    How to make Battenberg Cake

    To begin, line an 8-inch square baking pan with aluminum foil and baking paper. The foil contributes to the overall strength of the center part.

    Combine the butter and sugar in a large mixing bowl, then add the eggs and vanilla extract and combine thoroughly.

    • Preheat the oven to 150C fan/165C/325F/Gas Mark 3 and set aside.
    • Form an 8 with your fingers ″a square baking pan lined with a layer of aluminum foil and a sheet of baking paper Fold a crease about three times ″In the center of the paper, place a tall object to prevent the two sponges from merging together
    • Using an electric mixer or a stand mixer, cream the butter and caster sugar together in a large mixing basin until light and fluffy, about 3 minutes total. You may also mix by hand, but the best results will be obtained using an electric mixer.
    • Using an electric mixer, beat in the eggs and vanilla extract until well mixed
    • repeat with the remaining ingredients.
    • Whisk in the self-rising flour with a hand whisk until there is no more visible flour
    • repeat until the mixture is completely smooth.
    • Make a halved batch of batter and carefully whisk in pink food coloring to one half of the batter until a light pink tone is reached
    • Using one half of the tin, pour the pink batter in, and the other half with the uncolored batter
    • Preheat the oven to 350°F and bake for 35-40 minutes, or until a skewer inserted in the center comes out clean. It should be allowed to cool completely, either in the tin or removed and placed on a cooling rack.
    • To cut the cake into long rectangular pieces, trim the golden crusts from both colors of cake. For precision, a ruler should be used.
    • After heating up the apricot jam in the microwave for 30 seconds, strain the mixture through a fine sieve
    • Roll out the marzipan onto your work area once it has been dusted with icing sugar. Plan on a rectangle of approximately 12″ by 8″ – it must be long enough to wrap around the cake
    • Spread an even layer of apricot jam over the marzipan, and then arrange the cakes in a checkerboard pattern in the center of the marzipan, brushing apricot jam between each cake.
    • Wrap the cake with the marzipan, allowing the marzipan to overhang slightly, and then cut away the excess.
    • To finish trimming the marzipan, turn the cake over so the seal is on its bottom

    • After brushing away any excess icing sugar using a cake decorating brush, the cake is ready to be served.
    • Serve immediately, and if there are any leftovers, store them in an airtight jar in a cold location for up to 3 days. After a day or so, the marzipan will get sticky

Prepare a 20cm square baking dish by preheating the oven to 180°C/160°F fan/gas 4 and lining the base and edges with baking paper (the easiest way is to cross 2 x 20cm-long strips over the base). To create the almond sponge, combine the butter, sugar, flour, ground almonds, baking powder, eggs, vanilla, and almond extract in a large mixing bowl until well combined. Pour the batter into the prepared pan and bake for 20 minutes. Using an electric whisk, whisk the mixture until it is smooth and well-combined. Scrape the mixture into the tin, spreading it to the corners, and bake for 25-30 minutes, or until a skewer inserted into the center comes out clean. Allow it cool in the pan for 10 minutes before transferring to a wire rack to cool completely while you prepare the second sponge.
    2. Prepare the pink sponge by lining the tin in the same manner as described above. Combine all of the components in the same manner as described before, but do not include the almond extract. Add a few drops of pink food coloring and mix well. After that, scrape everything into the baking pan and bake as previously. Cool.
    3. To assemble, cook the jam in a small saucepan until it is runny, then strain through a sieve. Trim two of the almond sponge’s opposing edges very slightly, then trim a third edge thoroughly. Simply measure the sponge’s overall height, and then using a ruler, cut four slices each the same width as the sponge’s overall height starting at the well-trimmed edge. Remove any remaining sponge and discard it or chew on it. Repeat the process with the pink cake.
    4. Trim 2 x almond slices and 2 x pink slices to the same length so that they are all the same size. Using a lightly powdered surface lightly sprinkled with icing sugar, roll out one marzipan block to a width of little over 20cm, then continue rolling lengthways until the marzipan is around 0.5cm thick. Paint one end of the marzipan with apricot jam, then place a pink and an almond slice next to each other at one end of the marzipan, brushing jam in between the sponges to hold them in place, and leaving 4cm of clear marzipan at the end. Fill the sponges with extra jam, then sandwich the remaining two pieces on top, alternating colors to create a checkerboard appearance. Trim the marzipan so that it is the same length as the cakes.
    5. Take care not to break the marzipan as you carefully raise it up and spread it over the cake with your hands. Before sticking it to the first side, leave a little marzipan fold along the bottom border. Trim the opposing side to the same size as the fold, then crimp the edges with your fingers and thumb (or, more simply, press with prongs of fork). You may use the prongs of a fork to mark the 10 slices if you want to.
    6. Place second Battenberg together in an airtight box or well wrapped in cling film and store for up to 3 days. It is possible to keep food frozen for up to a month.

    It’s a good cake, but it doesn’t taste anything like Mr. KiplingBattenburg’s cake since the cake lacks the almond flavor.

    I’m sorry, but the artificial marzipan covering on this cake was very awful in my opinion.This eater’s taste receptors were not tickled by the sponge, despite the fact that it was light in texture.The apricot jam that was supposed to be used to attach the marzipan to the sponge was noticeably lacking.When I cut five pieces, the sponge and marzipan each opted to go their own independent paths.

    Please accept my apologies for providing a negative review; this is something I seldom do.The marzipan was stiff and had minimal flavor, with no discernible almond flavor to be found at all in it.Between the cake and the marzipan, there was an expected layer of jam, but it was hardly detectable and completely devoid of flavor.The sole flavor was that of sugar; there was nothing else about it.Two stars because it was new, but to be honest, that’s being nice.
