Preparation

  1. Prepare two 9-inch springform pans with butter. Line the baking sheet with parchment paper and butter it again. 275 degrees Fahrenheit
  2. coarsely slice the dates, prunes, and pineapple
  3. 275 degrees Fahrenheit In a large mixing basin, combine the fruit with the cherries and orange peel. Combine the flour, baking powder, and salt in a large mixing bowl. This should be sifted over the fruit. Toss with your hands to coat
  4. in a medium-sized mixing basin, whisk eggs until foamy. Add in the sugar and almond essence and mix well. Pour the liquid over the fruit. Mix well with a wooden spoon. Fold in the pistachios, almonds, pecans, and walnuts, mixing until they are well covered with the batter.
  5. Using two pans, divide the mixture. Using your hands, push the mixture firmly and evenly into the baking pan. Bake for approximately 1 1/2 hours, or until the tops of the cakes seem dry but not browned. When the cakes are finished baking, move them to cooling racks. Allow for 5 minutes of resting time before releasing the springform and peeling away the parchment paper on the sides. While the cakes are still warm, softly brush with corn syrup. Allow to cool for 30 minutes before spooning Armagnac on top. When the cakes are entirely cold, remove them from the pan base and take away the parchment paper from the bottom. If you aren’t going to consume the fruitcakes straight soon, cover them in plastic wrap. They will keep in the refrigerator for up to two months. More Armagnac should be sprinkled on the dish one hour before serving if it is being stored.
