If you’re really worried you can probably buy some dry ice to put in the cooler to keep it extra cold. Just make sure it’s food grade.

    Anonymous No, I own on of those type of party businesses and we don’t allow ice cream cake at all.We don’t have room in the freezer and it will not stay cold enough in a a cooler.The cake will melt (most do not state to leave out more than 15 minutes before cutting), since the top & bottom have melted but the middle is still hard it is difficult to cut and won’t resemble anything appetizing by the time it gets on the plate, it will get all over the kids clothes because it is a melted mess, after you’ve served what you need it will be sitting there melting all over the table, and you will have to throw the rest away.If you are able to figure out some way to keep it cold enough, chances are good it will be too hard to cut and eat when the time comes.
