Cake consultations

Doing your study before meeting with a customer for a cake consultation is a highly professional way to conduct yourself. This entails having your cake sizes prepared in advance so that you are aware of how many people each cake serves.Furthermore, it provides you with a better notion of how much you should charge, which is especially useful if you charge by the serving, as I do.In my piece, How to perform a cake consultation, I go into further detail regarding the process of cake consultations. Some basic chart guides that I find useful while doing cake consults are included below.I sincerely hope you find these to be beneficial as well.

Reference, measure, serving size

These calculations are based on the size of a 1″ x 2″ chunk of wedding cake for each serve.A 1.5 x 2 piece is served, which is different from the party size ″or a lower size As a result, these are the serving sizes for wedding cakes. These are 4″ to 6″ tall cakes, which implies that each layer is 2″ in height, on average ″tall x 2 or 3 layers per tier for a total of 6 layers. As long as the cakes are the same height (3″ to 6″ high) and adorned as a single cake, they will provide the same number of servings because they will be sliced in the same manner. So, certainly, regardless of whether a cake is 4 inches tall or 6 inches tall, it would be served as a single piece.Normally, you would not divide a slice of pizza.

So, even if you use more cake, it is a tall piece of cake that does not contribute to the number of additional portions.Anything with a number less than three ″Tall would result in just half the quantity of servings being produced. For example, an 8″ round cake that is 3″ / 4 ″ /6″ tall will yield 24 servings, however an 8″ round cake that is 2″ tall will yield just 12 servings (see illustration).A score of eight ″round cake – party servings – 9 servings (round cake)

Standard, Tall, or Tiered cakes

  • I receive a lot of messages from people asking me what size cake they should order. I understand that this is perplexing, especially when you are trying to figure out how much to charge for your cakes. In the United States, a standard cake is a two-layer cake with one layer of icing that is typically 4 to 5 inches in height. The number of wedding cake servings is frequently determined by the shape of the cake rather than its height. For example, a 2 x 8-inch round cake (4 inches tall) will yield 24 wedding cake servings, but a 2 x 8-inch square cake (2 tiers) will yield 32 wedding cake servings.
  • Usually 6 to 7 inches tall, with 2 or 3 layers of cake, tall cakes are a popular choice for weddings. Despite the fact that the cake is taller and that you use extra cake batter, the cake will still provide the same number of serves that a conventional cake does. They just create slices that are higher in height. An 8-inch round cake (6 inches tall), for example, will yield 24 wedding cake servings
  • a 2-inch square cake (3 tiers) will yield 32 wedding cake servings
  • and so on.

Double barrel or tiered cakes are two ordinary cakes that are piled together to form a single cake.In order to build an 8-inch double barrel or tiered cake that is 8 to 10 inches tall, you can stack two 8-inch round cakes that are 4 to 5 inches tall each to produce one 8-inch round cake that is 4 to 5 inches tall.Despite the fact that it seems to be one cake, it is actually two cakes (4 x 8-inch layers piled as one) layered as one. When you serve them, you will serve them as two conventional cakes since they will be sandwiched together by a cake board in the middle.Wedding cake servings: 24 + 24 = 48 people.

In this collage, you can see all three of these illustrations.

  1. Wedding cake consisting of four conventional cakes, each measuring four inches in height
  2. Wedding cake with all tall tiers measuring 6-inches in height each
  3. and wedding cake with a double barrle in the centre measuring 8-inches in height

How to calculate cake sizes

German language version / Deutschsprachige Version Hello! This morning, I’m going to respond to the most commonly requested question by my customers and students: what is the best way to learn?Which cake size should I create / purchase for my occasion and what should I call it?What is the quick answer? It all depends! The most crucial variables to consider are not only the number of visitors expected, but also what type of cuisine will be provided and how much will be served!

The long and the short of it is as follows: If your cake is going to be the primary dessert, make sure there is enough for each visitor to have at least one serving. It will be sufficient to order half the number of dishes if you are intending on serving seven courses at your wedding reception or having a dessert buffet with multiple desserts. That way, all of your guests will be given a half-portion.Of course, this raises the question of what to do next:

How big is a cake serving?

This is typically left to the discretion of the baker. This is why all of the serving charts you discover on the internet are different – because each bakery has agreed on a certain serving size for their products.Fondant cakes are frequently filled with numerous layers of buttercream or ganache these days, rather than just one. When compared to conventional European pastry cakes such as Black Forest cake, which is quite light and packed with whipped cream, these cakes are rather rich to consume.Due to the fact that both groups of people are typically too full to consume large slices of cake, a wedding cake portion does not have to be enormous, nor does a children’s birthday cake size. Also, keep in mind that fondant cakes are typically extremely tall, reaching 10cm (4 inches) or higher!

Our normal serving size at Minh Cakes is 5 cm x 10 cm x 2.5 centimeter (5 cm × 10 cm x 2.5 cm) (2 inches x 4 inches x 1 inch). It’s a substantial amount of cake to serve as a wedding dessert.According to what I’ve heard, in the United Kingdom, it is typical to serve only half of this quantity — the wedding cake is intended to be a small teaser rather than a full-blown dessert.

Method 1: Determine  cake size using volume calculations

In order to estimate the number of servings per cake, volume calculations (yeah, that’s geometry for you!) must be performed. My normal serving size is 125 cm3 (or 83 inches) in volume. It is simple to compute the number of servings per tier of a pyramid using cylindrical volume calculations.A round cake is essentially a cylinder in shape. As a result, we may use the following formula: Volume = square of the radius times (Pi) times the height

  • Take a cake with a diameter of 20 cm (8′′) and a height of 10 cm (4′′). The circle has a radius of 10 cm (4 inches). In centimeters: The cake’s volume is 10 cm2 * 10 cm * 10 cm, which equals 3141 cm3. In terms of inches: The cake’s volume is 42 inches * 4 inches * 4 inches, which is 2013 inches. To calculate the number of servings, we merely need to divide the volume of the cake by the volume of the serving, and we’ll get the following result: In centimeters: Servings: 3141 cm3 divided by 125 cm3 equals 25 servings. In terms of inches: Servings: 2013 inches divided by 83 inches equals 25 servings. Result: A 20 cm (8′′) cake that is 10 cm (4′′) high will provide 25 portions that are 2.5 cm (1′′) in diameter and 5 cm (2′′) in height. This is the precise mathematical procedure used to solve the problem. I could compute the geometrically correct number of servings for each tier size I sell by using the following formula: However… (Yes, there is always a but. ). I don’t actually work with the numbers in the previous paragraph. Why? There are three main causes for this: It is necessary to calculate larger cake slices than 125 cm3 because of my preferred way of cutting (more on that later)
  • some cake slices are punctured with dowels
  • and yet others are pierced with dowels.
  • Last but not least, we want to make certain that we are gracious with our brides.

In order to account for this, we report a slightly lower number of servings per tier in our sales. What is the formula for calculating this? The following strategy comes highly recommended by me…

Method 2: Determine cake size using apps

Because we aren’t all mathematical geniuses, we require all of the assistance we can get!And assistance comes in the shape of several quite handy smartphone applications. The market has several extremely intelligent ones (which, by the way, all employ the fundamental technique above to calculate their results!).Tiered Caker is the name of one of my favorite apps.It enables you to quickly and simply adjust the serving size and tier sizes that you have in your home kitchen.

After that, you just send yourself the cutting directions through email. Our standard five-tier sizes are shown here, along with the associated cutting instructions. As you can see in the table above, the number of servings each tier is slightly less than in the previous one. Please keep in mind that the slices in the corners are a little bigger to account for the fondant and ganache covering! Our exact chart may be seen in our Cake FAQ section (in German for now).

You should now be able to determine the number of servings required for each tier size.As soon as you have these numbers in hand, you can begin experimenting with them and combining them until you get the quantity of servings you require for your next function. Here are a few illustrations: It appears that I have figured out what your next inquiry is: How can I cut a cake using these cutting guides? The solution will be provided in the following blog article!I hope you have found this material useful.

Would love to know if you have alternative method of estimating your portions – please share your thoughts and queries in the comments section below!Love and happiness in the calculating,

Learn the Small Cake Equation and Make Every Cake a 6-Inch Cake

Do you require further information? Do you enjoy learning new things? Please continue reading.

Cake math, step 1: calculate the area

  • If you want to convert a recipe for a large cake into a recipe for 6-inch pans, start by figuring out how much space the bigger cake pans have. This is simple to calculate for square and rectangular pans
  • simply multiply the length by the height (for example, a 9 × 9 pan equals 81 square inches). Of course, layer cake recipes almost never call for square or rectangular pans, so you’ll most likely have to figure out how much space you’ll need in a circular pan. In order to compute the surface area of a round cake pan, multiply by the pan’s circumference (3.14 is sufficient), and then square the resultant figure (in other words, multiplying it by itself). It’s important to remember that the radius is half the diameter. This gives you 28.26 in2 (which you should round up to 29 in2 for the sake of sanity) if you’re baking in a 6-inch-round cake pan. Do you want to skip right over the pi portion and go directly to the cake? Here’s a quick reference guide to the most commonly used round cake pan sizes: An 8-inch round pan has a surface area of 51 square inches
  • a 9-inch round pan has a surface area of 64 square inches
  • and an 11-inch round pan has a surface area of 79 square inches.

Cake math, step 2: convert the measurements

With the pans’ surface areas known, it’s much easier to work in percentages than it used to be.Calculate your percentage by dividing the smaller pan area by the bigger pan area (as shown above). As an illustration: 29 square inches (the size of a 6-inch pan) divided by 51 square inches (the area of an 8-inch pan) is 57 percent of the total surface area.As a result, the area of a 6-inch pan is 57% of the size of an 8-inch pan.Following that, we convert the ingredient measurements to percentages based on the percentages. To obtain the measurements of each ingredient for your smaller cake, multiply the original bigger recipe measurement by the proportion of the smaller cake you want to make.

Make a written record of your findings—do not do this in your thoughts as you go!It is preferable to perform your conversions in grams. To find out how much flour is needed to make a 6-inch cake recipe from 500 grams of flour, multiply the amount by.57, or 57 percent, to get the correct measurement.500 multiplied by.57 equals 285 grams of flour.King Arthur Flour offers an excellent ingredient weight table that may be used to convert a recipe from volume to grams.) There will be some modest estimates required while converting measures, but don’t be concerned about this.

Round to the nearest gram, whether it’s up or down, with the exception of leaveners, which I always round up since I’d rather have a little extra lift in the cake than not enough. You may just simply walk around to the nearest egg.If you want to go super-technical with the eggs, whisk one until it is homogeneous and then weigh out the amount you need.Keep the remaining aside for an egg wash (or a little treat for your dog).Again, don’t be concerned about working with measures as little as a tenth of a gram.

Your cake will turn out perfectly no matter which direction you turn it!

Make a 6-inch cake

The majority of recipes follow a similar format: Cream the butter and sugar together until light and fluffy, then beat in the egg and any flavorings before gradually adding the dry ingredients. The mixture is then transferred to a 6-inch cake pan that has been lined with parchment paper. This implies that the cake will not adhere to the pan when it has cooled.Depending on the recipe, a 6-inch cake should be baked at 350F for around 20-25 minutes.Your oven’s temperature must be set correctly.Just because your button indicates 350F does not imply that it is indeed 350F.

The Difference Between Half Sheet Pans, Quarter Sheet Pans, Cookie Sheets.

It’s possible that you’ve heard that it’s not a good idea to cram a pan when sautéing or sear food.Hot tip: the same principle applies to sheet pans as well. However, this does not imply that you should just use the largest sheet pans you can find; some recipes call for the smaller sizes as well as the larger. That’s why it’s a good idea to keep a variety of sheet pans of different sizes on hand.Below, you’ll find a list of some of the most common sizes, as well as an explanation of the distinctions between cookie sheets, standard baking sheets, and jelly roll pans, as well as the best methods to utilize each of them.

Full Sheet

A full-sheet pan is 26 by 18 inches in size and has sides that are approximately one inch high on all four sides. The majority of them are far too huge for practical household usage, and in fact, they won’t fit in most standard home ovens. As an alternative, these are the workhorse pans used by caterers and certain restaurants (although, to be honest, they’re also very large for the majority of restaurant kitchens).A whole sheet pan may be used in a variety of ways in a home kitchen, one of which is as an organizing bin for the pantry.BUY IT NOW: Winware Aluminum Full-Sheet Pan, available for $20 on

Half Sheet

Half-sheet pans are exactly half the size of full-sheet pans, measuring 18 by 13 inches and having sides that are approximately one inch high. These are the pans that we use the most frequently in the Epicurious test kitchen, and it’s the pan that we use for those sheet-pan feasts that you’ve been seeing everywhere.Half-sheet pans are also useful for making breakfasts and desserts ahead of time. It’s a fantastic pan for roasting veggies since it has a large surface area that allows the vegetables to be spread out evenly, allowing them to brown and cook through evenly. Some people even use it for cooking Thanksgiving turkey because of its large surface area.

How Most Birthday and Other All-Occasion Cakes Are Priced (3 of 3) – Omaha Cake Gallery

First, we spoke about the five most frequent techniques that bakers use to price their all-occasion cakes, which do not include wedding cakes, in the first part of this series. In the second article, we explored how to evaluate a cake artist’s or bakery’s pricing based on the total value they provide, similar to how to evaluate a hotel’s cost by utilizing a 1-5-star rating system.

In this third article, we’ll discuss the variables to price a cake and how it effects the final price.

  • Starting with a standard round-layered or sheet cake, we’ll go on to the next step. In the majority of circumstances, the following factors will decide your price: The size of your cake (the number of servings it will have)
  • The taste of your cake (for example, the price of a carrot cake is typically more than the price of a vanilla cake)
  • It doesn’t matter if your cake contains a filling (for example, a basic vanilla cake or a vanilla cake with layers of strawberry filling)
  • It is important to consider the type of icing (for example, basic buttercream as opposed to chocolate ganache or rolled fondant)
  • The level of customisation (for example, a cake with buttercream flowers vs a cake with a sketch or piping of various jungle animals)
  • the size of the cake
  • and the number of guests.
  • The price of your cake will change depending on each of the five variables.and it will fluctuate very drastically. Keep in mind that the ″amount of customisation″ is the single most important element in deciding pricing. The additional cost for your cake design is determined by the hourly rate charged by the cake artist multiplied by the projected time it will take to construct the cake in your design. When ordering a quarter (14) sheet cake with a cluster of flowers, you will most likely be charged the usual amount for a quarter sheet cake. We’ll use the cake artist as an example, and we’ll assume that their normal quarter sheet cake costs $34.99. Now, if you wanted to decorate the cake with multiple buttercream jungle creatures that were piped onto it, it would take an extra 30 minutes. Assuming your cake designer costs $45 per hour, the additional piped creatures would cost around $23 dollars to include in your cake design. Furthermore, a skilled cake artist with advanced talents will charge around the same as a senior hair stylist or nail technician at a spa, which comes to approximately $50-$75 per hour on the average. The one exception is when it comes to wedding cakes. We have a separate topic on how cake designers charge for designing wedding cakes in our wedding cake category, which you can access by clicking here. Next, we’ll talk about how to price 2-D (a block of cake that has been molded but is not standing upright) and 3-D (a block of cake that normally has one vertical axis) cakes. It is the enhanced talent of the cake artist and the additional time required to construct a 2-D or 3-D cake that is the primary distinction between purchasing a sheet or layered cake and purchasing an artistically designed cake. For example, the cake in the 2-D photo below took around one hour to create by a cake decorator, according to the manufacturer. The price is determined by taking the material cost of $18 and doubling it to a total of $36
  • then adding one hour of labor at a rate of $50 per hour to arrive at a final price of $86 for the product. The Cake Gallery’s costs are often 30 percent cheaper than national pricing, despite the fact that $86 is a fair and respectable price (according to research completed by my team). At the time of writing, our price was $59 per month. When it comes to producing a 3-D cake, such as the one seen below, the same price criteria that are used when creating a 2-D cake are applied. The most significant difference is the greater level of expertise and time required to develop and construct it. In the cake depicted below, I’ve used a combination of buttercream, rolled fondant, and gum paste sugar pastes to create a flawless portrayal of a cake that demands a considerable amount of talent and understanding (frosting and sugar based decorating mediums). It is possible to serve 35 persons with this cake. Designing and de
