  • Prepare two 8-inch cake pans by lining the bottoms with a circular piece of parchment paper and baking for 30 minutes at 350 degrees. Nonstick baking spray should be lightly sprayed on the sides of the pan. Preheat the oven to 350 degrees Fahrenheit.
  • Combine flour, baking powder, cornstarch, and salt in a medium-sized mixing basin until well combined, then put aside.
  • The butter and sugar should be creamed together in a large mixing basin or stand mixer, but not too creamy. In a separate bowl, whisk together the egg whites, vanilla, and almond extract, if using. Gradually pour in the flour mixture and milk, mixing well between each addition of the ingredients. The batter should be light and fluffy in appearance.
  • Divide the batter evenly between the cake pans that have been prepared. 25 to 28 minutes in the oven. When lightly touched in the center of the cakes, they should spring back to the touch. Allow the cakes to cool after they have been removed from the oven.

For the Simple Syrup

Bring water and sugar to a boil in a medium saucepan, stirring constantly, until the sugar is completely dissolved, then remove from heat and put aside.

For the Frosting

  • To get shaving cream-like texture, whip the heavy cream and vanilla extract together in a stand mixer fitted with a whisk attachment or with a firm hand whisk until it’s almost hard like shaving cream. This will take 2 – 3 minutes at fast speed (and considerably longer if done by hand).
  • Using a medium-sized mixing bowl, thoroughly incorporate the cream cheese, mascarpone cheese, and powdered sugar until completely mixed and creamy. Using a gentle hand, gently blend the cream mixture and the cheese mixture until they are smooth and creamy.

To Assemble the Cakes

Once the cakes have been allowed to cool completely, level them by taking the tops/domes off of each cake so that they are flat.Then, using a large knife, cut each cake in half horizontally.Simple syrup should be brushed onto the top of each cake.Place a thin layer of frosting on the top of each cake, followed by the appropriate amount of fruit sprinkled on top.Lightly push the fruit into the icing to ensure that it is evenly distributed.Repeat the process for each additional layer of cake, frosting, and fruit additions, until all four layers are completed.

Frost the whole outside of the cake and garnish the top with fruits or other decorations of your choice.
