pistachios to the ends if you’d like, or leave them plain.
- Canning Dip – These chocolate cannoli dip, orange almond cannoli dip, pumpkin cannoli dip, and classic cannoli dip are all delicious alternatives with thicker fillings
- Canning Dip
- A fantastic filling for this cake would be homemade or store-bought sweetened whipped cream, or even defrosted whipped topping from the freezer. Add flavorings, extracts, or even liqueurs to the whipped cream to make it more interesting. Aside from that, chopped fruit or your favorite ″mix-ins″ would make excellent additions.
- The best dessert is mousse, which may be made with whatever flavoring you like.
- Pastry Cream – A rich pastry cream would be ideal for this recipe. You might even use a little amount of whipped cream or whipped topping to thicken and stiffen the mixture.
- Pudding – Similar to pastry cream, you might put a little amount of whipped cream or whipped topping into the pudding before serving. There are a variety of delicious pudding taste options.
- Frothing — Use your preferred frosting and decorate it with your favorite chopped fruit or mix-ins. This Marshmallow Frosting or this Cream Cheese Frosting are both excellent choices. Instead of filling with this easy Peanut Butter Frosting, you may dip the ends of the cannoli shells in melted chocolate (or drizzle chocolate on top) to make chocolate-dipped cannoli shells.
Serving Suggestions
- If at all possible, serve the cannoli immediately after filling them, otherwise the shells would become soggy.
- Serve with a delicious cup of coffee, tea, hot chocolate, or a dessert drink (a Cannoli Martini would be a good choice)
- After filling the cannoli shells, you may either sprinkle them with powdered sugar or pour molten chocolate over them (allowing them to cool before serving).
Quick Tips for Best Results
- Make careful to chill the dough before rolling it out as thinly as possible without the dough breaking.
- Maintaining the oil temperature to the best of your ability (with a thermometer) can help avoid the shells from over-browning if the oil is too hot or becoming soggy if the oil is not hot enough.
- Make sure to use caution when removing the shells from the metal tubes. They are susceptible to breaking or cracking. I’d recommend creating a few extra shells than you think you’ll need just in case any of them break.
- If you want to fill the cannoli shells, you may use a little thin spoon or a pastry bag, which is preferable (or resealable bag with the corner cut). Make sure you use a tip on the pastry bag that is large enough to accommodate any filling (mini chocolate chips can become trapped in certain smaller tips).

- Vegan – It would be difficult to make something vegan without putting it through a lot of testing.
- Vegetarian – It is vegetarian in nature.
- Low-Carb — You may experiment with a low-carb brown sugar substitution, but it will be difficult to avoid the flour in this recipe, which will result in some carbohydrates.
- To make them gluten-free, you can use a gluten-free baking flour equivalent, but I haven’t tried it yet so I’m not sure how well they’ll turn out when fried.

Time required for preparation: 30 minutes Preparation time: 30 minutes 1 hour of chilling time Time allotted: 2 hours Yield a total of 24 shells (4 inch) Calories 107kcal A mixture of 2 cups all-purpose flour (plus a little more to dust the work area), 2 tablespoons light brown sugar, 1/4 teaspoon salt, 3 tablespoons unsalted butter, cold & cubed, divided
- 2 large eggs, beaten and split
- Ingredients: 1/2 cup dry Marsala wine (or dry white wine)
- Vegetable oil (for frying)
- The flour, brown sugar, and salt should be whisked together in a large mixing dish.
- Toss in the chilled diced butter into the flour mixture. Work the butter into the flour mixture with a pastry cutter or your fingertips until it becomes crumbly.
- Stir in the marsala wine and 1 beaten egg until everything is thoroughly mixed and the dough comes together
- Make a flat disc out of the dough and wrap it tightly in plastic wrap. Refrigerate for at least one hour before serving.
- Place a quarter to a half of the dough on a lightly floured work area and knead until smooth (leave remaining dough in fridge until ready to use). Roll the dough out with a rolling pin until it is very thin (approximately 1/4-inch thick or less) and crisp.
- Cut out circles of dough with a 4-inch round cookie or biscuit cutter that has been floured before using. Repeat the rolling and cutting process with the remainder of the dough.
- Wrap each dough round around a metal cannoli tube one at a time, starting with the largest. the overhanging edges of the dough should be sealed with the remaining beaten egg and carefully pressed together to seal
