    • 1 12 cups Greek yogurt, full fat

    Crunch Topping

    • Melt the butter in a saucepan
    • crush the cookies in a food processor until they have a fine crumb
    • Pulse pecans until they are finely chopped in a food processor.
    • Toss in the brown sugar and combine thoroughly.
    • Mix in the melted butter until everything is well-combined.
    • About 2 cups of the batter will be reserved to be used on the edges of the cake after it has been cooked.
    • Butter and flour four 9-inch round cake pans, and then cover the bottoms with a circle of parchment paper to prevent the cakes from sticking. Using butter, grease the parchment paper.
    • Separate the remaining crunch mixture evenly amongst the four cake pans that have been prepped and softly press the mixture into the bottoms of the pans to create a uniform layer in the pan
    • Remove the pans from the oven and begin baking the cake

    Banana Cake:

    • Preheat the oven to 325 degrees Fahrenheit.
    • In a large mixing basin, whisk together the flour, baking soda, and salt until thoroughly combined, then put aside until needed
    • Bananas are mashed with 1 teaspoon lemon juice
    • The butter, 2 tablespoons vegetable oil, granulated sugar, and light brown sugar should be whipped on medium-high speed in the bowl of an electric stand mixer fitted with the paddle attachment until pale and fluffy
    • In a separate bowl, whisk together the remaining 2 tablespoons of vegetable oil and the eggs, one at a time.
    • Combine the vanilla and mashed bananas in a mixing bowl.
    • In a mixing bowl set on low speed, gently add the flour mixture in three batches, alternating with the Greek yogurt in the first and last batches, beginning and ending with the flour mixture after each addition. Mix just until mixed after each addition.
    • Don’t overmix the ingredients.
    • Divide the mixture evenly among the cake pans that have been prepped, and smooth the batter into an even layer.
    • Bake the cakes in the preheated oven for 30 – 35 minutes, depending on their size. Alternatively, until a toothpick put into c the entry comes out completely clean. Allow for thorough cooling of the cakes before icing them.

    Cream Cheese Frosting:

    • Using a paddle attachment on an electric stand mixer equipped with a bowl, beat the cream cheese and butter until they are extremely smooth and creamy.
    • While the mixer is running on a low speed, slowly put in the confectioners’ sugar. Mix in the vanilla extract until well incorporated. Keep it aside until you need it.

    Assembly

    • Preheat the oven to 350 degrees F and bake the crunch mix for 8-10 minutes. Alternatively, cook until it begins to crisp up. Don’t let it catch fire! Allow the cake to cool completely before applying the frosting to the edges and top.
    • After your cake has been allowed to cool fully (you may even place it in the refrigerator for a few hours), begin icing the layers and assembling the cake.
    • As soon as you have arranged all of the layers with a small amount of frosting between them, begin to apply the remaining icing over the sides and top of the cake.
    • As soon as you’ve finished frosting, cover the sides and top with the remaining crunch mixture (you may skip this step).

    Cook for 8-10 minutes at 350 degrees F, using the crunch mix that was set aside.Alternatively, cook until the surface begins to crisp up.Make sure it doesn’t catch on fire!Before applying the frosting to the edges and top of the cake, let it to cool completely.Start by icing the layers and assembling the cake once it has been allowed to cool fully (you may even refrigerate it for a few hours).As soon as you have arranged all of the layers with a small amount of frosting between them, begin to apply the remaining icing over the sides and top of the cake;
    As soon as you’ve finished frosting, cover the sides and top with the additional crunch mixture (you may skip this step).

    What Is Feuilletine?

    Paillete feuilletine (foo-ye-teen, more-or-less, derived from the French ″feuille,″ which means ″leaf″) is a crispy, thin shard of sugar cone that is usually only seen in professional kitchens.It may be used to give crispness to mousses and other desserts.Feuilletine is prepared from crêpes Dentelle that have been smashed.I had never heard of crêpe Dentelles until someone approached me and asked if I would be interested in making a video to demonstrate how to make them.In order to recreate Crepes Dentelles, I conducted much study, made a few mistakes (which are shown in the film), and eventually produced a reasonable replica.You can see all of my attempts as well as my final triumph if you watch the video.

    Why Is It Called Pailleté Feuilletine?

    It’s only that paillete feuilletine is a more descriptive term that indicates that they’re talking about small, lacy shards of crepe dentelles.Paillete feuilletine is a French word that meaning ″broken into bits.″ In the same way that the Yiddish term ″farfel″ means ″broken bits″ (as in Matzo Farfel Kugel, when broken pieces of matzo take the place of noodles during Passover), paillete simply refers to little pieces of feuilletine, also known as crepes dentelle, in French.Or, to put it another way, ″little fragments of leaves.″

    How to Make Crepes Dentelle

    In this video, I experiment with various different methods of producing crepes Dentelle before settling on the notion of using a looser batter in the middle of the night to achieve the best results.You’ll be able to witness all of my attempts, including the winning attempt at the conclusion.Due to the fragility of the crepes, I believe that some clever Crêpe Dentelle manufacturer came up with the idea of creating a product from broken, crispy crepes, and so paillete feuilletine was created.Please check my post on how to make crepes dentelle for the recipe that I finally settled on.Make your own feuilletine by chopping them up and crushing them.Here is a video that demonstrates how authentic crepe dentelle are created.

    Of course, if I had known about this before I started mucking around in circles, it would have saved me a lot of time and aggravation!Surprise, surprise: the trick is in using a very thin batter, which makes perfect sense.

    What Can I Use Feuilletine For?

    • Incorporate into the ganache and use for the truffle centers.
    • Sprinkle it on top of cake fillings in between layers of cake
    • One of the cleverest (?) use is to mix it with tempered chocolate until it is barely coated, then spread it out thinly on a silpat and allow it to cool before breaking it up and using it as crispy chocolate tuiles. Oh my goodness

    What Can I Substitute for It?

    Contrary to popular belief, corn flakes will provide you with the crispiness and crunchiness that feuilletine provides with little more work than rushing out to the shop (or maybe reaching up into your cupboard).Crushed cornflakes are used to provide crunchy crunch to my homemade butterfinger recipe, which is a favorite of mine.Alternatively, you may smash sugar cones (not cake cones), which will produce a taste that is very similar to vanilla but will have more of a *crunch* than a *crisp* when you bite into it.Nonetheless, it is definitely worth trying with.

    Can I Mix Feuilletine Into Ice Cream?

    No.Consider feuilletine to be a kind of cereal.What happens to cereal when it’s mixed with milk or another liquid, and why?It becomes squishy.Ew.If you want to add crunch immediately before serving, you may do it at the last minute, but you can’t incorporate it into your ice cream base and expect it to stay crunchy.

    Feuilletine is created crispy by using fat-based components such as chocolate and nut butters, as well as praline paste, to keep it crispy.To avoid this, keep feuilletine flakes away from watery liquids such as milk, cream, ice cream base, cake batter and other similar recipes.Combine it with chocolate to create a crunchy crunch on top of the chocolate layer.Ganache, on the other hand, is not recommended since it includes too much liquid from the cream.

    If you mix it with melted coating chocolate or tempered chocolate, it will keep its crisp texture.
