How to Make an Almond Cake

Made from scratch, this homemade almond cake is quick and easy to make.Despite the fact that it is identical to our famous vanilla buttermilk cake recipe, it has been boosted with almond flavor, which is done both via the use of almond extract and by the addition of finely chopped almonds to the cake pans immediately before the cake batter is added. You can see the complete, printable cake recipe below, but here’s a brief recap of everything we did to get there!

    Chopping the Almonds

Preparing the Almonds by chopping and sprinkling In a blender, pulse the sliced almonds until they are finely chopped. This was accomplished with the help of a little bullet blender.Instead of a fine chop, you may use a rough chop (or, if you don’t have a blender, you can chop the almonds by placing them in a ziplock bag and breaking them with a rolling pin to break them into smaller pieces). As you can see in the photo below, we like almonds that have been finely chopped.Grease and flour three 8-inch round baking pans, then place a circle of parchment paper or waxed paper on top of each pan to prevent sticking. Before putting the cake batter to the parchment paper, sprinkle the finely chopped almonds on top of the paper.

Without altering the cake’s delicate texture, this provides it a wonderful surge of almond flavor.

    Preparing the Cake Batter

In addition to cake flour, this recipe makes use of the conventional creaming method of combining, resulting in a cake that is light, fluffy, and sensitive to the touch.Preheat the oven to 350 degrees Fahrenheit.Dry ingredients should be whisked together.Whisk the flour, baking powder, and baking soda together in a medium-sized mixing basin for 30 seconds to incorporate and aerate the ingredients.Make a mental note to put it away.Combine the Wet Ingredients in a separate bowl.

After that, combine the buttermilk, oil, and almond extract in a separate dish.Make a mental note to put it away.Using the butter and sugar, cream them together.Eggs should be added.Add the butter to the bowl of a stand mixer and beat on medium speed until the mixture is smooth.Slowly add the sugar and continue to mix on medium speed for 3 to 5 minutes, or until the mixture is light in color and fluffy in texture.

After that, add the eggs one at a time, combining well after each addition until the yellow of the yolk is gone.Combine the dry and wet ingredients in a large mixing bowl.Alternately Mix in the flour mixture and the buttermilk mixture in alternate amounts, beginning and finishing with the dry ingredients (We like to do three additions of dry ingredients and two of liquid).

Take care not to over-mix or to combine at a speed higher than medium.Adding to Pans’ collection Partially fill three cake pans that have been lightly dusted with finely chopped almonds with the cake batter and bake for 30 minutes.Bake for 25-30 minutes at 350 degrees, or until a toothpick inserted in the center comes out clean or with only a few crumbs attached, depending on your preference.Because baking times might vary, it’s important to keep an eye on it throughout the last minutes of baking. Our Almond Cream Cheese Recipe is based on a typical cream cheese frosting that we have been making for years, with the exception that we have substituted almond extract for the vanilla extract in the recipe.Upon completion, the frosting is silky smooth and delectably delicious.

It goes nicely with our almond cake, which we also have on hand.

    Alternative to Cream Cheese Frosting

Because cream cheese frosting must be kept refrigerated until just before serving, if you prefer a buttercream icing, you may substitute almond extract for the vanilla in our Classic Vanilla Buttercream recipe (or your favorite buttercream recipe)!

If Cream Cheese Frosting is too Soft

Cream cheese frostings are significantly softer than American Buttercream frosting recipes, such as our Classic Vanilla Frosting recipe, which we discussed earlier. If the frosting appears to be a little too soft, I prefer to cool it for few minutes before putting it to the cake.Simply chill the mixture in the refrigerator for approximately 15 minutes, or until the consistency is more manageable to handle. If you are icing the cake and notice that the cream cheese frosting is too soft on the cake or in your piping bag, refrigerate the cake and/or piping bag as needed to firm things up!

    Decorating the Almond Cake

The initial cooled layer of the Almond Cake was placed on the cake pedestal before being decorated. After that, I coated the layer with almond cream cheese frosting before covering it with the second layer.Fill with almond cake once more and cover with the final layer of almond cake.At this stage, I prefer to use frosting to fill in any gaps that may exist between the cake layers.(I use a piping bag with the tip clipped off to accomplish this.) Alternatively, if you are using a star 21 piping tip for your borders, like I did, you may use that tip for this step as well.) Crumb Coat and Allow to Chill After that, cover the cake with a thin layer of almond cream cheese frosting to give it a crumb finish. When I get to this stage, I like to put my crumb coated layer in the freezer for about 15 minutes to firm things up before applying the final coat of frosting.

(You may also want to refrigerate your bowl of cream cheese frosting during this time if the heat from the kitchen is causing it to soften.) – The last coat of icing should be applied next.I started by smoothing the sides of the cake with my bench scraper (you could also use a spatula for this), and then went back in with a little offset spatula to add some texture to the top.A rosette border around the top of the cake was created using a star tip 21 as an optional step, and then extra sliced almonds were added to the border as well as the bottom of the cake to make it seem more festive.

    Frequently Asked Questions

Can the cake layers be frozen?

Yes, they are capable! You may make your cake layers weeks ahead of time and freeze them to save time on the day of baking.Even better, we freeze our cake layers separately *while they are still warm* by first wrapping them in plastic wrap and then foil.Make a date stamp on the label.Freezing the layers while they are still warm actually makes them even more wet because the trapped steam becomes trapped within the layer as a result of the freezing process. It is best to thaw the cakes while they are still covered in foil, so that the condensation accumulates on the foil rather than on the cake.

What Does Buttermilk Do for the Cake Recipe?

Buttermilk cakes are among of my favorite desserts. Not only does it provide a slight tanginess to the recipe, but it also (and most significantly) interferes with the development of gluten, resulting in a softer, more delicate cake overall.

Is there a Substitution for Buttermilk?

There is, in fact, something there! In a measuring cup, combine one tablespoon of lemon juice or vinegar with water. After that, add milk until it reaches the 1 1/4 cup threshold, stirring constantly. It will be ready to use after 5 minutes of waiting. In a pinch, this is the most often used buttermilk substitute, and we have had good experience utilizing it in our recipes when we are short on time.

Why is Cake Flour Used in this Recipe?

Cake flour is frequently used in our recipes since it results in a softer cake.Cake flour is a finely milled white flour manufactured from soft wheat that is used to make baked goods.Layer cakes are made possible by the low protein concentration of this flour, which ranges between 8% and 10%!Flours with a greater protein concentration will not be as tender as those with a lower protein content.

What is the Substitution for Cake Flour?

You may substitute All Purpose Flour for cake flour if you only have All Purpose Flour on hand. The result will be a product that is extremely close to cake flour.

Using All Purpose Flour (plain in UK) to make Cake Flour:

Remove 2 Tablespoons of flour from a recipe and replace them with 2 Tablespoons cornstarch for every cup of flour in the recipe (cornflour in the UK). Due to the fact that this almond cake recipe calls for 3 cups of flour, measure out 3 cups of all-purpose flour, remove 6 tablespoons of it and replace it with 6 tablespoons cornstarch, and mix to combine.

    • 2-1/2 teaspoons (8-gram) baking powder

For the Almond Cream Cheese Frosting

    • 2 sticks, 1 cup (226g) unsalted butter, slightly softened
    • 2 sticks, 1 cup (226g) unsalted butter, gently softened
    • Two 8-ounce containers cream cheese (total weight 452 grams), gently softened.
    • I use full-fat cream cheese for this recipe. Reduced-fat or spreadable cream cheese will result in a frosting that is too soft to spread.
    • 2 teaspoons (8 g) almond extract
    • 1/2 teaspoon salt (2 g) optional – it will lessen the sweetness, popcorn salt is the ideal type to use since it is fine and melts more quickly
    • 2 teaspoons (8 g) butter
    • 2 teaspoons (8 g) almond extract
    • 6 to 6 is a close call. 1/2 cup (about 690g to 747g) powdered sugar

    Cake Decoration

A tiny offset spatula was used to produce texture in the frosting, which we utilized to garnish the cake with extra sliced almonds on top. A star tip 21 was used to pipe the border of the rosette.

Prepare Pans and Add Chopped Almonds

    1. In a blender, pulse the almonds until they are finely chopped. We used a tiny bullet blender for this, but you could simply coarsely chop the almonds if you want.
    2. Add a circle of parchment paper or waxed paper to the bottom of three 8-inch round baking pans and grease and flour the pans. The finely chopped almonds should be sprinkled on top of the parchment paper before adding the cake batter.

    Prepare the Batter

    1. Preheat the oven to 350 degrees Fahrenheit. In a medium-sized mixing basin, whisk together the flour, baking powder, baking soda, and salt for 30 seconds until well combined. Set aside. In a separate dish, whisk together the buttermilk, oil, and almond extract until smooth. Set aside. In the bowl of your mixer, combine the butter and sugar and beat on medium speed until the mixture is smooth. Continue mixing on medium speed for 3 to 5 minutes, or until the mixture is lighter in color and fluffy, until all of the sugar has been added. Add the eggs one at a time, mixing well after each addition, until the yellow of the yolk is completely gone.
    2. Mix in the flour mixture and the buttermilk mixture in alternate increments, beginning and ending with the dry ingredients (3 additions of dry ingredients and 2 additions of liquid)
    3. Do not overmix the cake batter or mix it at a speed higher than medium. Separate the batter among the three cake pans, placing the batter on top of the finely chopped almonds that have been sprinkled on the bottoms of the cake pans.
    4. Bake for 22 – 25 minutes at 350 degrees, or until a toothpick inserted in the center comes out clean or with only a few crumbs attached, depending on your preference. Allow it cool for 10 minutes before turning out.

For the Almond Cream Cheese Frosting

    1. Toss the butter into the bowl of your mixer and mix until it is smooth. Reduce the speed to low to medium and continue to beat until the butter is soft and smooth.
    2. Mix in small chunks of somewhat softened Cream Cheese to the butter, mixing at a low to medium speed until the cream cheese is well integrated. It is possible that the cream cheese will need to be softened a little more if you are using a manual mixer
    3. add the almond essence. Slowly add the powdered sugar, mixing on low speed until everything is well combined. Cover the bowl with a cloth to protect the cloud of powdered sugar from forming
    4. increase the mixer speed and continue to mix until the mixture is frothy. If you mix it faster than medium speed, it will become too soft. If the frosting becomes too soft, simply refrigerate it for a short period of time to firm it up a little. This frosting will pipe the best if it is utilized when still cold. This recipe may be made ahead of time and refrigerated
    5. when ready to use, allow the mixture to slightly soften before stirring it together. Do not microwave cooled frosting to soften it
    6. this amount will frost a three-layer 8 or 9-inch cake.

Buttermilk substitute: What if you don’t have any buttermilk? Here’s a possible alternative: 1 Tablespoon vinegar or lemon juice should be added to a measuring cup.Stir in the milk until it reaches the 1 1/4 point. It will be ready to use after 5 minutes of waiting.Cake Flour can be substituted with the following: Using all-purpose flour (plain flour in the UK) to manufacture cake flour is a simple process.Remove 2 Tablespoons of flour from a recipe and replace them with 2 Tablespoons cornstarch for every cup of flour in the recipe (cornflour in the UK).

Because this recipe calls for 3 cups of flour, you will measure out 3 cups of all-purpose flour, remove 6 tablespoons, and replace them with 6 tablespoons cornstarch, whisking the whole while. This recipe yields 7 1/2 cups of batter.

    How to Make Almond Meal

A question we are frequently asked is if there is a difference between almond meal and almond flour: Is there a difference between almond meal and almond flour? The answer is a resounding yes!

What is the Difference Between Almond Meal and Almond Flour?

While almond meal is normally created from raw (unpeeled) almonds, almond flour is made from blanched (peeled) almonds.Almond meal and almond flour are both used in baking.Almond flour has a finer texture and a lighter color than almond meal, which is a good thing.Even more evident are the distinctions between almond flour and almond meal formed from leftover almond pulp (all three variants of which are shown here — on the top: almond meal made from pulp, on the middle: almond meal made from raw almonds, and on the bottom: almond flour).

When to Use Almond Meal vs Almond Flour?

When baking fast breads and cookies, almond meal and almond flour may usually be used interchangeably, and they are excellent gluten-free alternatives to conventional flours. The use of almond flour, on the other hand, is a must for recipes that call for a more cake-like consistency and a less noticeable almond taste. This is because almond flour has a lighter texture, a more neutral color, and a more neutral flavor. We used almond meal in this 5-Ingredient Vegan Gluten Free Cookies, and we used almond flour in this 1-Bowl Vegan Gluten Free Vanilla Cake, both of which are examples of how we used almond meal.

    How to Make Almond Meal

Making your own almond meal is quite simple! It just takes one ingredient, one blender, and five minutes to prepare.Simply place raw almonds (with the skins on) in a blender and process until a fine, powdery flour is created by blending for several minutes.Turning the blender on its highest speed for 5-10 seconds, stopping to shake and beat the edges of the blender to see if any clumps have formed is a good practice for me.Then combine until the mixture is fine and powdered. You’ll know you’ve gone too far if the mixture begins to resemble almond butter or begins to clump up on the sides.

Aside from the fact that it is simple to create, homemade almond meal tastes fresher and is frequently less expensive than purchasing the same product at the supermarket.

    Almond Meal Recipes

    • Following the preparation of almond meal, it is now time to put it to good use! This nutrient-dense flour is excellent for making muffins, cookies, crackers, and a variety of other baked goods. To obtain the best texture and flavor in a dish, we often combine a variety of flours — our favorites are almond meal, oats or oat flour, and our Gluten-Free Flour Blend — in equal parts. • Add the almonds to a high-speed blender and process on high until the mixture resembles the consistency of fine powdered flour. For 5-10 seconds, we recommend using the highest setting on the blender to puree the ingredients. Once you have reached that point, stop the blender, shake it, and smash the sides to loosen any clumps that have formed. Blend until the mixture is fine and powdery again — this should take approximately 10-15 seconds total. You’ll know you’ve gone too far if the mixture begins to resemble almond butter or begins to clump together on the sides.
    • Keep an eye out for chunks of nuts in your blender and blend away, periodically removing the blender from the base and shaking it to ensure that all of the nuts are fully incorporated
    • Transfer to a jar or container and keep at room temperature for up to 1 month, or longer if possible. Recipe recommendations can be found in the notes section.

What’s IKEA Hiding Within the Layers of Its ‘Chocolate Conspiracy Cake’?

When you’re living in the midst of what my credit card company and numerous sad spam letters swear is an unparalleled period of time, switching up the things you dearly miss from your pre-pandemic existence may be really beneficial.Friends, family, and social gatherings: they are all getting a little old as objects of desire, aren’t they?Rather than something grand, I’ve lately picked something lot more humble: the IKEA cafeteria, which is currently closed due to COVID, the pleasure of eating there, and above all, the strangely delicious chocolate cake that can only be found in the store’s American eateries.IKEA refers to this cake as the Chocolate Conspiracy Cake, and despite my best and oftentimes invasive attempts, I have been unsuccessful in obtaining information about where it comes from or what exactly makes it so amazing. Also, in a fit of rage, I sought to create it myself. This was, as it would prove out, a bad decision to make.

Before we go, please allow me to bring out a few points of order since I recognize that this all seems like some badly veiled effort at sponsored material.I was not paid to write this, and it would be incorrect to suggest that IKEA’s food is ″excellent″ in any meaning of the term.Furthermore, IKEA’s food is not ″good″ in any sense of the word. When you get to the cafeteria, there are 20 meatballs drenched in mashed potatoes to help you get through what is going to come next: an excruciatingly long trek through a layout that is literally meant to influence your emotions. As a starting point, you’re offered enticing glimpses of what your life would be like with an immaculately put out house, only a few items, and a fully functional social safety net.A rapid plummet into the depths of hell follows, where you must urgently search for the large cardboard box you want, then maneuver it onto a wheeled cart without causing yourself any injury.

While you’re in the bowels of the shop, you’re also likely to discover that only about half of the merchandise that’s supposed to be there is really available, rendering the time you spent getting there more or less a waste of time.Having been defeated, you will go out and buy something else.In the following six and a half weeks, you will spend your time building substantial yet still fragile furniture you didn’t really want out of nothing but particle board and spite, with directions that are only marginally more intelligible than the Zodiac Killer’s cipher.

Overall, the experience has been diabolical, and I look forward to the day when I reach the level of my life and income when I will no longer be subjected to it.It does have its attractions, though, especially if you pretend to be a detective in a clean Scandanavian detective story, one in which you sit and meditatively munch plant balls and somewhat limp green beans while thinking about the terrible dismemberment of an elderly woman. The coffee is strangely wonderful and inexpensive, the food is copious, and the yellow cast of the lighting gives the impression that you are in a banal yet appealing dream environment. But the true draw, at least for me, is the Conspiracy Cake, which is far superior to any cafeteria dessert in terms of taste and presentation. It’s a simple-looking layer cake with a dark chocolate ganache on top and inside layers that are delightfully delicate, not too sweet, and have a mousse-like consistency, as described above. The appeal of the cake is mostly due to the contrast in textures between the ganache, the frosting, and the cake; each layer is crisp and unique in its own way.

Everything tastes more vividly of chocolate as a result of the cake’s lower sugar content, as well as the fact that it’s served slightly cooled, which makes it strangely refreshing for something so decadent.Unlike many chocolate cakes, this one is not too dense, but instead is pleasantly light. While pie is unquestionably preferable than cake on any given day of the week, this cake is always welcome to take up residence on my squishy sectional couch.

In spite of this, IKEA is strangely quiet about this cocoa-flavored jewel in their crown, which I guess is manufactured with 10 superfluous screws and a small Allen wrench that you’ll lose within minutes of opening the package. It’s not even included on their official website in the United States.″What makes this cake a conspiracy?″ asks one of the many Reddit discussions about the cake, which is a small fraction of the cake’s overall internet exposure.I’m perplexed″), as well as some raving restaurant reviews, including: According to Business Insider, it is ″the nearly Platonic perfection of the chocolate cake.″ A cake is available in the company’s food area, but it’s a classic Swedish cake, a gooey, seemingly flourless confection dusted with powdered sugar and served with whipped cream.

    1. It is not the cake of conspiracies.
    2. Obviously, I had a sneaking suspicion that something was amiss.
    3. I contacted IKEA and asked for additional information about the cake, as well as the recipe, which was vital.
    4. The response came after a day of frigid Nordic quiet and a follow-up email from Krista Boyer, IKEA’s U.S.

Food Range & Supply Manager, who claimed to have received it from the company. The cake, according to Boyer, has been served at IKEA restaurants for the previous four years and comes pre-labeled with the company’s trademarked name.″Actually, we didn’t come up with the name,″ she said.″It was determined by the supplier, and we liked it, so we decided to keep it.

The cake was probably called after a group of pastry experts who dreamed of creating an item so tasty and rich in chocolate that customers would cease buying other cakes! After spending the previous few years researching and writing about conspiracy theories, I had some darker fantasies, but I chose to put them aside for the time being.Boyer was also unable to identify the person who had initially developed the recipe: ″We weren’t able to say.″We were introduced to the product by one of our suppliers, and we were immediately smitten with it and didn’t want to take it off the menu.″ (A follow-up enquiry, regarding the identity of the supplier, remained unreturned.) Boyer did confirm that the cake is only available at restaurants in the United States, which confirmed my suspicions: ″One of the exciting things we are able to do in the restaurant is to bring in some foods that are more distinctive to the United States that we only serve in the restaurant,″ he said.

″The chocolate conspiracy cake has chocolate cake layers with chocolate buttercream and chocolate ganache, I don’t believe we could fit any more chocolate on a dish,″ she said.″I don’t think we could fit any more chocolate on a plate.″ Boyer/IKEA also politely but firmly rejected to share the recipe with the public as well.″I am unable to share,″ she stated in her letter.″However, I can tell you that starting this week, all of our stores will be offering full Chocolate Conspiracy cakes from the Swedish Food Markets for $34.99 each!″ While I’m sure that’s great news for many people, presumably those who don’t have to drive to IKEA to get their cake, at $35 a cake, I’d like it also self-cleans the dish it’s served on and matches the color of my hair, which I’m sure is possible.I’m also not going to step foot in a crowded interior environment like a massive furniture store for as long as humanly feasible, as if my life depended on it, which it very well may, given the circumstances.

    • And so, driven insane by the boredom and the horrible sensation of needing something particular that I couldn’t have, I resolved to create the cake myself.
    • I chose to Do My Own Research for my Conspiracy Cake, which meant that I conducted a bunch of highly vague online searching to find a recipe rather than bothering, say, my Munchies coworkers, who really know what they’re doing when it comes to baking cakes.
    • A Tweet from famed author Celeste Ng from a few years ago, though, pushed me to my knees almost instantly; she’d posted a photo of the conspiracy cake’s label in the cafeteria, which had thrown me off balance.
    • In this case, the label plainly states that the cake is filled with mousse rather than buttercream, as IKEA had stated.
    • This also corresponded with my personal recollections of the cake’s many layers.
    • The plot grew thicker, and I apologize for it.

As with any good conspiracy theory, the only way out of this was to go straight to my odd little cronies and whip ourselves into a mutually confused frenzy of our own making. In this case, it would be Derek Mead, the employer of my previous boss, whose credentials include having ″directed the UCSB bakery while in undergrad,″ as he informed me.Mead stated that buttercream sounded more feasible to him than mousse, owing to the fact that it is generally shelf-stable and can be purchased in large amounts on restaurant supply websites.″I’m not sure if you can obtain real chocolate mousse in a great enormous tub,″ he stated in his letter.

    • Although I am certain that you can do it, and I am not an expert in this area, my gut instinct tells me that putting mousse on a mass-produced cake that is accessible in a wide variety of places is strange.
    • He went on to say that mousse is just a more delicate commodity: ″Mousse feels more delicate, as if it would have to be newly created and kept.″ Mousse cannot be purchased from the frosting section of a supermarket, and commercial high volume baking is simply that, but with larger tubs.″ Buttercream, he pointed out, is also substantially less expensive per pound than other dessert ingredients.
    • ″In addition, for a cake that is so chocoholic that it’s a CONSPIRACY, you’re getting a lot more taste conspiracy per dollar with buttercream.″ I decided to prepare Smitten Kitchen’s Double Chocolate Layer Cake, primarily because I adore Deb, the Smitten Kitchen girl, and to substitute the ganache topping she suggests with a chocolate buttercream frosting from Serious Eats, which turned out to be delicious.
    • As I looked at the ingredients list, I realized it would take an absurd amount of chocolate—five semi-sweet baking bars in total, one 70 percent cacao bar, two different kinds of cocoa powder (Dutch process and regular, non-Dutch process, unsweetened stuff), five sticks of butter (heavy cream, buttermilk, corn syrup), and virtually all of my Sunday.
    • There is enough chocolate for everyone.
    • I bought the necessary ingredients in the grocery store, where I worked at Supermarket Sweep speeds due to the fucking epidemic.
    • I then stumbled home and assembled the tiers of the cake.
    • I saw a problem right away: they were considerably too thick, nearly double the thickness of the IKEA cake that I remembered from my Proustian vision.
    1. In this case, the correct course of action would’ve been to either saw the layers in half or bake two more layers and construct a much larger cake; however, as has been the case with many things this year, I opted to ignore it and pretend that everything was OK.
    2. Throughout the afternoon, I melted baking chocolate and whisked in butter and corn syrup, chopped more chocolate, and sifted cocoa powder and confectioners’ sugar with the only sifter I could find in the house, a tiny object from the Japanese home goods store Daiso that is about the size of an American Girl doll’s clenched fist.
    3. I finished the project by evening.

Sifting through the piles of papers took around 45 minutes in all.One point, when I was in the mood for it, I took a break and made an entire pizza from scratch, including the dough. It took around one-third as much time and effort, and it tasted just delicious. The cake’s layers are patiently awaiting their turn.It wasn’t until close to midnight that I was able to finish my cake: the ganache layer was shiny and appealing, the actual layer of cake tasted convincingly cake-like, and the frosting probably would’ve smelled divine under different circumstances.

    • Given that I’d been smelling chocolate for the better part of 12 hours and had a splitting headache and a strong desire to vomit, I put the cake in the fridge for a while before serving it to the closest available person, my partner, who happens to be a Conspiracy Cake enthusiast, the person who first heard about it years ago and introduced me to it, and, let’s be honest, the entire reason I have to go to fucking Ikea in the first place.
    • I’d been smelling He took a mouthful, chewed it attentively, and then stopped for a longer period of time than any other individual in the history of the world.
    • ″Do you want the good news first, or the terrible news first?″ he queried, which is precisely what you want to hear from your love partner at any given time of day.
    • Following my final bite of the deplorable life-sucking cake, we both agreed that the awful news was as follows: ″ It has absolutely nothing in common with the IKEA cake in terms of flavor.
    • The inner layer was too thin and far too solid in texture, lacking the airiness that I had come to expect from the Swedish shopkeeper who was trying to wreck my existence.

Despite its deliciousness, the top ganache layer was thin and grainier than the IKEA layer, which has the sugar particles much more thoroughly incorporated.I also made a mistake by baking the cake too dry, which was no one’s fault but mine and the fault of an old oven that bakes at a temperature that would be laughed out of any Ikea showroom.More frosting was added to the cake this time. Then, with grim determination, I sawed portion of the cake in two and pushed another layer of frosting into it, turning it into something that resembled a three-layer cake in appearance. This horrible beast took up the majority of a shelf in my refrigerator, so I donated it to the Navajo and Hopi Family COVID-19 Relief Fund, which has provided food and other emergency help to Navajo and Hopi families who have been affected by the flu epidemic. After that, I went to bed with a gloomy expression on my face.

    1. In the morning, I looked at the cake with a sour expression.
    2. As a cathartic exercise, I contemplated tossing chunks of it out the window.
    3. Instead, I took my Frankenstein piece out of the box, sawed off an even smaller piece, and bit into it, where I discovered something incredible.
    4. Even yet, it didn’t taste anything like the IKEA cake.
    5. Instead, for reasons I do not fully understand and will not investigate, it tasted exactly like a cake I remember from my childhood, which came from a restaurant called Dave’s Not Here in Santa Fe, New Mexico, and has since disappeared.
    • (According to local legend, the establishment was known as Dave’s until the Dave in question either went to prison or departed town, both of which are more or less hard to verify.) The restaurant, Dave’s, was constantly dripping with oil, crawling with flies, and completely amazing; it offered huge burgers and, to the best of my recall, dependably spicy green chile, which is exactly as it should have been while I was there.
    • Despite the fact that it sat on the counter beneath a giant glass dome all the while, the cake was a monstrous, misshapen monolith with icing pitted like acne scars on the surface.
    • It had the flavor of a dream.
    • I’d managed to transport myself to a strange little corner of my childhood entirely on my own dime, thanks to my own bumbling efforts.
    • It seemed like a bizarre benediction, at the end of this horror year, to find oneself unintentionally stumbling upon anything that looked even vaguely familiar to our better, distant past.
    • I pushed the cake to the farthest corner of the fridge, as well as my recollection, and continued on my journey.
