  • To make the frosting, allow it to cool entirely to room temperature (to a spreadable consistency) before applying it to the cooled cakes
  • if you need it to chill quicker, pour the mixture into a clean basin and set it in the refrigerator for 20-30 minutes, stirring often

Ganache & Assembly

  • Melt the chocolate and cream together in a small saucepan over low heat, stirring constantly. Leave it cool for a few minutes before placing one cake layer on a serving platter. 13 of the coconut pecan frosting should be placed on top.
  • Then repeat the process with the remaining two cake layers, putting chocolate ganache over the top cake layer and allowing it to set fully before covering with remaining icing (optional: you can reverse the order, and spread remaining frosting on top cake layer, then spread and drip the ganache on top).
