Ice Cream Cake

12 servings (per recipe) I prefer to decorate the top of this ice cream birthday cake with jimmies for the birthdays of my children. Chef Taste of Home photographed this Ice Cream Cake recipe for Becky Herges of Fargo, North Dakota.
Ingredients
- 4 cups ice cream in the taste of birthday cake or another flavor of your choosing, softened if required
- Funfetti cake mix (standard size)
- 1 carton (8 ounces) frozen whipped topping (thawed)
- 1 cup sprinkles (optional).

Directions
- Plastic wrap a 9-inch circular baking pan and set aside. Pour the ice cream into the pan. Freeze for 2 hours or until the mixture is solid.
- Follow the package directions for preparing and baking the cake mix, which calls for two 9-inch round baking pans. Allow 10 minutes of cooling time in the pans before transferring to wire racks to cool fully.
- If the tops of the cakes are domed, trim them with a serrated knife. 1 cake layer should be placed on a serving platter. Invert the ice cream onto the cake layer and peel away the plastic wrap. Finish by adding the last cake layer. Spread the whipped topping over the top and edges of the cake to finish it off. Sprinkles can be added at this point if desired. Freeze for another 2 hours or until the mixture is solid.
