Blueberry Muffin Carbs
- Including some carbohydrates in your diet is OK, however blueberry muffins are not the best choice for doing so.
- Carbohydrates undergo a complicated metabolic transformation during digestion, which results in the production of glucose.
- A steady supply of glucose is required to power your brain through the workday, give you energy to exercise, and provide support for all of the job your body accomplishes without your knowing.
- While it is permissible to consume some carbohydrates, it is necessary to keep track of how much you consume and where they originate from.
- Because blueberry muffins are low in nutrients, they are a good source of empty calories to consume.
Total Carbs
- More than 9 grams of carbs may be found in one of those small muffins, which measure only a little over an inch in diameter and weigh 17 grams.
- Purchasing a larger one that is closer to 3 inches wide and weighs 66 grams will provide about 36 grams of carbs.
- However, those large blueberry muffins, which measure 3 1/4 inches across and 2 3/4 inches high and weigh 139 grams, contain a whopping 75 grams of carbs.
Carb Allowance
- Carbs should account for the majority of your daily caloric intake.
- According to the article ″Dietary Guidelines for Americans, 2010,″ carbohydrates should account for between 45 percent and 65 percent of your total caloric intake.
- Because a single gram of carbohydrate contains 4 calories, you can consume anywhere between 225 and 325 grams of carbohydrate per day if you have a 2,000-calorie daily allowance of carbohydrate intake.
- In fact, having that small blueberry muffin won’t take up too much of your time – it will just take up less than 4 percent.
- The one that’s a bit larger, closer to 3 inches in circumference, accounts for less than 16 percent of your daily carbohydrate need, according to the USDA.
- However, one huge 3 1/4-inch muffin can account for as much as 33 percent of your daily carbohydrate allotment on a 2,000-calorie diet.
Grams of Sugar
- The bulk of the carbs in blueberry muffins come from the sugar that has been added.
- Sugar is a genuine empty calorie since it contains no vitamins or minerals, thus you should limit the quantity of sugar you consume in your diet.
- The American Heart Association recommends that women consume no more than 100 calories from sugar per day and males consume no more than 150 calories per day.
- This equates to a maximum of 25 grams of sugar for women and 37.5 grams of sugar for men each day.
- The sugar content of a little blueberry muffin is around 5.5 grams, but the larger, approximately 3-inch muffin has closer to 22 grams of sugar.
- If you splurge and choose the big 3 1/4-inch muffin, you’ll consume 45.5 grams of sugar, exceeding your daily sugar intake.
Fiber Grams
- While blueberry muffins are not a significant source of fiber, they will help you to increase your fiber consumption marginally.
- Dietary Guidelines for Americans 2010 recommends that you consume 14 grams of fiber for every 1,000 calories that you consume from food.
- You’ll require 28 grams of fiber for every 2,000 calories you consume.
- Your tiny blueberry muffin contains only 0.2 grams of fiber, but the one that is close to 3 inches in diameter contains 0.7 grams of fiber, and the bigger, 3 1/4-inch blueberry muffin contains 1.4 grams of fiber, according to the USDA.
The Best Keto Blueberry Muffins
- These Keto Blueberry Muffins, which are made with almond and coconut flour, are light and fluffy, and they are packed with blueberries.
- They are the ideal on-the-go breakfast or snack for anybody trying to reduce their carb consumption.
- See also our Keto Pumpkin Muffins and Blueberry Mug Cake for more delicious keto recipes.
- The fact that you may still enjoy wonderful delights such as blueberry muffins while following a low-carb diet is quite comforting.
- These muffins are so delicious that I don’t think I’ll ever make muffins using ordinary flour in the future.
- These muffins, which are made with both almond flour and coconut flour, have a fluffy and moist inside that has a nice texture, so the mouth feel is exactly what you would anticipate it to be when you bite into one of them.
- These muffins are made much more delicious by the use of blueberries.
Ingredients in Low-Carb Blueberry Muffins
- The following are the items you’ll need to make these low-carb blueberry muffins: Almond flour and coconut flour — This recipe calls for the use of two types of flour to give the muffins a more substantial structure.
- Sugar alternative — You may use whatever sugar substitute you choose, such as allulose, erythritol, or Swerve, to make your recipe sweeter.
- Muffins rise more quickly when a small amount of baking powder is used.
- In this recipe, you may omit the xanthan gum, but it gives the muffin a little bit more sponginess, which, in my view, improves the texture.
- Salt, eggs, and unsweetened almond milk are all used in this recipe.
- Sour cream — For the finest flavor, I always use full-fat sour cream
- Fresh or frozen blueberries can be used in this recipe.
What Flour to Use
- When making keto muffins, you may use just one type of low-carb flour – either almond or coconut – but I strongly recommend combining both for the greatest muffin possible.
- Because both of these flours are required to get the desired consistency and texture, I do not advocate using any other flour in place of these two.
- Other flours, or other proportions of these flours, will not yield the same results as the original recipe.
How Many Carbs Are In a Muffin?
- Each blueberry muffin includes 4 grams of carbohydrate (net carbohydrates).
- That is the total carbohydrate content minus fiber and sugar alcohols.
- I replace allulose for sugar in my recipes.
- Swerve, monkfruit, erythritol, and xylitol are all acceptable sweeteners.
- It is all up to you.
- For this recipe, I use allulose since it’s a zero-calorie, zero-carb sweetener that works similarly to erythritol, but it does not have the same cooling effect.
- My allulose comes from Wholesome Yum, which is a direct source for me.
- I believe you will enjoy it, particularly if you are not a fan of the cooling effect.
- More information on low-carb sweeteners and conversion may be found here.
- As a result, we have purposely limited the amount of the recipe to just 8 muffins so that they are more of a treat and you don’t have a bunch of muffins lying about demanding to be eaten.
- To make these for a large group or for a family brunch, simply double the recipe if you will require more than 8.
Are Blueberries Keto Friendly?
- When following a ketogenic diet, you are likely looking for a total net carbohydrate intake of between 15 and 25 grams per day.
- It becomes extremely crucial to keep track of how many carbohydrates you’re consuming and to avoid consuming any more carbs whenever feasible.
- As a result, you’re probably asking if blueberries are genuinely OK on a ketogenic diet, and the answer is yes, but only in moderation.
- The amount of blueberries used in each muffin is around 6 blueberries.
- Because a cup of blueberries has 9 net grams of carbohydrates, you will get less than 1 net gram of carbohydrates from each muffin made using this recipe.
How to Make Keto Blueberry Muffins
- Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
- Fill the muffin tray with 8 muffin liners and set it aside.
- If you like, you may split the mixture into 12 tiny muffin pans and bake them that way.
- In a large mixing bowl, combine all of the muffin ingredients.
- Stir everything together thoroughly.
- It will still have a bulky appearance, as shown in the image below.
- Because the almond flour isn’t completely smooth, the mixture will not be completely smooth.
- Make small scoops of the filling into each muffin liner, filling them just to the rim of the liner.
- During the baking process, they will puff up a little, so they will rise to the top of the muffin cup.
- Preheat the oven to 200°F and bake for approximately 20 minutes.
- When a toothpick put into the muffins comes out clean, the muffins are done.
Make sure they don’t become too browned on top. They should be taken out of the oven if they begin to become a dark golden color. If you cook them for an excessive amount of time, they will become dry and tough.I recommend that you consume them within a few days after purchasing them.
- Don’t keep them out on the counter for more than a day at a time either.
- If they are not going to be consumed immediately, they should be stored in the refrigerator.
- After the muffins have been prepared and cooled, you may store them in the freezer.
- In the microwave, they reheat quickly and easily.
Can I Use Frozen Blueberries?
Yes, you may replace frozen blueberries for the fresh berries in this recipe. The muffins will take longer to bake if the blueberries are frozen, though. Preparation time will need to be increased by 8-10 minutes to compensate for the frozen blueberries being used.
Can I Use Gelatin Instead of Xanthan Gum?
If you need to, you can use gelatin instead of xanthan gum if you don’t have any on hand. You’ll need twice as much gelatin as you did before, so use 1/2 teaspoon of xanthan gum instead of the 1/4 teaspoon recommended. You can also completely omit it from your recipe. The texture of the muffins will not be significantly altered as a result of this change.
Do I Have to Use Both Almond & Coconut Flour?
- You are not have to use both, but doing so results in a nicer, more consistent texture in the muffins, which makes them turn out more like a traditional wheat flour muffin.
- Because this recipe calls for two types of flour, you may simply skip one or the other if you prefer.
- The only other method I’ve tried it is with only almond flour, so you may use 1 1/4 cup almond flour and omit the coconut flour if you don’t want to use it.

- Preheat the oven to 180°F and bake for approximately 18 minutes. Muffins are done when the tops are golden brown and the center is no longer spongy. Take note that if you are using frozen blueberries, you need extend the cooking time to 26-28 minutes.
- The use of xanthan gum is entirely optional. It gives the muffins a firmer texture, which makes them more consistent with conventional flour muffins in texture. The texture is still excellent, but it is a little more crumbly without it. If you like, you may use gelatin (1/2 teaspoon) in place of the gelatin.
- Plain full-fat Greek yogurt can be used in place of the sour cream in this recipe.

Can you eat muffins on keto?
- Sugar and white flour are common ingredients in muffins purchased at the grocery store, picked up at a bakery, or obtained from a coffee shop….
- Because of the carbohydrate content of these items, they would not be suitable for a low-carb or ketogenic diet.
- A small number of low-carb bakeries are popping up all across the country.
- There are also numerous new low-carb baking enterprises that mail out baked items such as muffins that I’ve observed.
- If we want low-carb muffins, we’ll have to make them ourselves for the most part.
- In addition to the Low-Carb Cinnamon Apple Spice Muffins recipe, I have many other low-carb muffin recipes on the blog, including Low-Carb Blackberry-Filled Lemon Almond Flour Muffins and Low-Carb Double Chocolate Muffins.
Are blueberries keto?
- I don’t like categorizing things as either keto or non keto.
- The carbohydrate content of the meal dictates how much of it I can consume while still remaining in ketosis.
- Fortunately, blueberries, like the majority of berries, are quite low in carbohydrates.
- Approximately one cup of blueberries includes 21 grams of total carbohydrate and 3.6 grams of fiber, according to the USDA.
- When the grams of fiber are subtracted from the total grams of carbohydrates, we find that one cup of blueberries has 17.4 grams of net carbohydrates (net carbs).
- Now, for the vast majority of people following a ketogenic diet, consuming 17.4 net grams of carbohydrates will cause us to exit ketosis.
- The point is, we have to think about quantity in this situation.
- However, although consuming a whole cup of blueberries may be out of the question, a quarter cup of blueberries has just 4.4 grams of net carbohydrate.
- This is definitely possible for the majority of us.
- And as you can see, being conservative with the quantity makes all the difference!
