The making of a show cake with Ashley Holt of Sugar Monster

  • In the early hours of the morning on the night before the 2017 New York Cake Show, Ashley Holt is making herself a cup of coffee.
  • It isn’t her first or final act of the day, though.
  • In order to deliver the cake from her south Brooklyn studio to Pier 36 in Manhattan for the competition, the 29-year-old behind Sugar Monster Sweets — who has appeared on Cake Boss and won Season 3 of TLC’s Next Great Baker — is working through the night until 7 a.m.

on Saturday.″I live for this push and this energy; it’s a lot of fun,″ she adds.″It’s a lot of fun.″ ″Of course, I’d like to take my time and finish my cake over a number of months, but there’s something about the pressure of the last minute that I really enjoy.″ ″Of course, I’d rather relax and finish my cake over a couple of months,″ says the author.

Her competition cake — or cakes, really, because Holt competed in two categories — has been in the works for about a month. We were given the opportunity to visit her Carroll Gardens studio and see firsthand how her masterpieces are put together, from the drawing board to the finishing touches and everything in between.Holt is new to the cake show scene, despite the fact that she has participated on television, including Chopped.″When you win a cooking competition, you’re not always taken seriously out on the town,″ she admits.″Last year was actually my first time participating in a genuine cake show.

I worked a lot of demonstrations at those shows, so I got to watch everyone else compete and say to myself, ‘Why am I not competing here?’ I would look at their pieces and wonder, ‘Why am I not competing here?’ Competition is enjoyable, it is good for you, and it keeps you on your toes.In addition, it gives you some excellent bragging rights.″ Because the New York Cake Show took place on the same weekend as the Tony Awards, the theme for this year’s event was ″Broadway.″ Holt was given the opportunity to select the program she wished to utilize as inspiration (no duplicates are allowed in the same category). It was ″Kinky Boots″ that I decided on since the large red boot is something I’m very attracted to.I thought it would be a wonderful, exciting task. She looked at YouTube footage and Google photos from the show to figure out which aspects of the production she might use as design components in the final product.Despite the fact that there is no specified height or number of layers necessary for the Show Table category, ″this is going to be on a 6-foottable, so I can’t have a little, weak cake,″ she states emphatically.

  1. ″My cake board is 3 feet in diameter, so I have to create everything the appropriate size.″ A full-sized boot, in fact, because this is a massive shoe.
  2. There are certain rules, such as everything on the cake having to be edible and produced only by her.
  3. As Holt explains, the initial stage was the most time-consuming: ″I started working on the sequins three weeks ago; it was the first thing I did because I knew it was going to take long.″ ″I started with a small baby hole puncher, then followed and centered the little ones with a hole puncher that’s a little bit bigger,″ says the artist after creating vast sheets of red gelatin.
  4. They were so popular that she produced a thousand of them, resulting in 46 rows of 15 on the layer of her cake that was inspired by Lola’s clothing.
  5. Creating the ring of lightbulbs, which was inspired by the set design of Kinky Boots, was something she had to reverse-engineer from scratch.
  6. The idea came to her as a flash of inspiration, and she thought to herself, ″If this works, it would be pretty wonderful,″ she recalled.
  1. The filaments were constructed out of royal icing, then coloured and combined with a coil made out of gum paste and gelatin bulbs, which were manufactured by inflating up a balloon to achieve the shape and exploding it once the gelatin had set, to complete the look.
  2. When Holt was 18, he traveled to New York for the first time to pursue a modeling career.
  3. Holt grew raised just outside of Atlanta.

″It was just something I despised,″ she recalls. In order to discover a meaningful and enjoyable direction in life, I chose to pursue a degree in baking, which turned out to be the one thing I actually like doing. That’s when I found adorned cakes, which allowed me to achieve a high level of aesthetic fulfillment.I knew then that’s what I wanted to pursue.″ In the end, Holt’s cake was composed of a fondant-covered cake board, a shoebox layer, a jeweled red tier inspired by Lola’s outfit, a black tier for the stage, and a life-size boot on a stand.

All of the arithmetic for her decorations worked out well, but she ran into some difficulties with the circumference.″I made a mistake and cut the lid too tiny, so you can still see the edge of the tissue paper.I had to add an additional rim to the lid to seal the seam.″ It wasn’t quite as straight and flawless as it should have been because of the ruffles on the tissue paper.″ She ended up having to re-create the lid — just don’t ask what hour she was rolling out the fresh layer of fondant, please.Show cakes have a lot in common with beauty pageant entrants, as you might expect.

Holt uses a dress steamer to give her fondant a shiny shine, and she hand-paints each chocolate gem.Everything, from the cake board to the tablecloth, must be adorned from top to bottom, even the tablecloth.″If you don’t beautify your board, you’re going to lose a lot of points.″ This isn’t the only cake she created for the concert, as she also prepared a Kinky Boots cake.Holt was forced to enter the category again this year because he was the winner of the Shoe Display category the previous year with a Pizza Rat stiletto standing on a pizza cake board.

  1. ″I was worried that my personality was a little too eccentric,″ she says.
  2. The fact that I dared to go beyond the box and delved deep into my own imagination, drawing something unique from my brain and getting acknowledged for it, made me feel really pleased.
  3. A roller skate on a disco ball board, inspired by the movie Xanadu, is this year’s contribution.

There was one thing Holt didn’t have to do: make a cake from scratch!Despite the fact that there are edible categories such as Buttercream and Cookies, the innards of show cakes are often made of Styrofoam or other similar materials.″There’s no way anyone is going to eat this cake; it’s going to remain around forever,″ she adds.″They’ll be used as decorations in the studio for the time being.″ In the event that she bakes, she hopes you like it, but she does not need to be present to see it: In my opinion, it is painful to see clients bite into cakes that you have spent 70 hours creating. The cake was put together in Holt’s spare time aside from a last-minute sprint on Friday. She stayed for around an hour and a half each night after her usual orders were completed.

While the deadline for the show approached, she maintained her promise to attend a friend’s comedy performance and to attend a Yankees game with her partner earlier in the week. When everything is work-related, I’ve been in that position before, and it doesn’t make me feel good.Greg has done an excellent job of guiding me through the process of striking a healthy balance between my personal and professional lives. As a result, I make it a point to go away as frequently as I can, and to depart at a reasonable hour so that we may have dinner together.″ ″We’ll be contacting Uber the morning of the concert with very explicit instructions that if they hit a pothole, I’ll be riding in the front seat,″ says the producer.Additionally, an emergency repair kit is being sent.

  • She’ll put the cake together on the spot.
  • ″When everything is placed into the vehicle, there is a tremendous sense of relief.
  • Then you move on to look at the work of everyone else in the class.
  • The majority of the time it is as simple as ″Oh, I got this!″ Other times it is as complex as ″Crap, I should’ve gone larger!″ You have that nervousness, yet you visit your pals and hang out with them before leaving and returning with a medal, if you’re lucky.″ The New York Cake Show contains 11 categories with five divisions: Master/Professional, Intermediate, Beginner, Student, and Open.
  • The categories are divided into two groups: Master/Professional and Intermediate.
  • The cakes are not appraised in comparison to one another, but rather on their own distinctive qualities and characteristics.
  • ″I don’t have the opportunity to do this on a daily basis; I don’t get instructions like this.″ A cake of that kind would be too expensive – I would demand at least $10,000 for it, and perhaps even as much as $20,000.
  • That, however, would not be covered by insurance.
  • I have the opportunity to really push myself creatively to the next level and discover what I am truly capable of.″ Holt’s cake came at the exhibition in perfect condition (and finished).
  • In the meanwhile, during the afternoon of the first day, the boot proved to be too heavy for the screw that held it to the stage tier, and it tumbled off, knocking out three lightbulbs in the process.
  • ″It seems like someone smacked the table or touched it,″ she speculated.

″Thank goodness, the judges were already aware of it,″ she said, indicating that the event would not have an impact on her final score. At the end of the day, Holt had another excellent year. Both of her Sugar Monster employees took first place in their respective categories, gaining first place in student-level Celebration Cakes and second place in intermediate-level Wedding Cakes.

Holt’s cakes achieved second place in their respective categories — but the Kinky Boots cake took home the title of Best in Show, which comes with a monetary reward of $1,000.″The whirlwind of emotions I experienced this past weekend, with my cake toppling after judging and having to rush in first thing to replace it, was insane,″ she recalls.″I am overwhelmed with gratitude and honor.I had a vision for what I wanted to create, and I was able to convert that idea into something that connected with everyone in attendance.

″I’m quite pleased with myself, and I’m even more pleased with my colleagues.″

Here’s Where You’ve Seen Ashley Holt from ‘Bake Squad’ Before

  • Ashley Holt is pouring herself a cup of coffee at 8:37 p.m.
  • on the eve of the 2017 New York Cake Show in New York City.
  • Neither is it the start of her day nor is it the end of it.

After that, the 29-year-old owner of Sugar Monster Sweets — who has appeared on Cake Boss and won Season 3 of TLC’s Next Great Baker — will labor through the night until 7 a.m., when it will be time to transport the cake from her south Brooklyn studio to Pier 36 in Manhattan for the competition. The ″push″ and ″energy″ are what she lives for, she says.″It’s a lot of fun,″ she adds.

″While I would prefer to take my time and bake the cake over a few months, there’s something about the pressure of the last minute that I truly enjoy.″ ″Sure, I would prefer to relax and do the cake over a couple of months, but there’s something about the last minute pressure that I really enjoy.″ A little more than a month has passed since Holt began working on her competition cake — really two cakes, because she competed in two different categories — We were given the opportunity to visit her Carroll Gardens studio and see firsthand how her masterpieces are put together, from the drawing board to the last touches and finishing touches.Holt is new to the cake show circuit, despite the fact that she has competed on television, notably on Chopped. In her words, ″when you win a cooking competition, you’re not always taken seriously out on the town.″ My first genuine cake display took place last year, and it was a lot of fun.″ I worked a lot of demonstrations at those shows, so I got to see everyone else compete and say to myself, ‘Why am I not competing here?’ I would look at their pieces and wonder why I wasn’t competing.Contests are entertaining, they are beneficial, and they keep people on their toes.In addition, it gives you some excellent bragging rights.

Because the New York Cake Show took place on the same weekend as the Tony Awards, the theme for this year’s event was ″Broadway Cake.″ In order to choose which program she wanted to utilize as inspiration, Holt had to choose three (no duplicates are allowed in the same category). It was ″Kinky Boots″ that I decided on since the large red boot is something I’m very attracted to.I thought it would be a cool and enjoyable task.It was while watching YouTube clips and searching for photographs from the performance that she realized she could use portions of the production as design components.Even while there is no specified height or number of layers necessary for the Show Table category, ″this is going on a 6-foottable, so I can’t have a little, weak cake,″ she explains.″It has to be a big, beautiful cake.″ My cake board is three feet in diameter, so everything must be made to fit.

  1. A full-sized boot, in fact, because this is a gigantic shoe.
  2. Everything on the cake must be edible and produced only by her, according to the guidelines.
  3. As Holt explains, the initial stage was the most time-consuming: ″I started working on the sequins three weeks ago; it was the first thing I did because I knew it would take forever.″ ″I started with a small baby hole puncher, then followed and centered the tiny ones with a slightly larger one,″ says the artist after creating vast sheets of crimson gelatin.
  4. They were so popular that she produced a thousand of them, resulting in 46 rows of 15 on the layer of her cake that was inspired by Lola’s gown.
  5. The ring of lightbulbs, which was inspired by the set design of Kinky Boots, was something she had to reverse-engineer herself from scratch.
  6. The idea came to her as a flash of inspiration, and she thought to herself, ″If this works, it would be pretty wonderful.″ Each of the filaments was constructed out of royal icing, which was then coloured and joined with a coil made out of gum paste and gelatin bulbs, which were formed by inflating up a balloon to achieve the shape and popping it when the gelatin dried.
  1. When Holt was 18, he traveled to New York for the first time to model, having grown up just outside of Atlanta.
  2. Her reaction: ″I simply loathed it.″ My purpose and enjoyable path in life had to be found, and the one thing I truly enjoyed doing was baking, so I chose to get a degree in the field.
  3. I found adorned cakes later on and realized that this was what I wanted to accomplish since it allowed me to achieve my creative goals.″ In the end, Holt’s cake was composed of a fondant-covered cake board, a shoebox layer, a jeweled red tier inspired by Lola’s outfit, a black tier for the stage, and a life-size boot tier.

The arithmetic for her decorations was correct, however she ran into a little difficulty with the diameter of her creations.’I made a mistake and cut the lid too tiny, so you can still see the edge of the tissue paper.I had to add an additional rim to the top to seal the seam. When I did that, the ruffles from the tissue paper caused the band to be less straight and flawless than it should have been.

In the end, she had to re-create the lid — just don’t ask her what hour she was rolling out the fresh layer of fondant!Demonstration cakes and beauty pageant candidates have a lot in common. To get a shiny sheen on her fondant, Holt uses a dress steamer, and each chocolate gem is hand-painted.Everything, including her cake board and on-theme tablecloth, must be adorned from head to toe.

A large number of points are deducted if a board is not decorated.Aside from the Kinky Boots cake, she also baked a number of other desserts for the episode. It was necessary for Holt to enter the category again after taking first place in the previous year with a Pizza Rat stiletto standing on a pizza cake board. As she recalls, she had been concerned that hers was ″too odd.″ The fact that I dared to go beyond the box and delved deep into my own imagination, drawing something unique from my brain and getting acknowledged for it, made me feel really gratified.

  1. A roller skate on a disco ball board, inspired by the film Xanadu, is this year’s contribution.
  2. Image courtesy of Xanadu.
  3. One thing Holt didn’t have to do was actually make a cake for the occasion.

Despite the fact that there are edible categories such as Buttercream and Cookies, the innards of show cakes are almost always made of Styrofoam or other similar materials.Nobody is going to eat this cake, and it is going to remain around for a long time,″ she claims.″They’ll be used as decorations in the studio,″ says the author. It is her goal that you would appreciate her baked goods when they are made, but she does not need to be present to see it: The sight of people cutting into cakes that you have worked on for 70 hours stings,″ says the baker. The cake was put together in Holt’s spare time except from a last-minute sprint on Friday. She stayed for roughly an hour and a half each evening after her usual orders were completed.

While the deadline for the show approached, she kept her pledge to attend a friend’s comedy performance and to attend a Yankees game with her lover earlier in the week. When everything is work, I’ve been in that position before, and it doesn’t make me feel good.In terms of teaching me how to maintain a healthy balance between my personal and professional lives, Greg has been quite helpful. Thus, I make it a point to go away as often as I can, and to depart at a reasonable hour so that we may enjoy supper as a family.″ We’ll be phoning Uber the morning of the concert, and we’ll give them very specific instructions: ″If they hit a pothole, I’ll be riding shotgun with them.″ An emergency repair kit is also included in the package.Upon arrival, she’ll construct the cake on the premises.

  • Following the loading of everything, there is a tremendous sense of relief.
  • Afterwards, you move on to look at the work of your colleagues.
  • The majority of the time it is as simple as ″Oh, I got this!″ Other times it is as complicated as ″Crap, I should’ve went larger!″ You have that nervousness, yet you visit your pals and hang out with them before leaving and returning with a medal, if you are fortunate.″ At the New York Cake Show, there are 11 categories with five divisions: Master/Professional (which includes professionals), Intermediate (which includes beginners), Student (which includes students), and Open (which includes everyone else).
  • Not against one another, but on their own particular merits, the cakes are assessed in this competition.
  • The opportunity to accomplish this is rare; I don’t get requests like this on a daily basis.
  • For such a large cake, I would charge at least $10,000, and perhaps even up to $20,000 in addition to the cost of the cake itself.
  • No one would be willing to pay for anything like this.
  • I have the opportunity to really push myself artistically to the next level and show what I’m made of.″ Despite the weather, Holt’s cake made it to the exhibition in good shape (and finished).
  • In the meanwhile, during the afternoon of the first day, the boot proved to be too heavy for the screw that held it to the stage tier, and it tumbled off, destroying three lightbulbs in the process.
  • According to her, ″someone must have struck or touched the table.″ It didn’t matter because the judges had already noticed it, which meant the incident would not have an impact on her overall score.
  • At the end of the day, Holt had another profitable year.

The top place in student-level Celebration Cakes and the second place in intermediate-level Wedding Cakes were won by two of her Sugar Monster employees, who worked for her. However, the Kinky Boots cake, which won Best in Show and a $1,000 cash reward, outperformed the other Holt’s cakes in their respective categories. It was a rollercoaster of emotions for her this past weekend, with her cake crumbling after judging and having to rush in first thing to fix it.

″It was wild,″ she recalls.″I’m overwhelmed with gratitude and honor.″ Everyone at the event seemed to connect with my vision for what I wanted to accomplish since it was communicated in a way that they could understand.″I’m quite pleased with myself, and I’m even more pleased with my teammates.″
