- 1/2 cup (112g) salted Challenge butter, room temperature
- 1 cup (240ml) heavy whipping cream, room temperature
- 5 tablespoons (41g) all-purpose flour, sifted
- 2 cups (414g sugar)
- Pecan chips (about 1/4 cup or 28g)
Crust
- 2-1/2-cup (268-gram) graham cracker crumbs
- 1/2-cup (112-gram) salted Challenge butter, melted
- 3-tablespoons brown sugar
- Pecan chips (about 1/4 cup or 28g)
Filling
- 1 cup (144g) light brown sugar
- 3 tbsp (24g) all-purpose flour
- 1 cup (230g) sour cream
- 1 1/2 teaspoons vanilla extract
- 3 big eggs
- 4 oz (2/3 cup | 116g) semi-sweet chocolate chips
- 6 tbsp (90ml) heavy whipping cream
- 24 oz (678g) Challenge cream cheese, at room temperature
Chocolate Drizzle
- 1 cup (58g) semi-sweet chocolate chips
- 3 tablespoons (45ml) heavy whipping cream
- 2 oz (58g) semi-sweet chocolate chips
Instructions

- To prepare the caramel sauce, first arrange the sugar in a big pot so that it is evenly distributed.
- 2.
- Cook over medium-high heat, stirring constantly, until the sugar is completely melted.
- The sugar will first clump together, but it will gradually melt entirely.
- This should take no more than ten minutes.
- Stop whisking once the sugar has melted and let the mixture to continue to heat until the sugar has turned a little darker caramel color.
- You could detect a nutty fragrance coming from the room.
- Because the color shift will occur rapidly, don’t leave it alone for too long or allow it to become too dark, or it will burn.
- Remove the caramel from the heat and set it aside.

Crust
- Bake at 350 degrees for 15 minutes. If you are using whole graham crackers, grind them in a blender or food processor until they are very finely ground. Graham cracker crumbs can also be found in the baking section of the grocery store. 2 cups of crumbs should be measured out. Using an electric mixer on low speed, combine the crumbs, finely chopped nuts, brown sugar, cinnamon, and melted butter in a small bowl until thoroughly combined
- Add the crumbs to an 8 or 9-inch springform pan and spread them evenly, pressing the crumbs into the pan with a cup or the bottom of anything flat to compact the crumbs. If desired, you may have the crumbs extend a little farther up the sides of the pan.
- Pre-bake the crust for 8-10 minutes, or until it is golden brown, in the oven before putting it in the pan.
- Before adding the cheesecake mixture, remove the pan from the oven and set it aside to cool to room temperature.
- Reduce the temperature of the oven to 325 degrees Fahrenheit.
Cheesecake
- Placing the round springform pan inside an oven-safe bag (such as one that you would use to roast a turkey for Thanksgiving) and rolling the top of the bag down to ensure that it does not cover the cheesecake will work best. Set aside. In a large mixing bowl, cream together the three cream cheese packages until smooth, about 2-3 minutes. Set aside. Add in the sugar and vanilla essence and beat until well combined. Add in the eggs and continue to beat just until the egg yolks separate. Using an electric mixer, beat the mixture for a further minute. It is important not to overbeat, which is why I propose only one minute. Pour the cheesecake mixture on top of the crust once it has been allowed to cool.
- Place the springform pan into a bigger roasting pan to prevent it from overflowing. Prepare a water bath by carefully filling the roasting pan with approximately 1 inch of water
- place the water bath in the oven with the cheesecake inside and bake at 325o F for 60-70 minutes *see note. When you bounce the pan, the middle of the cheesecake will wobble a bit, indicating that it is done. The sides of the cheesecake should be harder than the middle
- otherwise, it will be too soft.
- Once the cheesecake has finished baking, turn off the oven and open the oven door a bit. To remove it from the oven, let it to cool to room temperature for 60-90 minutes before taking it from the oven.
- Remove the cheesecake from the oven when it has been allowed to cool to room temperature. Cover the cheesecake loosely with aluminum foil or place it in a big airtight container and leave it in the refrigerator overnight. Before serving, carefully unmold the cheesecake from the baking pan. Make use of a little spatula to help any sections of the pan that are adhering to it. To make it easier on yourself, you may leave the pan to do most of the job. Some of the cheesecake may adhere to the pan, but it should naturally separate from the pan.
