Hello and welcome to the first post in my new ″Mastering″ series of blog posts. The goal of this series is to take on classic baking techniques and recipes while also gaining a thorough grasp of the subject matter in the process. As a result, I’m immersing myself in the subject to the point that I feel confident in my ability to teach it to someone else, namely you!You are then given the baton and challenged to perfect the skill and recipe on your own initiative. The first book in the series is Mastering the Perfect Pound Cake, which is available now! While baking a classic pound cake may appear to be a straightforward task, there is actually quite a bit of intricacy involved in creating a genuinely flawless one.

    1. One of the things I appreciate about pound cake is how straightforward and straightforward it is.
    2. A nice traditional pound cake lends itself to being the ideal companion to a bowl of freshly picked fruit.
    3. However, plain pound cake may also serve as a blank canvas on which you can paint any flavor you like!

    Mastering the Perfect Pound Cake

    • Originally, pound cake required 1 pound of sugar, 1 pound of butter, 1 pound of eggs, and 1 pound of flour, all of which were measured in pounds.
    • This is where the term ″pound cake″ originated.
    • However, it would make sense to suppose that it is partly because of the potential weight gain associated with consuming it!

The 1:1:1:1 ratio results in a cake that is extremely dense, rich, and slightly dry, which is not to the taste of most modern palates. It was meant to be a long-lasting cake that would be able to withstand being left out for several days without going bad.In order to match our present expectations of a cake, many modern pound cakes differ significantly from the traditional pound cake recipe. There are a plethora of recipes available online that look nothing like the original.I, on the other hand, wish to stay faithful to the traditional and master the actual pound cake recipe. You know what they say about knowing the rules so that you may break them later on, right?

    1. The objective is to make a cake that accentuates the richness and depth of the original form while remaining moist, tasty, and not too heavy on the stomach.

    Use High Quality Ingredients

    • To be absolutely honest with you, I am not the type of baker who feels that using name brand ingredients would make a significant difference in the final product as compared to utilizing generic ingredients.
    • In contrast, while working with a recipe that calls for such few ingredients as pound cake, each component becomes substantially more crucial.
    • Consider the difference between a generic store brand sugar and a name brand sugar, such as C&H or Domino, and you may see that the sugar crystals are significantly smaller in size.

The capacity of the sugar to retain a web of air with the butter (which we’ll cover in further depth later on) is totally responsible for the rise of this cake, commonly known as leavening.Consequently, a smaller sugar grain is important since it has the potential to cause the web to break and the cake to fall.Did you know that if a box of sugar does not specifically state ″cane sugar,″ it is likely that it contains beet sugar instead? The majority of store brand sugars are made from beet sugar. While people in the sugar business maintain that beet sugar and cane sugar are chemically equivalent, numerous baking experiments have shown that cane sugar produces far better baked products! It’s possible that you’ve noticed that this cake asks for cake flour rather than all-purpose flour.

    1. When compared to all-purpose flour, cake flour has a reduced protein concentration, which helps to keep the cake soft.
    2. It is, without a doubt, the best flour to use in this delicate cake.
    3. However, if you are unable to get cake flour, all-purpose flour combined with corn starch can be used in place of cake flour (the amounts listed in the notes section of the recipe).
    4. In order to create this alternative, sift the flour and cornstarch three times before adding them to the batter and mixing thoroughly.
    5. I realize this appears to be extreme.
    • However, this is a significant factor in making the substitute more successful and exact in its replication of cake flour.

    Check for Proper Oven Temperature

    • Having an oven that does not function correctly is fairly frequent.
    • Many ovens heat incorrectly, either too low or too hot in comparison to the temperature that is set.
    • This can vary widely from oven to oven, which is why I strongly advise making the relatively minor investment in purchasing an oven thermometer to verify the temperature of your personal oven before using it.

Cooking pound cake, in particular, takes place at a relatively low temperature. An overheated oven may cause the cake to set too soon and will prevent the cake from rising properly.Because the cake will not set quickly enough if the oven is too cool, a cake that is cooked too slowly may topple.

Prep Before Starting- Mise en Place

    • Every baking recipe relies on the principle of mise en place, which translates as ″everything in its proper position.″ It is particularly crucial while making pound cake since you must pay close attention to the temperature of the components.
    • Before you begin, make sure you have thoroughly read the recipe and have all of your ingredients measured out, as well as any additional equipment you may want.
    • Whenever possible, I try to arrange my ingredients in the order in which they will be used in the recipe.

This accomplishes two objectives: Having all of your components on hand before you begin the recipe prevents you from getting halfway through and realizing you’re short on flour (ahem, been there!), and it also ensures that you don’t forget to incorporate any ingredients into your batter during the process.Tip for baking: If a recipe is properly written, the ingredients will be stated in the order in which they will be required.

Make Sure Your Ingredients are at the Proper Temperature

    • A basic traditional pound cake is made without the use of any chemical leavening agents (baking powder or baking soda).
    • The rise of this cake is entirely dependent on the amount of air that is introduced into the batter during the creaming process.
    • Physical leavening is the term used to describe this procedure.

It is critical that the butter and eggs are at room temperature (about 70 degrees F) before you begin working on this recipe.During the process of creaming (beating the butter and sugar together), air is trapped in a web of sugar and fat, which results in the physical leavening of the bread dough.Using too-cold ingredients can result in a crumbly structure that will cause the batter to crack and shatter.Bake-At-Home Tip: Many kitchens are much warmer than 70 degrees Fahrenheit. When you are preparing a dish that asks for softened butter, be sure that your butter is soft but still solid before you begin. If your butter is too heated and beginning to melt, it might have a significant impact on the outcome of the dish.

    Use the Proper Creaming Technique

    • The ability to correctly cream the butter and sugar together is vitally necessary for creating the perfect pound cake.
    • The procedure is not difficult at all; it only takes a certain amount of patience.
    • Start with your room temperature butter and beat it for about 2 minutes on medium speed in your stand mixer until it is fluffy.

While the mixer is still running, slowly trickle in the sugar.Finished!Continue to beat for an additional 4-5 minutes, or until the mixture is very light in color and fluffy in texture. The goal of this procedure is to introduce air into the batter in order to leaven the cake. You don’t want to hasten the process. It is these air bubbles expanding in the oven that will give the cake its rise.

    1. The cake will also get its rise from the steam generated by the water evaporating off the cake as it cooks.

Add the Eggs Very Slowly – Creating an Emulsion

    • It is now time to add the eggs to the butter and sugar mixture that you have created by forcing air into it.
    • It is also vital to pay attention to how the eggs are mixed in.
    • This recipe includes both whole eggs and egg yolks instead of only whole eggs as in the original pound cake recipe.

An emulsion is formed as a result of the addition of the additional egg yolks, which helps to stabilize the trapped air.If extra whole eggs were used instead of simply egg yolks, more air would be pounded into the cake, resulting in a product that is overly airy compared to what a pound cake should be, as is the case with this recipe. To get this emulsion, the eggs must be introduced very gently, one egg at a time.Maintaining a medium speed, I add the eggs one tablespoon at a time, mixing well between each.Overall, it should take no more than 5 minutes to incorporate the eggs into the mixture. If you hurry during this procedure, the emulsion will split and curdle, and you will end up with a dense cake on your hands as a result.

    1. Unmixable liquids are mixed together to form an emulsion, which is the most common type of emulsion.
    2. When butter is made, it is already an emulsion due to the fact that water is suspended in the fat at the time of creation.
    3. Adding eggs to the fat/sugar combination results in the formation of another emulsion due to the high water content of eggs.

    Do Not Over-Mix Your Batter

    • I understand what you’re going through.
    • There are several recipes that include the admonition ″do not over-mix,″ but what does it really mean?
    • Particularly critical when working with delicate baked products, or when baking foods that are being leavened with air, is the following instruction: Pound cake can be classified as any of these two types.

Once the flour has been added to the batter, carefully fold it in until it is well incorporated.Stop mixing as soon as it has been fully absorbed throughout.Gluten production occurs as soon as the flour is moistened. When the batter is worked, the gluten structure will get more developed as a result. You want to reduce this to a minimum in order to keep your cake as delicate as possible. You also don’t want to deflate the air that you worked so hard to incorporate into your butter by overworking it!

    Bake to Proper Doneness

    • Many baking recipes specify that the cake is done when a tester pushed into the center of the cake comes out clean, which is not always the case.
    • This instruction, on the other hand, results in a cake that is overbaked.
    • When the tester comes out with a moist crumb, it’s time to take the cake out of the oven and let it cool.

The residual heat in the cake will allow it to continue to cook for a short period of time after it has been removed from the oven.If you wait until the cake is fully dry in the centre before pulling it out of the oven, you will end up with a very dry pound cake.

    Allow to Cool Properly

    • When your cake is finished baking and you have removed it from the oven, carefully take it from the pan and lay it on a baking rack to cool completely before cutting into it.
    • It is not recommended that the cake be left in the loaf pan to cool since the heat will be retained in the pan and will cause the cake to steam around the edges, resulting in an unappealing texture.
    • Moving the cooked cake from the pan to the cooling rack as soon as possible will also guarantee that your cake does not continue to cook for an excessive amount of time, resulting in a cake that is overcooked.

Tip for baking: Line your loaf pan with parchment paper so that you can simply remove the cake from the pan after it has finished baking.Watch the video to learn how to line a loaf pan quickly and effortlessly! That’s all there is to it!This pound cake is gorgeous, easy, and really delicious!Do you believe you’ll be able to handle it?I KNOW you’ll be able to do it!

    Ingredients

    • A half pound (2 sticks, 8 ounces, 226 grams) unsalted butter (*see notes for a substitute)
    • 12 / 4 cup granulated cane sugar (about 8.75 oz, 248 gr), C&H or Domino brand suggested
    • 3 big eggs, room temperature
    • 3 large egg yolks, room temperature
    • 3 large eggs, room temperature
    • 1 3/4 cup (7 oz, 198 gr) cake flour (*see note for substitute)
    • 1/2 TBSP pure vanilla extract
    • 1/2 TBSP (o.25 fl oz, 7 mL) water
    • 1/2 tsp kosher salt
    • 1 3/4 cup (7 oz, 198 gr) pure vanilla extract

    Instructions

    1. Preheat the oven to 350 degrees Fahrenheit (175 degrees C). Use pan spray or butter to grease an 8 by 4 inch (20 by 10 cm) loaf pan, then line it with parchment paper to prevent the bread from sticking. Remove from consideration
    2. The room temperature butter should be creamed on medium speed for about 2 minutes in the bowl of a stand mixer fitted with the paddle attachment
    3. while the mixer is still running, gently stream in the sugar. Continue to beat for a total of 5 extra minutes. Halfway through, turn off the mixer and scrape down the sides of the mixing bowl. Upon completion of the mixing process, the mixture should be a very pale yellow, nearly white, and light and fluffy.
    4. While the butter and sugar are creaming together, whisk together the whole eggs, egg yolks, vanilla extract, and water in a small mixing dish until well combined. Lightly mix the ingredients together until they are well blended.
    5. While the mixer is still running on medium speed, add the eggs one at a time, mixing well after each addition. Slowly add the other ingredients, roughly 1 tablespoon at a time. Ideally, the entire procedure should take no more than 5 minutes. Not rushing it will lead your emulsion to shatter, which is something you don’t want.
    6. Stop the mixer and fold in the flour with a rubber spatula after you’ve beaten in the salt. Stop mixing as soon as the flour has been fully integrated. Using too much force during mixing can cause the glutens to form excessively, as well as the air that was pounded into the butter and sugar to begin to deflate.
    7. Pour the mixture into the loaf pan that has been prepared and bake at 350 degrees F (175 degrees C) for 50 to 60 minutes, or until a wooden skewer inserted into the center of the cake comes out with wet crumbs. The cake should be removed immediately from the pan and placed on a cooling rack to cool entirely

What do you think about sauces? It is only in questions of personal choice that we should consider the ratios of sauces unless we are talking about emulsified sauces such as the mayonnaise family, the hollandaise family, or reduction butter sauces, in which the substrate may only retain a certain amount of fat (butter or oil).A cook who understands what he or she is doing may really obtain a surprising quantity of butter to remain in suspension while making reduction sauces.

In the United States, pound cake is a type of cake that is usually produced using one pound of each of the following four ingredients: cake flour, butter, eggs, and sugar. Pound cakes are often baked in a loaf pan or a Bundt shape, depending on the recipe. The tops of the cakes are occasionally sprinkled with powdered sugar and gently glaze, or they may be covered in frosting.

    History

    • Traditionally, pound cake has been attributed to northern European origins, and it has been around since the early 1700s.
    • A recipe for pound cake may be found in the first ever published cookbook in the United States, American Cookery, which was published in 1796.
    • In the course of time, the ingredients for pound cake have evolved.

A pound of flour was mixed with ten eggs, which were beaten as softly as possible by Eliza Leslie, who published the 1851 version of Direction for Cookery. To this mixture was added the juice of two lemons or three large oranges, depending on how big they were. The flavor and texture of the cake were altered as a result of this.Saveur magazine published a piece by James Villas in which he stated that cake flour could not be used in place of all-purpose flour because it lacked the power to hold the heavy batter together.Early versions of this cake substituted some of the flour with cornmeal prepared from dried corn (maize), which was known as Indian meal at the time of its creation. When people in Ireland were seeking for alternatives to costly wheat flour in 1846, Eliza Leslie wrote a recipe for Indian pound cake in 1828, which was subsequently included in The Indian Meal Book, which was published in London in 1846 and featured a recipe for Indian pound cake.

    Variations

    • It is possible to make several varieties of the classic pound cake with different styles depending on the country or location you are in.
    • It is possible to modify the original recipe by using flavoring agents (such as vanilla or almond extract) or dried fruit (such as currants or dried cranberries), as well as by altering the original recipe itself in order to vary the features of the pound cake.
    • Baked goods may contain leavening agents like baking soda or baking powder, which result in a less dense loaf cake when baked.

It is often necessary to swap part or all of the butter with a cooking oil (usually a vegetable oil), with the goal of producing a moister cake.Sour cream pound cake is a common modification in the United States that includes substituting sour cream for some of the butter. This is meant to produce a moister cake with a tangy flavor while also increasing the moisture content of the cake.Although some of these differences may have a significant impact on the texture and flavor of the pound cake, the term ″pound cake″ is still often used. Some of the variants are discussed in further detail below.

    French style

    • The pound cake is a traditional dessert in France.
    • The term ″quatre-quarts″ refers to four quarters, which is how the pound cake is referred to.
    • Each of the four quarters has an equal distribution of weights.

Tradition dictates that the popular cake of the French area of Brittany, as its name indicates, be made with the same number of the four components, but without the addition of any fruit of any type. However, in the Caribbean and other regions of the world where French is spoken, rum is usually added to the ingredients for Christmas Eve, as well as mashed bananas for extra moisture. In order to lighten the batter, the French may have used whipped egg whites instead of whole eggs in some instances.Other variations include flavoring with chocolate or lemon juice, among others.

    Mexican style

    • Pound cake is a popular dessert in France.
    • The term ″quatre-quarts″ refers to four quarters, which is how the pound cake was named.
    • Each of the four halves has an equal amount of weight.

Tradition dictates that the popular cake of the French area of Brittany, as its name indicates, be made with the same number of the four components, but without the addition of any fruit of any sort.On the other hand, the Caribbean and French-speaking regions of the world traditionally include rum in their Christmas Eve recipes or even mashed bananas to provide moisture to the recipe.Occasionally, to lighten the batter, the French may have used whipped egg whites instead of whole eggs.Additions such as chocolate or lemon juice to the recipe are also possible.

    Colombian and Venezuelan style

It is the Colombian and Venezuelan equivalent of pound cake; the phrase ponqué is itself a Spanish word that is a phonetic approximation of the English word pound cake. Essentially, the ponqué is a wine-soaked cake with a cream or sugar covering, and it is extremely popular at birthday parties, wedding receptions, and other social gatherings in France.

    German style

    • Osterlamm is a traditional German dish that is frequently composed with Eischwerteig with fat.
    • German Rührkuchen (mixed-batter cake) refers to any type of cake in which the batter is produced by mixing together flour, butter, eggs, sugar and sometimes milk to form a smooth batter.
    • Although the premise of equal proportions for the first four components is not widely accepted, this kind of cake batter is the foundation of many famous cake recipes, including chocolate cake and carrot cake.

Cakes prepared in the classic German style can be made with the addition of just a few ingredients such as almonds, chocolate, dried fruits, and alcohol, as well as the use of various tin forms and sizes. As an example, this dough, or a minor variation of it, is frequently used to make cakes baked in loaf tins (e.g., Orangenkuchen – orange cake; Nusskuchen – hazelnut cake), marbled cakes baked in bundt tins (Marmorkuchen), and other flavor combinations baked in shaped tins (e.g., Falscher Rehrücken – fake venison saddle with bitter chocolate and almonds; Osterla When it comes to professional baking terminology, these recipes are referred to as Eischwerteig with Fett (eivolved dough with fat) (″egg-heavy batter with shortening″).According to a German chefs’ vocational school book from the 1980s, the basic recipe for such a cake cooked in a 26 cm (10″) spring form tin includes four eggs, three egg-weights of butter, four egg-weights of sugar, three egg weights of flour, and one egg-weight of starch (four egg weights total).Compared to the pound of each in the United Kingdom and the French four equal quarters, it is comparable.

    Weight Vs.Volume Measurement – Joyofbaking.com *Demo Video*

As you know, baking is about precision and accuracy and that’s why I’ve always been an advocate of weight measurements. As you’ve probably noticed, all the recipes on joyofbaking.com give both volume and weight measurements. For example if a recipe calls for all purpose flour, it is written ″1 cup (130 grams) all purpose flour″. The reason I write recipes in this way is that depending on where you live you may use volume (cup) measurements or you may weigh (grams) your ingredients. I believe the reason home bakers in the United States haven’t adopted weight measurements is because digital scales were once hard to find and if you could find one, they were expensive. This is not the case any longer. Today you can find digital scales on line or in most stores that sell kitchen equipment. And what is amazing is that some brands of digital scales sell for less than twenty dollars. That’s about the same price as a good set of stainless steel measuring cups. Professionals seldom measure their ingredients by volume (cups). They usually prefer measuring by weight, and there are many reasons for this. Baking is not like cooking where you can add a little extra of this ingredient or leave out that ingredient. Baking is all about precision and accuracy so that you can achieve consistent results. And there are so many variables when baking – your ingredients, how you measure your ingredients, the mixing technique, y
