    How to Make Baked Vegan Cheesecake

    In the recipe card at the bottom of this page, you will find detailed instructions and measurements for this dish. This is a synopsis of the process to accompany the process photographs.

    The Crust:

    • My crust of choice for this recipe is an old favorite of mine: an oreo cookie crust! For this cheesecake’s crust, golden oreos and vegan butter combine to create the right texture.
    • Simply place the oreo cookies in a food processor and pulse until they are crumbs.

    Afterwards, add in the melted vegan butter and process until all of the crumbs are evenly coated with the butter again.

    • Press down into a 9-inch round pie dish. 

    The Filling Part One:

    • A can of cold coconut cream with the separated cream portion only is added to a blender jug as the first step in preparing the filling
    • the second step is to mix until smooth.
    • Blend in the cashews until smooth.

    Because this is extremely thick, a Vitamix will be ideal for blending it all up quickly. The best thing to do, however, if you have a poorer model blender, will be to combine the coconut cream first, till it is thoroughly blended, and then add the cashews and integrate them into the coconut cream.

    The Filling Part Two:

    • Then you’ll go on to the second half of the filling, which involves combining two tubs of vegan cream cheese (we used Tofutti) with caster sugar (also known as superfine sugar), cornstarch, salt, lemon juice, and vanilla essence in the bowl of your stand mixer.
    • Initially moving at a modest pace, gradually increasing the speed until everything is well combined
    • TIP: Take care not to overmix the ingredients. Don’t just turn on the mixer and walk away. Then, (as seen in the photo), carefully fold in the coconut cream and cashew blended mixture, as well as the lemon zest, to the cream cheese mixture.
    • Make a smooth layer of filling on top of the golden Oreo crust
    • set aside.
    • Bake the cheesecake for 60 minutes at 320 degrees Fahrenheit (160 degrees Celsius).
    • After an hour of baking, turn off the oven and open the oven door to let the cheesecake cool. Leave the cheesecake in the oven for another hour to allow it to cool down slowly.
    • It will be a bit jiggly in the centre when it is just out of the oven, but don’t worry, it will firm up as it cools.
    • After it has finished cooling in the oven, take it to a cutting board and let it to cool completely to room temperature before transferring it to the refrigerator until completely cold, ideally overnight.
    • Toss in the garnish and serve

    No Water Bath

    By baking at a low temperature, we can avoid the necessity for a water bath in this cheesecake.In addition to baking at a low temperature for an hour, we open the oven door after it has cooked for an hour and allow it to cool down gently for an additional hour.Because you are baking it slowly and then chilling it gently, you will not have cracks on the top of the cake.It’s possible that mine broke a bit on the top, as you can see in the photo above, but that was only because I became irritated with the cooling process and cut it short.

    1. If you allow it to cool slowly and steadily, it is less likely to crack.
    2. However, this teeny-tiny fracture in the top isn’t enough to persuade me to go through the trouble of soaking it in water.
    3. Particularly considering that the crack will simply be filled with a cookie crumb topping.

    The Topping

    Crushed golden oreo cookies are used as a topping for this dish. The topping is absolutely optional, and you aren’t even required to use a topping at all while making this dish. All I care about is how it looks with all of those cookie crumbs on top!

    • ▢ 6 Golden Oreos Crushed
    • Preheat the oven to 320 degrees Fahrenheit (160 degrees Celsius)
    • Place the oreo cookies in a food processor and pulse until they are finely ground. With a small saucepan over low heat, melt the vegan butter, then add it to the food processor and process it again until all of the crumbs are covered in butter. Spray a 9-inch round pie dish* with nonstick cooking spray and press the cookie crumbs into an equal layer on the bottom of the dish. While you’re preparing your filling, set it aside.
    • To use the chilled coconut cream, remove it from the refrigerator and open the can. Using a spoon, carefully scoop out the solid cream that has risen to the top of the blender jug, discarding the liquid half. Blend in the raw cashews until they are completely smooth. If your blender is not strong enough (such as a Vitamix), start by blending the coconut cream, then add the cashew nuts and process until well combined. Remove from consideration.
    • In the bowl of your stand mixer, combine the two tubs of dairy-free cream cheese, the caster sugar, the cornstarch, the salt, the lemon juice, and the vanilla essence. Mix until smooth.
    • Beginning at a slow pace, gradually raise the speed until everything is well combined. Be cautious not to overmix
    • it just has to be well mixed in
    • do not leave the mixer running for long periods of time.
    • Add the coconut cream and cashew mixture, as well as a pinch of lemon zest, to the cream cheese mixture and fold everything together.
    • Using a spatula, spread the filling over the crust and smooth it down
    • Bake for 60 minutes at 350°F.
