    • Sugar, water, and egg whites: 12 ounces granulated sugar
    • 3 ounces water
    • 3/4 cup egg whites
    • 18 ounces unsalted butter, cut into 1-inch cubes and left at room temperature

After all of the sugar has been added, increase the speed to the highest possible setting. To finish, continue whipping until the mixing bowl is slightly warmer to the touch than room temperature.
    • Reduce the mixer’s speed to medium and gently add the butter, a couple cubes at a time, until the mixture is smooth.
    • Continue to beat at a medium speed until all of the butter has been incorporated into the mixture.
    • Whip the buttercream until it is smooth and creamy, about 2 minutes.
    • The butter may melt if you add it to the meringue while it is still too hot, and the buttercream may not emulsify properly. If this occurs, place the mixing bowl in the freezer for a couple of minutes to allow the mixture to cool down more quickly. Once the meringue had cooled, it was time to start beating again
