    1. In a large mixing bowl, whisk together the egg, mayonnaise, parsley, dijon mustard, worcestershire sauce, Old Bay seasoning, lemon juice, and salt until well combined. Place the crab meat on top of the cracker crumbs, and then top with more cracker crumbs. Fold the ingredients together very slowly and carefully using a rubber spatula or big spoon. The last thing you need is for the crab flesh to be broken up.
    2. Refrigerate for at least 30 minutes and up to 1 day after covering securely with plastic wrap.
    3. Preheat the oven to 450 degrees Fahrenheit (232 degrees Celsius). Grease a rimmed baking sheet generously with butter or nonstick spray, or line with a silicone baking mat, and set aside.
    4. Using a 1/2 cup measuring cup, divide the crab cake mixture into 6 mounds on a baking sheet and bake for 20 minutes. (Be careful not to flatten!) Use your hands or a spoon to compact each individual mound, making sure there are no lumps sticking out or the mounds aren’t crumbling. Brush each with melted butter to give it a richer taste. This is an optional, but highly recommended, step.
    5. Bake for 12-14 minutes, or until the sides and top are gently browned around the edges. Serve each with a squeeze of fresh lemon juice while still warm.
    6. Leftover crab cakes may be stored in an airtight container in the refrigerator for up to 5 days or frozen for up to 3 months.


    1. Instructions for Freezing: You may store the portioned unbaked crab cakes for up to 3 months after they have been baked. Thaw in the refrigerator, brush with melted butter, then bake according to package instructions. You can also freeze the crab cakes once they have been baked and chilled for up to 3 months. Thaw, then reheat in an oven preheated to 350°F (177°C) for 10-15 minutes, or until well heated. Alternatively, bake the frozen crab cakes for around 25-30 minutes at 350°F (177°C).

    3. Smaller Sizes: To make smaller crab cakes, split the mixture into 12 1/4 cup portions and bake at 350°F for 20 minutes. Divide the mixture into 24 parts of 2 tablespoons each for the small crab cakes. Continue to bake at the same temperature as before. Due to the smaller size, the baking time is reduced. When the tops and edges of the crab cakes are gently browned, the crab cakes are ready.
