I’m aware that there are at least a million different banana bread/muffin recipes floating about in the stratosphere at any one time.I’ll add one more to the list.Because I despise wasting food, and I kept gazing at the most perfectly ripe bananas in the world, trying to figure out what to do with them, I came up with this idea (besides the obvious smoothies we make on the daily).
Banana Muffin Ingredients:
Bananas that have become overripe. I always use a hand mixer to purée my soups (pictured below). You might alternatively use a standing mixer or a fork
melted butter is another option. Although I use oil in a lot of my banana recipes, melted butter is required in this one, which is called Buttermilk. The additional moist ingredient that I enjoy using in muffins is
Brown sugar, one egg, and a splash of vanilla. There is no granular in any of the brown
The dry ingredients, which include flour, baking soda, baking powder, salt, and cinnamon, are combined to form the batter. Cinnamon is the key ingredient in this recipe.
The process for making banana muffins is simple.
Preheat the oven to 350°F and line a muffin tin with paper liners.
Remove the butter from the heat and set it aside.
Using a hand mixer, puree the bananas, then combine them with the remaining wet ingredients – the buttermilk, egg, vanilla, and slightly chilled butter
In a separate dish, combine the dry ingredients, which include the brown sugar, flour, baking soda, baking powder, salt, and cinnamon
set aside.
If you’re include chocolate chips or chopped pecans, mix them in with the dry ingredients first
otherwise, combine them with the wet ingredients.
Pour the wet ingredients into the dry ingredients and whisk only until the ingredients are incorporated (about 30 seconds). Don’t over-mix the ingredients.
Fill the muffin pans halfway with the batter. Fill them up all the way to the brim with liquid
Bake until the center is done, then transfer to cooling racks.
EAT with a dollop of butter and a hot cup of coffee to complete the experience! THERE IS ALWAYS BUTTER.
How to test for doneness.
Make a little press on the top of the muffin with your index finger. If it bounces back, they’re out of luck.
Make a hole in the center of the muffin with a toothpick. If it comes out mostly clean, they are finished
otherwise, they are not.
If you want a more gooey muffin, bake them for a few minutes less than 18 minutes.
For a couple of days, you may keep these muffins in an airtight jar on your kitchen counter. You may keep them frozen for up to three months. Enjoy!
