    I absolutely adore frosting, and since I’ve provided the essentials on my website for you, I’ll share some of my favorite recipes with you (Perfect Buttercream and Creamy Chocolate Frosting).Now it’s time to get down to business with the FUN STUFF!That is exactly what you will get with this marshmallow frosting: it is fluffy, creamy, glossy, sweet but not too sweet, spreadable and pipe-able, and an all-around winner.

    What Actually IS Marshmallow Frosting?

    There are those of you who (gasp) don’t like buttercream, and this is the icing for you!Beautiful and simple, this frosting is a must-have for any baker’s repertoire.It also happens to be far lower in fat and calories than buttercream, which is great if you’re watching your weight or something like that.It all starts with a foundation of egg whites.Because you cook the egg whites, there is no risk of salmonella contamination.Make them with granulated sugar, cream of tartar (to stabilize the egg whites), a sprinkle of salt, and a few drops of vanilla extract in a stand mixer on high speed.

    1. Because you’ll be whipping it for 7-9 minutes, a stand mixer is recommended, but a hand mixer will work just as well…
    2. The peaks, on the other hand, should be rigid and shiny.
    3. The only drawback to this frosting is that it doesn’t last very long after it’s been opened.
    4. I usually recommend that you serve your meal on the same day.
    5. However, if you must preserve it, keep it in an airtight container in the refrigerator for no more than 24 hours.

    1. In the bowl of a stand mixer fitted with a heat-safe attachment, combine the egg whites, granulated sugar, cream of tartar, and salt. Place the bowl over a pot filled with a few inches of boiling water and turn on the heat.
    2. In the absence of a stand mixer, any big heat-safe dish with high sides can be used for mixing.
    3. Stir frequently until the egg whites are warm to the touch and the sugar has dissolved, about 3 – 4 minutes
    4. remove from the heat and cool completely.
    5. Remove the bowl from the heat and transfer it to a stand mixer fitted with a whisk attachment for further processing. Mix on high speed for 7-9 minutes, or until stiff, glossy peaks form, depending on your mixer. During the last 10 seconds of mixing, add the vanilla extract.

    Treats such as cakes, pies, parfaits, and summer desserts are enhanced by the addition of sweet (stabilized) stiff whipped cream.It is tasty and retains its form even when exposed to high temperatures.I’ve been asked more than a few times how I manage to keep my whipped cream looking so gorgeous and maintaining its form.Even in the sweltering heat.As seen on this Blueberry Pound Cake, for example.So, now that summer has here, I figured it would be a good time to come clean about my secret.

    1. And here it is, drumroll, please: the final product.
    2. During the last stages of whipping, fold in unflavored gelatin that has been dissolved in water into the whipped cream.
    3. While I frequently make ordinary handmade whipped cream, it does not hold up well in sweets such as parfaits or even between cake layers, as it does in a cake sandwich.
    4. It can become liquid and lose its form rather fast, especially when exposed to high temperatures.
    5. Rather of the conventional birthday cake, one of my children requested a brownie parfait for his birthday.
    6. I started early in the day by assembling the parfait, which included baked brownies, whipped cream, pudding, and toffee pieces.

    However, when I went to take the parfait out of the refrigerator, I saw that the entire dessert had sunk a couple of inches.I’d completely neglected to solidify the whipped cream before using it.Because it had slipped down the edges of the trifle bowl, it didn’t seem quite as attractive as it had when I’d first made it that morning.So, here are a few short recommendations to ensure that your Sweet (Stabilized) Stiff Whipped Cream is consistently perfect: First, put a metal mixing bowl and beaters in the freezer.Heavy whipping cream, confectioner’s sugar, and vanilla extract are mixed together with an electric mixer until the beaters are just beginning to leave a trail….In a slow, steady stream, gradually add the dissolved gelatin while continuing to beat with an electric mixer until firm.

    1. Do not add any hard fragments of gelatin that may have adhered to the edges and solidified during the baking procedure.
    2. Only liquid gelatin should be used.
    3. Cakes, pies, and parfaits are all made even better with this Sweet Stabilized Stiff Whipped Cream as the ideal creamy topping!

    Please keep in mind that this stabilized whipped cream will harden up over time in a similar way to jello or gelatin.Compared to conventional whipped cream, it will be less soft because of the difference in consistency.Once the stabilized whipped cream has been prepared, it should be distributed immediately.Spread on top of a cupcake or pie, or sandwich between cake layers.Because, after it has set, it will not be able to be re-spread with a knife like conventional whipped cream will be able to.

    Sweet (Stabilized) Stiff Whipped Cream

    • Sweet Stabilized Whipped Cream retains its form for several days, even when exposed to high temperatures. You may now prepare sweets including whipped cream ahead of time! Preparation Time 10 minutes is allotted. Time allotted 10 minutes is allotted. Servings: 2 cups of coffee 1/4 cup cold water
    • 1 cup heavy whipping cream
    • 1/8 cup confectioners’ sugar
    • 1 tablespoon vanilla extract
    • 1 1/2 teaspoons unflavored gelatin (I used Knox Gelatin)
    • Prepare a metal mixing bowl as well as the beaters for your mixer by chilling them.
    • Meanwhile, fill a small microwave-safe dish halfway with water and sprinkle gelatin on top
    • set aside.
    • Allow about a minute or two for the gelatin to soften. (This is referred to as ″blooming.″)
    • Whip together the water and gelatin until smooth, then microwave for 15 to 20 seconds.
    • Allow gelatin to completely dissolve while stirring.
    • Set aside until the mixture has reached room temperature.
    • In the meanwhile, whisk the cream, confectioners’ sugar, and vanilla until it is very lightly beaten and you can see the beater trails in the mixture.
    • Maintain the beating speed while slowly pouring in the chilled gelatin mixture in a continuous stream.
    • Whip cream until it is firm, about 2 minutes. (But don’t go on for too long! )
    • Use right away or store in the refrigerator for later use
    • This whipped cream should be applied as soon as possible.
    • After that, it will ″set up″ like gelatin or jello.
    • The consistency is different from typical whipped cream
    • it is not nearly as soft as regular whipped cream
    • It will no longer be spreadable once it has hardened due to the presence of gelatin in it. So be sure to spread it out immediately and then refrigerate it.
    • Whipping cream will keep its form for several days if stored properly.
