- If you don’t have self-rising flour, you’ll need to use baking powder in this recipe. If you don’t have baking powder, you may use baking soda for 1/4 of the quantity. However, I would also use buttermilk, sour cream, or yogurt in place of (or in addition to) regular milk. In order for the baking soda to function and for the cakes to rise, you must have something acidic on hand
- if you do not have an egg, look for a recipe that does not call for one (there are many). Alternatively, 1/4 cup applesauce might be used.

- microwave for 30 seconds.
- Mix in the wet components, which include the milk, melted butter, and vanilla extract. If desired, garnish with sprinkles.
- Microwave for 70-90 seconds on high power.
For healthier mug cake, make these swaps:
- Milk can be substituted with skim milk.
- Sugar: Reduce the amount by half, or use an artificial sugar sweetener or honey in place of sugar. You might even omit the sprinkles altogether.
- Applesauce or coconut oil can be used for butter.
- White whole wheat flour should be used for the flour.
