    • Sugar. In this cake, we cling to tradition by using only ordinary granulated sugar as the sweetener. Prior to moving on to the following stage, make sure that the butter and sugar are well mixed and frothy before continuing with the recipe. You’ll need six whole eggs as well as six more egg yolks for this recipe. It may appear to be a lot, and it is, but believe me when I say it is worth it! The additional yolks contribute to the moistness of the cake crumb, which has nearly custardy overtones and tastes. Extra whites are omitted since they would make the cake crumb too light (remember, this is a thick cake!) and may even cause it to be dry if added. Another point that I cannot emphasize enough is that you should never, ever use self-rising flour in your baking projects. Your cake will almost certainly overflow its pan.

    • Turn mixer to its lowest setting and pour the egg mixture into your batter, allowing it to gradually become incorporated (don’t pour the egg mixture in one continuous stream
