    • 1/2 teaspoon salt
    • 1 cup (2 sticks
    • 230g) unsalted butter, softened to room temperature
    • 1 cup (200g) granulated sugar
    • 1/2 cup (120g) full-fat sour cream
    • 1 and 1/2 teaspoons pure vanilla extract
    • seeds scraped from 1/2 of a vanilla bean
    • 1/2 teaspoon almond extract (optional but recommended! )
    • 1 and 3/4 cups (2

    • 2 tablespoons granulated sugar
    • 1 and 1/2 cups (180g) confectioners’ sugar
    • 1 teaspoon (15ml) heavy cream or milk

Slowly incorporate the dry ingredients into the mixer while it is running on low speed. Everything should be mixed only until it is fully absorbed. Do not over-mix the ingredients. The batter will be extremely creamy and thick, with plenty of particles of vanilla bean throughout
    4. Pour the batter into the pan, filling each Bundt cake cavity two-thirds of the way. If you need to create a second batch, cover the remaining batter loosely with plastic wrap and set it aside at room temperature until your pan is ready again.
    5. 30 minutes or until the cakes are gently yellow and bounce back when softly touched with a finger, depending on the size of your pan. Remove the pan from the oven and allow it to cool for 5 minutes within the pan. Invert the pan on the counter or a wire rack with care to avoid breaking it. Give the pan a little shake to let the cakes come out of the pan. Allowing Bundt cakes to cool fully on a wire rack before frosting and serving is highly recommended.
    6. Make the frosting by following these steps: Combine the raspberries and granulated sugar in a large mixing bowl. To break up the raspberries, vigorously whisk the mixture. Allow for 5 minutes of resting time as the raspberries release their juices. (Alternatively, a small food processor can be used for this stage.) Place the raspberries in a medium-sized mixing basin and strain through a fine mesh sieve. Use a spoon to push them through, allowing all of the fluids to be extracted and the seeds to be removed. You’ll get around 3 Tablespoons of juice from this. Combine the confectioners’ sugar and heavy cream in a separate bowl. If desired, add a bit more confectioners’ sugar to thicken or a little more cream to dilute the sauce. Allow it cool completely before drizzled over pound cakes
