    Filling: Sprinkle 14 cup at a time of the powdered sugar-flour mixture over the egg white mixture, mixing in with a rubber spatula just until the sugar-flour mixture vanishes.

    Step 3:

    Pour the batter into a 10-inch angel food (tube) cake pan that has not been oiled. To break up air pockets in the batter, use a metal spatula or knife to carefully cut through it.

    Step 4:

    Bake for 30 to 35 minutes, or until cracks feel dry to the touch and the top springs back when touched. Turn the pan upside down onto a heatproof container or funnel as soon as possible. Allow for 2 hours or until the cake is totally cold before serving.

    Step 5:

    Remove the cake from the pan by loosening the side with a knife or a long metal spatula. Pour the chocolate glaze over the top of the cake and serve immediately.
