    2. Preheat the oven to 350 degrees F. In a large mixing basin, combine the 1 3/4 sticks of butter and the sugar and beat till pale yellow, about 2 minutes. Set aside. Add the eggs one at a time, mixing well after each addition. Remove the vanilla essence from the pan and set it aside.
    3. In a second basin, whisk together the flour, salt, and baking powder until well combined. In a large mixing bowl, combine the dry ingredients with the liquid ones until a smooth batter is formed.
    4. In a 10-inch cast iron pan, heat the remaining 1/4 stick butter over medium heat until the butter has barely melted. Remove from heat and set aside. Pour in the brown sugar and, using a slotted spoon, gently fold in the pineapple chunks, reserving the rum for later. Cook for about 4 minutes, or until the sugars begin to caramelize. Using a long kitchen match, ignite the rum in the pan after adding the cherries and soaking them in it. Remove the skillet from the heat and serve immediately. Remove pan from heat and cook until the majority of the alcohol has evaporated, about 10 minutes after flames subside. Remove the skillet from the heat and set it aside for 6 to 10 minutes to cool completely before adding the batter to it. Remove half of the fruit and place it back into the conserved rum for later use as a garnish
    5. pour the batter into the pan and bake for 30 minutes. Preheat the oven to 350°F and bake for 30 to 45 minutes, or until a toothpick inserted into the middle comes out clean. Remove the baking sheet from the oven and set it aside to cool for approximately 5 minutes before removing it from the mold. Remove the cake from its mold by slicing it with a tiny knife around the edge, then placing a large serving dish over the cast iron pan. Cook for a couple of minutes after carefully flipping it over until it comes out of the pan.

    8. Allow the cake to rest for a couple of minutes before handling it with caution.
    • Notes: If you like a more traditional yellow cake, you may substitute a yellow cake mix. Alternatively, you may use two 9 inch round baking dishes and double the quantity of butter and brown sugar to apply on the bottom before placing the pineapple and cherries on top. Then just pour the prepared cake mix over the fruit and bake at 350 degrees for 30 minutes or until done. Transfer to a big rectangular dish and serve.
