    2. After taking a look at what I was doing, I decided to raise my fees and accept fewer orders going forward.
    3. I’m pleased to report that I’m now generating a solid profit on a consistent basis.

    I still don’t charge as much as other neighboring bakeries (the nearest ″real″ town is 35 miles away – I live in the STICKS!), but since boosting my rates, I’ve been able to pay myself on a regular basis, which is wonderful!I’m also not undercutting or stealing business from local bakeries or bakers by offering ″cheap″ cakes.Please note that doing so will result in your being despised!

    1. I believe it is OK to have cheaper prices (but not super-duper grocery store cheap) while you are first starting out and attempting to establish yourself, but once you have gained expertise, you should be earning a profit.
    2. Particularly if you’re putting in high-quality, equivalent effort.
    3. Although I am unable to answer that issue for you (since some bakers/cakers just do better work than others), you must be honest with yourself and establish your fees in accordance with that honesty.
    4. For example, if you reside in a large city where the typical price for a beautifully decorated cake is $7 per serving and you know (or have been told) that your work is as excellent as or better than theirs, don’t sell yourself short — compete with their prices!
    • If your work and the quality of your decorating are more in line with what they’d find at a grocery store bakery, you may want to adjust your prices to be more in line with what they’re charging (although not as low as they are – they’re still not putting out homemade cakes and they’re still not paying retail for ingredients!).

    You need to value your cake work & charge accordingly.

    1. This is the most crucial thing to remember.
    2. You must place a high value on your work in order for your clients to place a high value on your work!
    3. Never, ever say or accept the phrase ″it’s only cake″!

    Someone else may provide them with ″only cake,″ if that is what they choose!Oh, and please allow me to say this.When I first increased my rates, I was scared that I would lose consumers, among other things.In the meanwhile, it’s still difficult when people balk at my rates or decide not to purchase from me because they believe I’m too pricey (especially local people in my tiny town).

    1. But, to be really honest, I’m still turning down 3-5 orders every week since I’m completely booked!
    2. (PS: The vast majority of my customers, perhaps 90 percent or more, travel more than 30 miles to purchase my cakes.
    3. I have a fantastic reputation, and customers aren’t bothered by the long commute!).
    4. What a relief to know that I’m actually earning money doing what I enjoy rather than sacrificing my family life for naught.
    • My cake is perfectly acceptable to those who cannot pay for it.
    • Sometimes it’s a true budget issue, and I personally live within a budget – this does not bother me in the least.
    • In other cases, though, clients request ″extra special″ items at an unexceptional price, and I am unable to accommodate their requests.
    • I believe what I do to be an art form, and I typically devote 3-8 hours to each cake.
    • I, like everyone else, require compensation for the time I devote to my job.

    People who wish to pay $.50 (or less) per serving must travel to a grocery store and get a low-cost cake in which the icing is scooped out of a 5 gallon bucket and the sheet cake is baked hundreds of miles away and delivered frozen.Although I have purchased and consumed my fair share of Walmart cakes, I do not hold it in contempt – it is nothing to be sneezed at – this is not what I do!A bespoke cake that needs me to take away hours and hours of my time from my family is not going to be affordable, especially if they want it delivered.Period.Your reputation of being cheap is something you don’t want, and you have to make it worthwhile for YOU to do it or you’ll burn out and stop.I do, of course, make allowances for family and friends in special circumstances.

    I frequently offer them a discount, but I seldom do them for free, unless they are members of my direct family, in which case they may still be responsible for the cost of the materials.

    How did I come to my ″per serving″ price?

    • On the basis of three considerations, I developed my price list: Consider how much other area bakers/bakeries are charging for similar services. Call them and see if you can work anything out. We have to charge less at home from time to time, but not by much. Bakeries incur additional expenses such as paying for their facility, additional utility bills, commercial equipment, and maybe compensating other employees, among other things. You, on the other hand, want to be competitive. In this case, you should charge $3-3.50 per serving if they charge $4, rather than you charging $1 per serving if they charge $4
    • this will cover the cost of your materials and other expenditures. You’ll need to put in some effort and do some arithmetic, but you’ll need to know how much your cakes are costing you. Costs for ingredients (break them down per serving), cake boards, tape, boxes (for deliveries), business cards (and even energy) should all be added up (if possible, check your previous bills and see if there was an increase after you started caking). All of these considerations are important
    • your time. This is critically crucial! As a homeschooling mother of six children, I must place a high value on my time. I don’t want to be working on a cake for the fifth time in the hopes of making only $20 profit. that would be terrible! When I initially looked at my money and profit, I saw that I was only making approximately $2 each hour. That was really unacceptable. You must be aware of, or be able to provide an extremely accurate estimate of, the amount of time you spend on cakes. While it is true that there will be times when you will make a major mistake and something will take significantly longer than you anticipated, in general, you should have a good idea of the time involved and determine how much you want or need to earn per hour in order for it to be worth your time and energy

    So, I realize you’re probably still scratching your head. But what do YOU charge for your services?

    My Cake Pricing Guidelines:

    • So here you have it. Please note that this is not a full pricing list, but rather a broad overview of the costs I charge for decorated party and wedding cakes. This is also subject to change at any time and without prior notice: There are relatively few exceptions to the $4.00 per serving rule. This comprises buttercream and fondant cakes, among other things. (This was revised in 2018
    • my current rates range from $4.50 to $7.00 per dish.) This is a rule that cannot be broken under any circumstances. A basic sheet cake with 22 serves costs at the very least $88. (plus taxes). A minimum of $96 (plus taxes) is required for an 8″ round with 24 servings.
    • Tiered cakes are normally priced at $4.50 per serving for two tiers, with prices increasing as the number of tiers rise (by $.25 each tier, so a four tiered cake would cost at least $4.50 per serving) and the difficulty/design of the cake. Cakes with 26 servings are $120 minimum, plus taxes
    • 3-D sculptured toppers, sugar flowers, and other intricate details cost an additional $15-25
