    For the Streusel

    • Spread about a third of the batter in the baking dish, then top with a layer of streusel to finish. Repeat the process twice more, finishing with streusel on top.
    • Bake for 50-60 minutes, tenting with aluminum foil if necessary. PRO TIP: The altitude will have an impact on the baking time. We are at an elevation of nearly 4000 feet, and it takes the entire 50-60 minutes. Lower altitudes will result in a shorter baking time, so keep an eye on the clock.

    For the Icing

    1. In a large mixing bowl, add all of the ingredients and whisk well to incorporate
    2. When you have finished baking the cake, allow it to cool somewhat before drizzling the icing on top
    3. Serve it while it’s still warm.

    • Powdered sugar, 1 teaspoon vanilla extract, 3-4 tablespoons heavy cream (milk is fine), and a pinch of salt

    • Pour all of the ingredients into a large mixing basin and whisk until well combined.
    • Make a melted butter and set it aside to cool just a little bit so that it is still melted but not hot
    • Stir the butter into the dry ingredients, being careful not to break up any clumps unless they are quite large in size. Remove from consideration

    For the Cake

    • Preheat the oven at 350 degrees and brush a 9×13-inch baking pan with nonstick spray before setting it aside.
    • In the bowl of a standing mixer, cream together the butter and sugar until light and fluffy, about 1 to 2 minutes. Add the oil and combine one more.
    • After you’ve cracked your eggs into the mixer and added the vanilla, give it one more whirl before pouring in all of the dry ingredients. Once nearly completely blended, put in the buttermilk and whisk just until barely combined
    • Spread one-third of the batter evenly in the pan and generously sprinkle with one-third of the streusel.
    • Spread another layer of batter on top of it, followed by another third of the streusel. Repeat the process one more time, finishing with the streusel on top.
    • Alternatively, bake for 50-60 minutes, tenting with foil after 40-45 minutes if it is browning too rapidly, or until a toothpick inserted into the middle comes out clean.
    • Allow it cool somewhat before drizzling with frosting and serving while still warm. (See the footnote.)

    • however, I like this natural cake mix from Trader Joe’s since it contains melted butter instead of oil. Vanilla or yellow cake mix | use all-natural ingredients or your favorite store-bought brand

    TFC PRO HINT | Did you know that you can use any packaged cake or brownie recipe to achieve this result? Melt the butter, substituting it for the oil, and set it aside to cool somewhat before adding it into the dry ingredients.

    How to Bake a Tender Coffee Cake

    1. Preheat your oven to 350 degrees Fahrenheit. To make the batter, crack the eggs into a 2 qt mixing dish (or stand mixer) and add the milk (or water) and whisk to combine.
    2. Add the cake mix and combine on medium-high speed for the stated length of time on the box, which is usually approximately 2 minutes.

    TFC PRO HINT | Did you know that you can substitute milk for water in your cake mixes as well? It will become moister and less crumbly if you use milk. While mixing, slowly put in the cold butter until it is well incorporated.

    • IN THE CRUMB MIX | Use a decent cup for cup gluten free all-purpose flour or, even better (in my view), use 12 cups gluten free oat flour and 12 cups gluten free all-purpose flour in the crumb mix.

    3. Prepare the cake mix in a large mixing bowl according to the directions on the package. If you intend to divide the batter, it will be useful if the bowl has measurements on it. If you are substituting butter for oil, make sure the butter has been allowed to cool somewhat before using it to avoid ″cooking″ the eggs.
    4. Mix on medium-high for 2 minutes, scraping down the sides of the bowl once. Pour the batter into the pan that has been prepared (s). Preheat the oven to 350 degrees for 12-18 minutes, or until the middle is wiggly, barely set, but not soupy

    Crumb Topping

    1. Combine the butter, flour, brown sugar, vanilla, and salt in a large mixing bowl fitted with a paddle attachment and mix until the butter is fully integrated and the mixture is consistent in texture, with no big lumps of butter
    2. As soon as the cakes have done their first baking, remove them from the oven and quickly crumble the topping over them, distributing them evenly.
    3. Continue baking for an additional 10-15 minutes after removing the pan from the oven. Remove from the oven on the early side (approximately 10 minutes) if you plan to freeze or serve later

    • They can also have hot and cold patches, which can affect the amount of time it takes for whatever you put inside to bake.
    • If you have a feeling that your oven’s temperature is incorrect or that you may have hot spots, I recommend conducting a little test (when you aren’t going to bake a cake) to confirm your suspicions.
    • Preheat your oven to the temperature at which you normally bake, with your thermometer positioned in the center of the oven.
    • Make little adjustments to the oven temperature every ten minutes or so, then leave it for a few minutes before checking the reading (keep in mind that most thermometers take a little while to adjust, so give it time).
    • When you are baking, experiment with different settings in the oven to see whether it is genuinely running hot or cold.
    • Make a note of the temperature difference so you can consider it in the next time you bake and adjust the temperature dial accordingly.

    Once you’ve determined that the oven is at the proper temperature for the cake you’re baking and the recipe you’re using, you may begin checking on your cake at the end of the shortest baking time recommended by the recipe.Make no attempt to open the oven door before the time has passed, since the temperature decrease will cause the cake to sink, and there will be no way to save it if this occurs.So start checking after the bare minimum of time, and if the cake isn’t done yet, use your best judgment to determine how much longer you should leave it before examining it once again.Take note of how long it takes to bake once it has been completed so you will know how long it will take the following time.Looking for more information on testing your cake’s completion?

    2. Use Baking Strips.

    3. Don’t Underestimate The Importance Of Sugar.

    I understand that in these days of ″sugar is evil,″ it would be tempting to look at a recipe and think, ″surely it doesn’t need so much sugar?!″ I get that.But, before you start lowering the quantity of sugar in a recipe, keep in mind that sugar is used in baking for more than just sweetness.Sugar is hygroscopic, which means that it attracts water and has the capacity to keep it in its crystal structure.This helps to preserve the moisture in your cake rather of allowing it to evaporate when the cake is baking or while the cake is being kept in a refrigerator or freezer.

    1. Sugar, in fact, has the ability to absorb moisture from the air (which is why your crisp cookies might become mushy if they are not stored properly, especially if they are stored in a humid area).
    2. The capacity of a cake to hold onto moisture is reduced as the sugar in a recipe is reduced, resulting in a drier cake when the sugar is reduced.
    3. Also bear in mind that brown sugar is much more hygroscopic than white sugar, so if you have a recipe in which maintaining a light color isn’t critical, you might want to try substituting part of the white sugar with brown
