How to Make a Turtle Cheesecake

    1. Making the caramel sauce is the first step, and it’s undoubtedly the greatest part of this Turtle Cheesecake.
    2. A few modifications to my Homemade Caramel Sauce result in a sauce that’s a touch thicker than my original.
    3. The sugar is the initial component in the caramel, and it is melted down before it can be used.
    4. After the butter has been melted, the heavy whipping cream is added.
    1. It creates the most incredible caramel sauce, with a smooth, buttery flavor that is impossible to resist.
    2. Because that buttery flavor is very delicious, I used my favorite Challenge Butter in this recipe.
    3. This has been said before, but I’ll say it again: Challenge Butter is a superb, high-quality butter that is ideal for use in pastry and baking.
    4. Their butter is created from fresh milk from family-owned dairies and is ready for consumption in just two days after it is harvested.
    5. It does not include any additional hormones, fake flavors, or fillers, which is something I like.
    6. The only place I’ve seen it before is Walmart, but it’s now now available at Kroger.

Additionally, if you live near a Harris Teeter, you can generally find it there as well.If you aren’t sure, look for a store that carries it in your area to confirm. It’s really wonderful stuff!Once your caramel sauce is ready, it’s time to start working on the crust.Bake for 10 minutes once you’ve combined all of the ingredients.

    1. The filling is the next step.
    2. Starting with the crust, you’ll want to add part of the caramel sauce, and then you’ll make the chocolate ganache.
    3. Place an even layer of chocolate ganache on top of the caramel to finish it off.
    4. The cream cheese mixture is the next step in the preparation of the cheesecake filling.
    • My go-to cream cheese is the Challenge Cream Cheese, which is as close to handmade as you can get without using any artificial ingredients or adding any hormones.
    • It’s really creamy, and it’s the perfect basis for the cheesecake’s filling.
    • To make a silky-smooth filling, it’s blended with brown sugar, vanilla, and the rest of the regular components.
    • The cheesecake should be baked in a water bath and then refrigerated until hard.

How do you bake a cheesecake in a water bath?

    1. Despite the fact that water baths appear to be difficult, they are actually rather simple and well worth the effort.
    2. A guide on how I set up my water baths is available on my website, and it is pretty useful.
    3. I not only use aluminum foil, but I also use a crock pot liner bag to guarantee that water does not seep into the cheesecake while it is being baked.
    4. It’s a piece of cake to use!
    1. With regards to the advantages of using a water bath, it will prevent your cheesecake from browning excessively, from sinking, and from cracking.
    2. This is unquestionably the way to go!
    3. Once the cheesecake has been allowed to cool completely, it is topped with some of the remaining caramel sauce, additional chocolate ganache, and pecans.
    4. Everything about a dish dripping in caramel and chocolate is just stunning!
    5. There’s nothing quite as delicious either!
    6. The finished cheesecake is smooth and creamy, and it is the ideal mix of the flavors of turtle candy and cheesecake.

    • 1 cup (144g) light brown sugar
    • 3 tbsp (24g) all-purpose flour
    • 1 cup (230g) sour cream
    • 1 1/2 teaspoons vanilla extract
    • 3 big eggs
    • 4 oz (2/3 cup | 116g) semi-sweet chocolate chips
    • 6 tbsp (90ml) heavy whipping cream
    • 24 oz (678g) Challenge cream cheese, at room temperature

    Chocolate Drizzle

    • 1 cup (58g) semi-sweet chocolate chips
    • 3 tablespoons (45ml) heavy whipping cream
    • 2 oz (58g) semi-sweet chocolate chips

    Instructions

    1. 1.
    2. To prepare the caramel sauce, first arrange the sugar in a big pot so that it is evenly distributed.
    3. 2.
    4. Cook over medium-high heat, stirring constantly, until the sugar is completely melted.
    1. The sugar will first clump together, but it will gradually melt entirely.
    2. This should take no more than ten minutes.
    3. Stop whisking once the sugar has melted and let the mixture to continue to heat until the sugar has turned a little darker caramel color.
    4. You could detect a nutty fragrance coming from the room.
    5. Because the color shift will occur rapidly, don’t leave it alone for too long or allow it to become too dark, or it will burn.
    6. Remove the caramel from the heat and set it aside.

4.Whisk in the butter until it is well incorporated.Initially, the mixture will bubble vigorously; nevertheless, continue whisking until all of the butter has melted and been fully incorporated.5.Slowly pour in the heavy cream, whisking constantly, until the caramel is well integrated.

    1. I’ve found that adding a little at a time until the caramel begins to thin down might be helpful; then you can add the remaining amount.
    2. Whisk until the ingredients are completely combined and smooth.
    3. 6.
    4. Set aside approximately 1 cup of caramel sauce for sprinkling over top.
    • Remove the leftover caramel from the heat and put it aside with the flour and pecan chips.
    • 7.
    • Preheat the oven to 325°F (163°C) before beginning to create the cheesecake crust.
    • Prepare a 9-inch (23-cm) springform pan by lining the bottom with parchment paper and lightly greasing the edges.
    • 8.
    • In a small mixing basin, combine the crust ingredients.
    • In the bottom and up the sides of the springform pan, press the mixture firmly together.

9.Bake for 10 minutes, then remove from oven and leave aside to cool.10.Wrap the outside of the pan with aluminum foil to ensure that water from the water bath does not go inside (see how I prepare my pan for a water bath).Remove the pan from the oven and set it aside.11.

    1. Reduce the oven temperature to 300°F (148°C) and bake for 30 minutes.
    2. 12.
    3. Pour the caramel sauce into the bottom of the pie crust, along with the pecans and flour, and distribute to form an equal layer.

13.Place the chocolate chips in a small bowl and set aside while you prepare the cheesecake filling.14.Heat the heavy whipping cream just until it begins to boil, then pour it over the chocolate chips and stir until the chocolate chips are completely melted.

    • Allow it to settle for 2 to 3 minutes before whisking it until it is smooth.
    • 15.
    • Spread the chocolate evenly over the caramel sauce in the crust, being sure to cover all of the caramel sauce.
    1. Beat the cream cheese, brown sugar and flour in a large mixing bowl on low speed until completely blended and smooth (about 3 minutes).
    2. Ensure that the mixer is set at a low speed to decrease the quantity of air that is introduced into the batter, which might produce cracks.
    3. Scrape the edges of the dish to remove any stuck-on food.
    4. Add the sour cream and vanilla essence and mix on low speed until everything is thoroughly mixed together.
    1. 18.
    2. Add the eggs one at a time, mixing carefully after each addition to ensure that they are fully incorporated.
    3. Scrape down the edges of the basin as often as necessary to ensure that everything is thoroughly blended.
    4. 19.

Pour the cheesecake batter into the crust, over the chocolate, and bake for another 30 minutes.20.Place the springform pan inside a bigger pan to protect it from damage.Fill the outer pan halfway with heated water, enough to come halfway up the sides of the springform pan, and set aside.

    • Amount of water in the springform pan should not be more than an inch or two over the top edge of the aluminum foil.
    • 21.
    • Bake for 1 hour 35 minutes at 350 degrees.
    • The center should be set, however it should be jiggly at this point.
    • 22.
    • Turn off the oven and keep the door closed for 30 minutes to allow the heat to escape.

The cheesecake will continue to cook as it cools, but it will cool more slowly than usual. After 30 minutes, open the oven door to enable the cheesecake to cool more slowly while it continues to bake. This procedure aids in the prevention of cracking.24.Remove the cheesecake from the oven and carefully remove it from the water bath and the plastic wrap.Spread an equal layer of caramel sauce on top of the cheesecake using about 1/2 cup of the leftover caramel sauce.

    • If the caramel sauce has become too thick to pour, heat it for about 10 seconds until it is pourable again.
    • 26.
    • Refrigerate cheesecake for 5-6 hours, or until it is fully cool and stiff.
    1. Remove the cheesecake from the springform pan and set it on a serving dish once it has cooled and firmed up a bit.
    2. 27.
    3. In a small mixing bowl, combine the chocolate chips for the drizzle.
    1. Heat the heavy whipping cream until it just begins to boil, and then pour it over the chocolate chunks to combine.
    2. Allow it to settle for 3-4 minutes before whisking it until it is completely smooth.
    3. Add a few more pecan pieces on top and drizzle the leftover caramel and chocolate sauces over the cheesecake to finish it off.

Keep the cheesecake refrigerated until you’re ready to serve it.

How to make a perfect cheesecake

Two important recommendations are included in every single cheesecake recipe that I offer on my website. When creating cheesecake, there are two very critical steps that must be completed. 1. Do not be intimidated by the water bath. 2.Don’t speed the cooling process; it takes time. Continue reading for more information on each suggestion!

    Water bath for cheesecake

Putting your turtle cheesecake in a water bath may seem strange at first, but it is the key to achieving a moist, properly cooked cheesecake. It’s not at all frightening. The fundamentals of using a water bath are as follows: Placing a springform pan inside a big cake or roasting pan, then filling the roasting pan with approximately 1 inch of water and baking in the oven will yield the best results.

How to prevent your cheesecake water bath from leaking

This is the most effective method of preventing your cheesecake water bath from leaking and resulting in the destruction of your cheesecake.Make an oven safe turkey bag or slow cooker liner bag and place the springform pan inside.Roll the top of the bag down so that it does not cover the cheesecake. For large amounts of surplus bag space, twist one side tightly and tie it so that the bag is tightly wrapped around the pan; otherwise, leave it open.Pour enough water into the big roasting pan to completely submerge the springform pan that’s inside the bag.

    • Your cheesecake will not be contaminated by the water bath!

    How to cool cheesecake

Keep in mind that the cooling process should not be rushed.Upon completion of baking the turtle cheesecake, turn off the oven and carefully remove the springform pan from the water bath and freezer-safe zip-lock bag.Place the cheesecake on a baking sheet and return it to the oven (with the oven door cracked) while the oven is still off.In order to avoid the cheesecake from breaking, it should be allowed to cool slowly.Don’t forget to put your cheesecake in the refrigerator overnight before serving.

    Cheesecake pro tips

    • Allow the cream cheese to warm up to room temperature before beginning to beat it with an electric mixer. Room temperature cream cheese is simpler to whisk
    • the eggs are the final ingredient to be added to the cheesecake recipe before it is baked and cooled completely. Keep mixing until the yolk begins to break down completely. A large amount of air bubbles and cracks are caused by over-beating the eggs
    • using a different size springform pan will change the baking time. Allow the cheesecake to cool in the oven for 1 hour (with the door slightly ajar)
    • I used a 9-inch springform pan.

How to freeze a whole cheesecake

    1. Before freezing the turtle cheesecake, allow it to cool fully. Allow it to cool on the counter for a few minutes before freezing, or store it in the refrigerator overnight to chill before freezing. Combine the caramel sauce, chocolate ganache, and pecans in a mixing bowl.
    2. Remove the outer springform ring with a knife by cutting around it. Remove the cheesecake from the bottom of the pan by carefully lifting it out with a knife. Prepare a round cardboard circle that has been wrapped with aluminum foil and place the cheesecake on top of it. Make sure the cardboard circle is the same size as the cheesecake, then wrap the entire cheesecake in plastic wrap tightly to prevent it from drying out. After that, cover the cheesecake with aluminum foil to provide further protection. Place the container in the freezer for up to 3 months before using. Place the cheesecake in the refrigerator overnight to allow it to defrost.

    Cheesecake

    • Full-fat cream cheese, softened at room temperature (three packages, eight-ounce each)
    • Sugar, 1 teaspoon vanilla essence, 3 big eggs, 1 cup granulated sugar
    • One turkey bag that may be baked in the oven (see step 1 under cheesecake)

    Toppings

    • 12 cup canned caramel sauce
    • 34 cup chopped pecans
    • 13 cup semi-sweet chocolate chips
    • 2 12 tablespoons heavy whipping cream
    • 12 cup jarred caramel sauce

    Crust

    • Bake at 350 degrees for 15 minutes. If you are using whole graham crackers, grind them in a blender or food processor until they are very finely ground. Graham cracker crumbs can also be found in the baking section of the grocery store. 2 cups of crumbs should be measured out. Using an electric mixer on low speed, combine the crumbs, finely chopped nuts, brown sugar, cinnamon, and melted butter in a small bowl until thoroughly combined
    • Add the crumbs to an 8 or 9-inch springform pan and spread them evenly, pressing the crumbs into the pan with a cup or the bottom of anything flat to compact the crumbs. If desired, you may have the crumbs extend a little farther up the sides of the pan.
    • Pre-bake the crust for 8-10 minutes, or until it is golden brown, in the oven before putting it in the pan.
    • Before adding the cheesecake mixture, remove the pan from the oven and set it aside to cool to room temperature.
    • Reduce the temperature of the oven to 325 degrees Fahrenheit.

    Cheesecake

    • Placing the round springform pan inside an oven-safe bag (such as one that you would use to roast a turkey for Thanksgiving) and rolling the top of the bag down to ensure that it does not cover the cheesecake will work best. Set aside. In a large mixing bowl, cream together the three cream cheese packages until smooth, about 2-3 minutes. Set aside. Add in the sugar and vanilla essence and beat until well combined. Add in the eggs and continue to beat just until the egg yolks separate. Using an electric mixer, beat the mixture for a further minute. It is important not to overbeat, which is why I propose only one minute. Pour the cheesecake mixture on top of the crust once it has been allowed to cool.
    • Place the springform pan into a bigger roasting pan to prevent it from overflowing. Prepare a water bath by carefully filling the roasting pan with approximately 1 inch of water
    • place the water bath in the oven with the cheesecake inside and bake at 325o F for 60-70 minutes *see note. When you bounce the pan, the middle of the cheesecake will wobble a bit, indicating that it is done. The sides of the cheesecake should be harder than the middle
    • otherwise, it will be too soft.
    • Once the cheesecake has finished baking, turn off the oven and open the oven door a bit. To remove it from the oven, let it to cool to room temperature for 60-90 minutes before taking it from the oven.
    • Remove the cheesecake from the oven when it has been allowed to cool to room temperature. Cover the cheesecake loosely with aluminum foil or place it in a big airtight container and leave it in the refrigerator overnight. Before serving, carefully unmold the cheesecake from the baking pan. Make use of a little spatula to help any sections of the pan that are adhering to it. To make it easier on yourself, you may leave the pan to do most of the job. Some of the cheesecake may adhere to the pan, but it should naturally separate from the pan.
    • In the meantime, prepare the chocolate ganache. Place the chocolate chips and heavy cream in a microwave-safe bowl and microwave on high for 30 seconds. Using a microwave, heat heavy cream for 20-30 seconds or until it begins to boil. Allow for one minute of resting time after mixing. Stir the ingredients with a spatula until it is completely smooth. Allow the ganache to come to room temperature before spreading it on top of the cheesecake
    • pour the caramel sauce on top of the cheesecake and spread evenly to cover the entire surface. Pour the chocolate ganache over the caramel and set aside. Sprinkle the chopped pecans on top of the caramel to finish it off. Place the cheesecake in the refrigerator until ready to serve. leftovers may be kept in an airtight jar in the refrigerator for up to 5 days.
    • To get perfectly clean cheesecake slices, wipe the knife down completely between each slice.

What You Need to Make This Recipe

Chocolate sandwich cookies – I use Oreo cookies for the crust of the turtle cheesecake, but you may use any chocolate sandwich cookies you have on hand to make the crust.Just make sure you aren’t purchasing cookies that are double-stuffed.Nuts — I prefer purchasing whole or halved pecans so that you may ground some for the filling and coarsely chop some for the topping before assembling the pie.You may even leave part of it whole if you enjoy the way it looks on top of the cheesecake in its raw state.Remember to use full-fat cream cheese rather than spreadable variety from a container when making this recipe.

    • If you use cream cheese that is still cold from the fridge, it will not mix properly, and you will end up with a lumpy batter.
    • Bring the cream cheese to room temperature before using it.
    • To prevent the protein in the egg from thickening excessively, flour is added to the filling of the turtle cheesecake.
    • This results in a creamier texture to the filling and reduces the likelihood of cracks appearing on the top of the cheesecake.

When it comes to caramel sauce, you can use store-bought, but if you have the time, try making my homemade caramel sauce instead.

Pro Tips for Making This Recipe

    • Please resist the temptation to open the oven door to have a glimpse at your turtle cheesecake. Heat will escape, and cold air from the kitchen might enter the oven, resulting in the deflation or cracking of the cheesecake
    • Have you ever made a mistake and cracked the top of your turtle cheesecake? Simply top it with extra chopped pecans and caramel to finish it off.
    • Allowing your cream cheese to come to room temperature the night before or heating it in the microwave for 20 seconds at 50% power will do the trick.
    • Just like the cream cheese, eggs work best when they’re at room temperature, and the same goes for the flour. Put your egg in a dish of warm water for a couple of minutes to soften it up a bit. If you have neglected to remove it from the refrigerator before serving it, this will rapidly bring it to room temperature.
    • If you don’t have any chocolate sandwiches on hand, you may substitute graham crackers, Biscoff cookies, digestives biscuits, Nilla wafers, or shortbread cookies for the crust instead.
    • Cooking until the center is hard is not recommended since the cake continues to set as it cools. Gently shake the pan to see if your turtle cheesecake is done baking, or if it is still baking. If the middle of the cheesecake is a little jiggly, it’s finished
    • If you don’t have chocolate chips on hand, you may use chocolate bars that have been coarsely chopped and melted instead.
    • Allow the cheesecake to cool at a steady pace. Avoid placing it straight into the refrigerator to expedite the process
    • otherwise, it can produce condensation if left covered in the fridge or will absorb smells if left uncovered in the fridge.
    • In order to achieve beautiful, clean slices, run your knife under hot water between cutting.

    Frequently Asked Questions

Why do I need a water bath?

A water bath, also known as a bain-marie, helps to maintain a moist atmosphere while your turtle cheesecake is baking, providing further protection against cracking or curdling of the filling.Because cheesecake has a crust and is not as delicate as a custard, such as a creme brulee or flan, I prefer not to bake the cheesecake directly in the water because the water may seep into the seams of the pan during baking.Place the water bath on the oven rack below the cooking surface, and you’ll reap the benefits of the moisture while cooking without the risk of a soggy bottom.

How do I prevent cracks from forming on my cheesecake?

In order to prevent cracking or curdling of the filling while your turtle cheesecake is baking, use a water bath, also known as a bain-marie, throughout the baking process.Given that cheesecake has a crust and is not as delicate as a custard-based dessert such as a creme brulee or flan, I prefer not to bake cheesecake directly in boiling water because the water may seep into the seams of the pan.It is possible to benefit from moisture while cooking while avoiding the possibility of a soggy bottom if you place the water bath on the lower oven rack.

    How do I store it?

It’s best to keep this chocolate caramel pecan cheesecake refrigerated until serving. If you like your cheesecake to be less stiff and chilly, you may leave it out at room temperature for a few hours before serving. If you don’t have a cake container with a lid to use to cover the cheesecake, you may tent the top of the cheesecake using toothpicks to prevent the plastic wrap from sticking to the toppings.

    Can I freeze this?

Yes, you can!Once the cheesecake has cooled, you can either freeze it whole or cut it into slices to store in the freezer.Wrap the cheesecake in numerous layers of plastic wrap before transferring it to a freezer-safe bag if at all feasible before freezing it.The texture of the nuts will alter slightly when frozen and thawed, so if you’re going to be freezing the cheesecake as a whole, I recommend skipping the topping and preparing it fresh instead. After making this Turtle Cheesecake recipe, please remember to review it and tell me how it turned out in the comments section below; I always appreciate hearing from you and your feedback.
