- Old Bay seasoning: This seasoning bland was established in Maryland and will play a prominent role in many of the dishes that will be released in celebration of Maryland becoming the 7th state to join the United States of America.
- Worcestershire sauce: This ingredient enhances the taste and umami quality of the dish.
- The addition of fresh lemon juice brightens the dish and helps to keep the crab cakes feeling fresh. As a garnish, I prefer to serve them with extra lemon wedges on the side, so that the crab cakes may get a little more juice from the lemon wedges.
- A beaten egg is used to help keep the crab cakes together.
- An additional fresh flavor to them is provided by a little amount of finely chopped parsley. I do not advocate substituting dried parsley with fresh parsley.
- Salt and pepper are essential elements in preventing meals from feeling dull or monotonous.
How to Make Crab Cakes
- Preparation work: Preheat the oven to 450 degrees Fahrenheit. Lay parchment paper or a Silpat mat on a baking sheet and set aside.
- Combine the taste enhancers and binding agents in the following proportions: In a large mixing bowl, combine the green onions, mayonnaise, egg, parsley, Old Bay seasoning, dijon mustard, Worcestershire sauce, lemon juice, salt, and pepper. Using a fork, combine all of the ingredients.
Combine the crabmeat and breadcrumbs in a gentle mixing motion.Gently toss to evenly wet the breadcrumbs and meat.Make an effort not to break up the crab flesh any more than is absolutely necessary.When you’re through, the combination should resemble tuna fish salad, which you may use to build a sandwich if you believe it still needs extra mayo.It will just be moist enough to keep together, but not excessively so.
Using a 12-cup measuring cup coated with nonstick spray, scoop out 6 equal-sized mounds of the crab mixture and shape them into crab cakes (see note). To form mounds or fat, spherical discs about 2 12 inches across, gently mould them with your hands. Place the mounds of dough on the baking sheet that has been prepared.
- Put them in the preheated oven for 12-14 minutes, or until they are golden brown. Ideally, they should be going golden brown on top as well as around the edges.
- Garnish and serve as follows: Hot crab cakes should be served with your preferred dipping sauce and lemon wedges for squeezing over the top.
Tips for the Best Crab Cakes
- Don’t cram your crab cakes too closely together: As soon as you scoop them out, they should just hold together without breaking. You don’t want to press them like a snowball because they’ll turn out like a hockey puck instead of having a flaky, delicate texture

Place the flour on a dish and lightly dredge each crab cake in the flour until it is coated. Heat the oil in a pan over medium-high heat until shimmering, then cook each crab cake for 4 to 5 minutes on each side in the hot oil before transferring to a wire rack to cool completely.
- Keep any leftovers in an airtight jar in the fridge for up to 5 days, or freeze them to use in a few months. Cook for 10-12 minutes at 350 degrees Fahrenheit, either in the microwave or in the oven until heated.
- Freezing Instructions: You can freeze crab cakes that have not been cooked. Simply prepare and form the crab cakes, then place them in the freezer for 2-3 hours. Once frozen, cover them tightly in two layers of plastic wrap to prevent them from thawing.
