Add the sugar and continue to beat for about 4 minutes, or until the mixture is light and fluffy. Add the eggs one at a time, thoroughly beating each one before adding the next. Scrape down the sides and bottom of the bowl, then beat in the vanilla
              • while beating on low speed, add one-third of the flour mixture and mix just until mixed
              • repeat with the remaining flour mixture. Combine the oil and half of the milk in a mixing bowl. Combine just until everything is well-combined. Continually add flour and milk in little amounts, scraping down the bowl between additions or as required
              • The batter should be divided between the cake pans, and the top should be smoothed using an offset spatula.
              • Bake for 40 to 45 minutes, or until the tops are golden brown and the edges of the pan begin to come away from the pan, depending on your oven. Allow approximately 20 minutes of cooling time in the pans. Remove from the oven and allow to cool fully on a wire rack

              For the Berry Filling:

              • In a glass measuring cup, combine the jam and water and microwave on high for 15 to 30 seconds, or until the jam is warmed through. Combine all of the ingredients in a large mixing bowl. Hull and thinly slice the strawberries. Combine with the raspberries and blueberries in a large mixing basin. Add the lemon zest and juice and toss well.

              For the Chantilly Cream:

              • Mascarpone and cream cheese should be combined in a large mixing basin or the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed for about 30 seconds, or until the mixture is smooth and creamy. By adding little spoonfuls of powdered sugar at a time, beat on low speed until everything is incorporated. As soon as everything is fully incorporated, scrape down the bowl and increase the speed to medium, beating until fluffy for about 30 seconds.
              • Cream the cream and vanilla together in a large mixing basin on medium speed until firm peaks form, about 2 minutes. Fold in the whipped cream into the mascarpone mixture until well combined.

              For Assembly:

              • Each cake layer should be carefully sliced in half, horizontally, to create four thin circular layers.
              • Place one layer on a cake plate, cut-side up. Repeat with the remaining layers. Spread one-third of the berry jam mixture on the cake in a very thin layer, making sure it doesn’t touch the sides of the pan. Finish with approximately 3/4 cup of Chantilly Cream. One-third of the fresh berries should be sprinkled on top of the cream. Place a second cake layer on top and gently press the layers together. Repeat the layers until the cake is completely covered with Chantilly Cream. Spread roughly 1 cup of Chantilly Cream on top and edges of the cake. Fill a piping bag with the remaining cream and pipe on the decorations as desired. Garnish with more fresh berries if desired. Prior to serving, place the cake in the refrigerator for at least 2 hours
              • Everything must be at a comfortable temperature before use. Butter and cream cheese are the most time-consuming to bring up to room temperature. Cutting them into little cubes can assist to reduce the amount of time it takes for them to reach room temperature faster. In comparison, making mascarpone cheese should only take 15 to 20 minutes
              • don’t try to cut corners on the time it takes to cream the butter and sugar together. When the color lightens and the texture becomes fluffy, the butter has been thoroughly creamed. If the mixture has the appearance of wet sand, it is not ready. When the mixture is thoroughly creamed, pockets of air are introduced into the mixture, which causes the cake to be light and fluffy.
              • Make certain that your flour is measured accurately! The most typical error is to use too much flour in the recipe, which results in a cake that is dense and heavy. The most accurate approach to measure flour is to use a kitchen scale. Use a spoon to fluff up your flour in the bag before you sprinkle it into your measuring cup, and then use a knife to level it off so that you don’t overfill the measuring cup
              • If you don’t have a scale, fluff your flour in the bag using a spoon before you sprinkle it into your measuring cup
              • You may use cake strips to help your layers come out evenly by lightly tapping the cake pans with the batter inside on the tabletop to bust any big pockets of air bubbles. To operate, cake strips must keep the outer edge of the pan colder to guarantee that the entire cake rises at the same rate. This helps to avoid an unflattening dome from rising in the centre of the pan. If you don’t want to spend the money on a set, you may learn how to make your own strips by reading my post on How to Get Perfect Flat Cake Layers.
              • Make careful to verify the expiration date on the baking powder before using it. In most cases, a dense cake is produced by the use of outdated leavening ingredients or excessive mixing of the batter.

              To Make the Cake

              • Prepare two 8-inch cake pans by lining the bottoms with a circular piece of parchment paper and baking for 30 minutes at 350 degrees. Nonstick baking spray should be lightly sprayed on the sides of the pan. Preheat the oven to 350 degrees Fahrenheit.
              • Combine flour, baking powder, cornstarch, and salt in a medium-sized mixing basin until well combined, then put aside.
              • The butter and sugar should be creamed together in a large mixing basin or stand mixer, but not too creamy. In a separate bowl, whisk together the egg whites, vanilla, and almond extract, if using. Gradually pour in the flour mixture and milk, mixing well between each addition of the ingredients. The batter should be light and fluffy in appearance.
              • Divide the batter evenly between the cake pans that have been prepared. 25 to 28 minutes in the oven. When lightly touched in the center of the cakes, they should spring back to the touch. Allow the cakes to cool after they have been removed from the oven.

              For the Simple Syrup

Bring water and sugar to a boil in a medium saucepan, stirring constantly, until the sugar is completely dissolved, then remove from heat and put aside.

              For the Frosting

              • To get shaving cream-like texture, whip the heavy cream and vanilla extract together in a stand mixer fitted with a whisk attachment or with a firm hand whisk until it’s almost hard like shaving cream. This will take 2 – 3 minutes at fast speed (and considerably longer if done by hand).
              • Using a medium-sized mixing bowl, thoroughly incorporate the cream cheese, mascarpone cheese, and powdered sugar until completely mixed and creamy. Using a gentle hand, gently blend the cream mixture and the cheese mixture until they are smooth and creamy.

              To Assemble the Cakes

Once the cakes have been allowed to cool completely, level them by taking the tops/domes off of each cake so that they are flat. Then, using a large knife, cut each cake in half horizontally.Simple syrup should be brushed onto the top of each cake.

Place a thin layer of frosting on the top of each cake, followed by the appropriate amount of fruit sprinkled on top.Lightly push the fruit into the icing to ensure that it is evenly distributed.Repeat the process for each additional layer of cake, frosting, and fruit additions, until all four layers are completed.Frost the whole outside of the cake and garnish the top with fruits or other decorations of your choice.
