Decorating the Almond Cake
The initial cooled layer of the Almond Cake was placed on the cake pedestal before being decorated.After that, I coated the layer with almond cream cheese frosting before covering it with the second layer.Fill with almond cake once more and cover with the final layer of almond cake.At this stage, I prefer to use frosting to fill in any gaps that may exist between the cake layers.(I use a piping bag with the tip clipped off to accomplish this.) Alternatively, if you are using a star 21 piping tip for your borders, like I did, you may use that tip for this step as well.) Crumb Coat and Allow to Chill After that, cover the cake with a thin layer of almond cream cheese frosting to give it a crumb finish.When I get to this stage, I like to put my crumb coated layer in the freezer for about 15 minutes to firm things up before applying the final coat of frosting.
(You may also want to refrigerate your bowl of cream cheese frosting during this time if the heat from the kitchen is causing it to soften.) – The last coat of icing should be applied next.I started by smoothing the sides of the cake with my bench scraper (you could also use a spatula for this), and then went back in with a little offset spatula to add some texture to the top.A rosette border around the top of the cake was created using a star tip 21 as an optional step, and then extra sliced almonds were added to the border as well as the bottom of the cake to make it seem more festive.

For the Almond Cream Cheese Frosting
- 2 sticks, 1 cup (226g) unsalted butter, slightly softened
- 2 sticks, 1 cup (226g) unsalted butter, gently softened
- Two 8-ounce containers cream cheese (total weight 452 grams), gently softened.
- I use full-fat cream cheese for this recipe. Reduced-fat or spreadable cream cheese will result in a frosting that is too soft to spread.
- 2 teaspoons (8 g) almond extract
- 1/2 teaspoon salt (2 g) optional – it will lessen the sweetness, popcorn salt is the ideal type to use since it is fine and melts more quickly
- 2 teaspoons (8 g) butter
- 2 teaspoons (8 g) almond extract

In the bowl of your mixer, combine the butter and sugar and beat on medium speed until the mixture is smooth. Continue mixing on medium speed for 3 to 5 minutes, or until the mixture is lighter in color and fluffy, until all of the sugar has been added. Add the eggs one at a time, mixing well after each addition, until the yellow of the yolk is completely gone.
- Mix in the flour mixture and the buttermilk mixture in alternate increments, beginning and ending with the dry ingredients (3 additions of dry ingredients and 2 additions of liquid)
- Do not overmix the cake batter or mix it at a speed higher than medium. Separate the batter among the three cake pans, placing the batter on top of the finely chopped almonds that have been sprinkled on the bottoms of the cake pans.
- Bake for 22 – 25 minutes at 350 degrees, or until a toothpick inserted in the center comes out clean or with only a few crumbs attached, depending on your preference. Allow it cool for 10 minutes before turning out.
For the Almond Cream Cheese Frosting
- Toss the butter into the bowl of your mixer and mix until it is smooth. Reduce the speed to low to medium and continue to beat until the butter is soft and smooth.
- Mix in small chunks of somewhat softened Cream Cheese to the butter, mixing at a low to medium speed until the cream cheese is well integrated. It is possible that the cream cheese will need to be softened a little more if you are using a manual mixer
- add the almond essence. Slowly add the powdered sugar, mixing on low speed until everything is well combined. Cover the bowl with a cloth to protect the cloud of powdered sugar from forming
- increase the mixer speed and continue to mix until the mixture is frothy. If you mix it faster than medium speed, it will become too soft. If the frosting becomes too soft, simply refrigerate it for a short period of time to firm it up a little. This frosting will pipe the best if it is utilized when still cold. This recipe may be made ahead of time and refrigerated
- when ready to use, allow the mixture to slightly soften before stirring it together. Do not microwave cooled frosting to soften it
- this amount will frost a three-layer 8 or 9-inch cake.
