You Don’t Need a Special Cake Pan to Make This Adorable Easter Lamb Cake

  • Lamb cakes are a classic Easter table centerpiece that will never go out of style because of their timeless appeal.
  • The most amusing aspect of these classic cakes that appear on the internet each year is the hilarious diversity of décor designs that range from adorable to perhaps a little bit demonic in appearance.
  • A lamb cake form is often used to create these classic cakes, but just because you can’t find a lamb cake mold (or don’t want to spend money on another baking pan that will only be used once a year) doesn’t mean a lamb cake can’t be the focus of your Easter feast.

How to Make a Lamb Cake Without a Mold

  • Any type of cake mix (16.5oz box)
  • 2 (16.5oz) cartons of cake mix
  • Red food coloring, green food coloring, and black food coloring
  • 3 (16oz) jars of white frosting
  • 12 cup shredded coconut (optional)
  • Skewers made of bamboo or toothpicks that are long
  • Optional: Easter eggs or sweets (if desired).
  1. To begin, bake one cake in a 9×13-inch baking dish and another in a normal muffin pan according to the package directions, using two boxes of store-bought cake mix (I chose Duncan Hines since I’d heard it creates an especially sturdy, dense cake foundation). Wrap the cakes in plastic wrap and place them in the refrigerator for 2 hours or overnight.
  2. Cut the 9×13 sheet cake in thirds across the shortest width to get three rectangles that are similar in size. Stack the three cakes on a big plate or sheet pan, putting a thin layer of frosting between each cake layer and pressing down gently. Assemble the head of the cake by securing a cupcake to one of the cake layers on one side with a skewer. Using a serrated knife, carefully cut away the cake to create the shape of the lamb’s back and legs. For the ears, save two bigger pieces of cake crumbs for later use.
  3. Once the cake has been sliced into the appropriate form, spread a thin layer of icing over the whole surface to create a crumb coat. Take two cake scraps and cut them into triangles, making sure that they are both the same size and form as the other. In addition, coat the triangles with the icing. Place the entire cake in the freezer for 2 hours to set the flavors.
  4. In the meantime, fill a frosting bag with white frosting and set it aside (I used a star tip). Using a pastry bag, pipe tiny, circular dollops of frosting around the whole body and head of the cake after it has been frozen. In the event that you do not want to use frosting to adorn the cake, you may wrap the body with ″fleece″ made from an additional 2 cups of shredded coconut.
  5. Attach the triangular cake slices to the head on either side of the head using skewers to form the ears. Ears should be frosted with icing, but the middle of the ears should be left blank. Using the white frosting and a few drops of each food coloring, make a black frosting and a pink frosting in separate basins by mixing them together in one dish. Fill in the inner section of the ears and the nose with the pink frosting that has been transferred to a piping bag. Use the black frosting to give the appearance of eyeballs.
  6. Create ″grass″ by mixing shredded coconut and green food coloring together. Carefully transfer the finished lamb cake to a serving tray or cake stand. Sprinkle the green coconut around the dish, allowing it to conceal any faults on the bottom of the cake’s layer cake layer cake. Add any more candy or Easter eggs to the dish to finish it off.

I swear I won’t tell anyone. The traditional yellow cake is a personal favorite of mine, but any recipe that yields two 8-inch layer cakes will do (or boxed mix for that matter). Because the icing is vital to binding the cake together and giving it the rounded egg form, you will need a lot of it to complete the project. To be on the safe side, if you’re rushed for time and using pre-made frosting, I’d recommend using two (16-ounce) containers to be cautious. If you are very particular about the colors and pattern you want to create on your cake, you may want to purchase two bags of M&Ms to ensure that you have more than enough of the colors you want. This is especially true because the distribution of colors might differ from bag to bag (believe me, I did a high school statistics project on this ages ago). In order to make the cake, you’ll need 2 (8-inch) round layer cakes, such as this Yellow Birthday Cake from Flour by Joanne Chang or your favorite boxed cake mix.
  • For the Chocolate Frosting, combine the following ingredients:
  • 2 1/2 sticks unsalted butter, gently softened
  • 12 ounces (approximately 2 cups) confectioners’ sugar
  • 12 ounces 72 percent cacao chocolate, melted in a double boiler or microwave-safe bowl
  • 20 tablespoons (2 1/2 sticks) unsalted butter, slightly softened
  • 1. 1 bag (12.6 ounces) of M & Ms for Easter (I used the dark chocolate ones)

  1. Prepare two 8-inch round cakes from a yellow birthday cake mix or your favorite boxed cake mix as directed on the package.
  2. To make the frosting, use the following ingredients: The butter and sugar should be mixed together on medium speed in the bowl of an electric stand mixer until well blended, scraping down the sides as needed. Beat in the melted chocolate until it is completely incorporated. Continue pounding until the mixture is readily spreadable. Remove from consideration.
  3. To Assemble the Cake, follow these steps: Carefully separate the cooled cake layers horizontally with a sharp knife so that you have four whole layers of cake. When you’ve had the layers stacked on top of each other, cut them approximately 3/4 inch from the middle so that you have four large pieces and four smaller parts.
  4. Distribute enough frosting between each layer to keep the layers together, then assemble and place the layers on a large plate in an upright position (cut side-down). The core of the cake will be made up of four bigger layers, with two smaller ones on either side of the center. Make careful to keep the two little domed top layers for the very outermost pieces by separating them.
  5. After the layers have been assembled, gently trim the outside edges with a sharp knife to give the cake a more egg-like form. If desired, you may use icing to bind the trimmed pieces together to give the egg a more rounded appearance (I placed a little piece that had been clipped off the edge to the ″tip″ of the egg to give it a more rounded appearance).
  6. Spread the remaining frosting over the outside of the cake and decorate with M&Ms in a design of your choosing. The striped egg look was achieved by sorting all of the M&Ms by color and then applying them in broad stripes.

These egg cakes are not as neatly formed as the ones that are baked in special pans, but they are nonetheless tasty and delicious.Yours may be more attractive, while theirs may be less attractive.In terms of forms, I can tell you that an egg is not the most difficult to create; we’re not talking about building pirate ships or castles, or even anatomically perfect Legos, here.I also experimented with several types of cakes, including pound cake and normal birthday-style cakes, to see which worked best.For a variety of reasons, I believe that a pound cake is your best option.For starters, it’s baked in a loaf pan, which makes it easy to separate the batter into three individual eggs.

Another advantage is that you don’t have to guess how much batter to put in the loaf pan (unlike with a recipe that isn’t intended to be cooked in a loaf pan).Finally, because pound cake is solid, it is simpler to slice than other types of cake.The pound cake will yield a large amount of cake scraps throughout the egg-cutting process; preserve every last one of them for later use.These little slices of cake serve as the perfect base for a strawberry trifle dessert.

I don’t have a single creative bone in my body.I’ve attempted to learn how to be crafty, but have come up short.As a result, I was a little anxious when I started out to bake these Easter egg cakes.Nervous to the point of sweaty hands.But that was simply happening at that point.

Remove the top of the cake with a sharp knife: Working with one chunk of cake at a time, position your knife so that it is practically parallel to the top of the cake, but slightly slanted, approximately a third of the way from one end of the piece. Remove two-thirds (the majority) of the top of the fruit by slicing it forward at a little oblique angle. Your second hand should be placed lightly on top of the cake to apply pressure and assist in guiding the cake knife. You want to make something that looks like the hood of a vehicle. This will serve as the tail end of your ″egg.″
  3. Angle-cut the opposite end of the cake, just like the first. That portion of your cake will be the ″front″ end of the cake.
  4. Remove the corners: Starting at the front end, slice away the corners on each side of the slope, resulting in a front that is somewhat rounded.
  5. Remove sharp edges and pointed pieces by sanding them down: Take it easy. With your free hand, gently press the top of the portions you’re shaving off to guide the knife and prevent it from slicing off too much material. Remove the pointed edges from the front of the cake and trim the points from the back of the cake to make the entire cake rounder. If you want a more noticeable curve, you may need to remove additional slivers off the top of the cake. As you trim, smooth down any stray crumbs and use your hands to (lightly!) push and shape the egg into the cake. Repeat the process with the remaining cake sections. Using the same method, cut and shape the remaining two-thirds of the pound cake into eggs as you did the first. It’s a good idea to slice off the crusted ends of the dough before shaping it.
  6. Spread a thin layer of buttercream on top of the cakes to serve as a ″crumb coat″: Spread a very thin layer of frosting over the eggs, smoothing it over the crumbs and holding them in place while baking. Place the cakes in the refrigerator for about 10 minutes to allow them to firm up.
  7. Cakes are frosted with a thick coating of buttercream as follows: Distribute the remaining frosting evenly over the cakes and thoroughly coat them

  • Keeping the cakes fresh: If you are not serving the cakes right away, cover them with a cake dome or an overturned dish and store them at room temperature for 1 to 3 days before serving.
