  • Separate the garlic cloves from the garlic bulbs using a knife. Soak in hot water for at least 30 minutes, preferably longer. The skins of the garlic are easier to remove once they have been soaked. With a tiny knife, peel the root ends away from the rest of the root. Drain after rinsing. Add the ingredients to the container.
  • Combine the vinegar brine components in a large mixing bowl until the salt is completely dissolved. Pour the liquid over the garlic cloves and mix well. The garlic cloves should be completely submerged in the liquid. Allow to remain at room temperature for 7 to 10 days, or longer if possible, without being exposed to direct sunlight (See note 1 for further information.)
  • Bring the soy sauce, sugar, and water to a boil over medium heat, then reduce the heat to low and slowly simmer for one minute. Pour the vinegar into the container. Remove the vinegar brine from the jar and set it aside. Pour the boiling soy brine over the garlic cloves while they are still warm.
  • Make certain that all of the garlic cloves are completely coated. Leave it at room temperature for 2 weeks, avoiding exposing it to direct sunlight, after sealing it snugly with a lid (see note 1). It is possible to consume the garlic at this time, but the flavor will improve as it grows. After opening, store in the refrigerator. The garlic cloves can keep for a few months or even longer if they are stored properly. (See also remark 2.)

How to Enjoy Jamaican Ginger Cake

  • Because this cake is somewhat dense, it is recommended that you allow it to cool for approximately one hour before cutting into it. This dessert is even more delicious the next day, after all of the other tastes have had time to develop their own distinct flavors. It will become more moist and develop a very sticky top as a result. The possibilities are endless, but here are a few of my favorite ways to take pleasure in it: My favorite way to eat this cake for breakfast is to cut a few slices and serve it with a cup of my favorite tea or coffee

  • 4-ounce (115-gram) unsalted butter, plus a little more for coating the baking pan
  • Room-temperature eggs (two large ones)
  • Preheat the oven to 320 degrees Fahrenheit on the convection setting, which will ensure an equal baking result.
  • A little butter and parchment paper* (see tip below) should be used to grease the loaf pan.
  • Using a fine mesh sifter, sift the flour, ground ginger, cinnamon, and nutmeg together and leave aside.
  • Add the water, molasses, golden syrup, sugar, chopped stem ginger, and butter to a small sauce pan and bring to a boil. Warming and stirring over low heat until the butter is totally melted is the goal here. It only takes a small amount of heat to melt the butter. Allow it cool entirely before mixing in the dry ingredients. Remove from heat and set aside to cool completely.
  • Following cooling time, make a well in the center of a mixing bowl with dry ingredients and pour in the mixture
  • thoroughly combine.
  • Using an electric mixer, blend the batter until it is smooth. Add in the eggs and well combine
  • In a separate bowl, whisk together milk and baking soda* (see tip below), then pour into the batter and stir until well combined. The final batter should be loose and have a faint sheen to it.
  • Pour into a loaf pan and bake for 1 hour to 1 hour 15 minutes* (see below for a baking time estimate).
  • Removing the cake from the oven and glazing it with some of the stem ginger syrup while it’s still warm is a nice finishing touch. To make the cake even more moist, poke a few holes in it with a skewer and drizzle a few tablespoons of the ginger syrup over the top
  • Allow the cake to sit in the pan for at least 1 hour to allow the flavors to blend. Enjoy
  • I line my loaf tin with parchment paper, leaving a small amount of paper hanging over the sides to make it easier to remove the baked loaf
  • Adding the baking soda to the milk will prevent the baking soda from clumping together
  • Check the cake’s doneness by inserting a toothpick into the middle of the cake after about 1 hour. After a toothpick comes out completely clean, you’ll know it’s finished
  • Put the ingredients in an airtight jar and put them in the fridge for a week.
  • Alternatively, you may reheat it in the microwave for a few seconds to serve it warm.
